Wild Dark Strong Holiday Ale
Time in Oak: 6 Months
Hops: Styrian Aurora, Fuggle, & Tettnang
Grains: Pilsner Malt, Wheat Malt, & Chocolate Malt
The beautiful mahogany hue is just a peek into the deep, malty, complex wild ale that lies within this holiday package. Notes of candied pecans, truffles, sugar plums, and spiced fruitcake shine through the silky body boasting of caramel malts and delicately layered hops.

3.7 It pours brown with a tan head. Head retention is moderately high. The aroma is initially strong with raisins, wine like elements, and a bit of tartness. There are background notes of chocolate, toast, and spice. The flavors are highlighted with moderate sourness. There is an oak character mixed in with raisin, vinous elements, and spices. There are background notes of toast. It has a moderately full body. The finish is tart and dry. Overall, this has a complex blend of various flavor elements, but it's tartness makes it finish more like a sour than a Belgian Strong.
4.2 On tap at Craft Beer Cellar. Aroma 8/10: Slight alcohol with some yeast funk to it. Also smell some cherry. Appearance 3/5: Very dark with an off white head. Palate 4/5: Well carbonated and medium bodied. Very well done for the style. Taste 9/10: Cherry, funk, yeast, slightly boozy. This is pretty complex and hard for me to describe, but I definitely enjoy it. Relative tart on the finish. Overall 18/20: I enjoy this a lot. It's not the prettiest beer, but my taste buds really enjoy it. 4.2

Aroma 9/10: prominent winter spices - clove, cinnamon, along with some wild yeast Appearance 3 /5: dark amber brown with small bubbly head, good lacing on the glass Palate 5/5: moderate to heavy carbonation, perfect to balance the slightly funky and tart mouthfeel Taste 9/10: drinks like the Oro De Calabaza - a classic Saison with the yeast and funk, but with a really lovely winter and barrel aged twist. Hints of overripe plum and fig round this beer out. Overall 19/20: close to a a perfect winter Saison. I think it's hard to get a Saison right for winter; this one has all the aged spicy notes without selling out on those classic pumpkin spice flavors. Final: 4.5
3.7 Blend 001; Bottled 9/24/15. The aroma is figs, raisins. Pours dark amber brown with off white head slightly lasting and excellent lacing. The taste is light/medium sour. The body is medium, the texture thin, the carbonation fizzy and the finish long. Seems more like a sour than a Belgian Strong Ale.

2.8 750ml bottle shared with Egil Børge, Leif, Odd and Finn. Clingy lacing from an off-white head. Dark red-brown body, hazy. Subdued tart and dry aroma of cherry and oak. Sweet and tart taste profile with impact of oak, cheese, dough and cherry skins. Prolonged ending, tart, dry and sweet. Okay, not my kind of Yuletide beer though. (Tasting session of Christmas beers, Tromsø 17.11.2017).
3.9 Stumbled across this beer that I didn't know I had a sticker on the back says bottled on Halloween 2012. Aroma is tart, dark ripe fruits a little malt. Average appearance.. flavor is a like aroma a little more interesting and complex hints of cocoa and Oak. Body is a touch thin. Very good finish and fairly easy drinking for a sour beer.

3.9 Shared 750 ml. bottle poured to snifters displaying a hazed, dark amber color, with a presentable layer of off white/light tan foam, and dots & dashes of lacing. The nose was subtle funk, tartness, slight oak, spice, fruitiness as cherry, berries, and plum, with a touch of vinous nature. The taste was similar notes, medium+ bodied, continued tartness, warmth, and some earthy & rind-like bitterness. Nice sip & savor brew. (2/21/2017) Recently shared another 750 ml. bottle (2015) with friends, displaying more of a dark grape color, but otherwise, a similar impression, with nice maltiness, almost a little roastiness, continued barrel hints, tartness & tanginess, okay carbonation, a touch of bourbon? and dark fruit & skins astringency. +.2

4.0 Pours a cloudy dark reddish brown/coppery color with off-white head. Funk, tartness, dark fruits, cherries, yeast, and some oak on the nose; follows onto the palate. Medium bodied. Finishes with funk and tartness with some dark fruit.
4.0 Deep brick red with a tall head. Tart fruity notes, cherry, light spice, sweet balsamic vinegar, molasses. Medium bodied. Finish is long on the fruit and sour, too. Quite an enjoyable winter sipper.
3.8 Pours a very dark amber with a thinner, creamy looking, beige head that remains for a very long time. The aroma is heavily tart, with spices, cherry, yeast, apple, and minor notes of caramel and cinnamon. The taste is a balance between sour and malt. Cherry and apple tartness along with cinnamon stand out most. Underneath I find fig, spice, yeast, and some chocolate. Its pretty dry and has sour cherry aftertaste. Medium in body here, with a slick texture, and some fizzy carbonation. This is one of the better Christmas beers that I’ve found.
4.3 Dimarts #olutaste Nice colour between read and brown. Thin head dissapearing quite fast. Balsamic vinegar in both aroma and taste with that appearance of lambrusco that reminds my loved flemish red ales. Pronounced tartness end, and curiously salty.

4.2 Bottle from Whole Foods Market in Redwood City, CA. Aroma is balsamic vinegar, banana peppers, tart fruit, spiced fruit (maybe some cloves). Taste is tart fruit, balsamic vinegar...wood and red wine. Tannic dry and bitterish finish. This is basically a less sweet version of the Duchess mixed with a dry red wine. Good but hard to hold up against the Duchess.
3.7 Bottle shared from Logan. 2011 vintage. Lively gusher. Pours cloudy, dark brown, with a giant, foamy, tan head. The aroma is toasted oak, balsamic vinegar, old leather, cloves, and molasses. Sweet and acerbic, with a mild tartness. Medium to heavy body, silky, a little thin, with lively carbonation. I’m not sure if this was supposed to be a sour, but it totally works as one. Lively, smooth, and complex.
3.9 Vintage 2014. Matt nøttebrun med høyt beige skum. Lukter surt, men føles rund. Mørke frukter, trevirke, vanilje og svisker. Fyldig. Sur smak, sure røde bær, lett sødme, vanilje, svisker, trevirke. Middels lang. (Schouskjelleren ølfestival 2016)
3.2 Deep red with white head. Funky, spicy and floral. Dry, fruity and acidic finish. Fresh!
3.8 At Seattle tasting. Malty brown, creamy off-white foam. Malty sour, sweet miso, soft milk chocolate. I say tootsie roll, but this time it isn’t an insult. Warm, fizzy, souring Belgian brown character. Bitter finish. Interesting.
3.7 Ölföreningen 2015. Flaska, batch 897, 2011 vintage. Smak och doft av röda vinbär, malt, trä, körsbär, plommon, jordgubbar med toner av apelsinskal, metall, russin, viss fatkaraktär. Fruktig, stor kropp och sötma, mycket syrlig.
3.6 Refrigerated 75 cl brown bottled on 11/14/2014 poured into a tulip. Dark brown with medium brown highlights and big beige head. Aroma is dark fruit & oak, medium body, medium carbonation, and some lacing. Taste is tart, dark fruit (mostly raisin), some vinegar, and oak.
4.6 Pours mahogany with a small beige head. Smells lightly tart, subtle spice and fruit. Taste is sour, light sweetness, Christmas holiday spice and dark fruits. Medium-bodied with a prickly texture and average mouth-carbonation, Jolly Pumpkin Noel de Calabaza finishes with a soft lingering tartness.
