LambruchaTM is a blend of Lambics we select and Kombucha brewed to our specifications. For every batch of LambruchaTM, we must taste and select the Lambics we want to use with the Kombucha produced for us. Lambic and Kombucha are naturally varying products so blending is the essence of how LambruchaTM is made. The Kombucha and Lambic used are living yeast beverages. To our knowledge this is the 1st time 2 living yeast beverages have been combined to create a third, different beverage. For this reason we think LambruchaTM is a truly new drink that combines elements of both Kombucha & Lambic. LambruchaTM is bottled for us by Brj, De Troch, Wambeek Belgium.

3.8 750 corked n’ caged green bottle- Pours slightly hazy golden with a thin white head. Aroma is very herbal, tea, mint, lemony, tart and vinegar. The taste is tart, the tea is dialed back compared to the aroma, lemony and ginger is strong, acidic and vinegar. Good, wasn’t sure about this one, not bad at all.
3.8 THANK YOU Kraddel. Long time want. 750 ml. bottle sampled @ “The RARE Tasting”. Hazy golden, creamy white head. Nose is super milky with massive funk, raw, barn, raw lemon, vinegar, raw intense strange funk. Very milky vinegary taste, basic lactic & lemon sourness, lightly watery, lactic, very straightforward sourness. Funk is massive & strange but otherwise it is surprisingly very straightforward, funk is largely in the nose, very lactic sourness, very strong in the finish with vingar. Pretty decent, can pass for a decent USA sour.
3.6 Pours unclear yellowblonde, nearly no head. Smell is funky, some spice-like aspects ( guess its the tea) Taste is funky, very dry, sour, some lactic sourness, sourness isn’t too well balanced or complex though. the tea shines trough in a very herbal, spiced way. Nice, but not great to me.
3.8 A thin white film quickly fades away, leaving a glassy surfaced, hazy pool of glowing, golden-orange liquid. There is no lacing, and the carbonation appears to be almost nil. The aroma is quite unique, showing notes of tart apple, tangerine, and lemon, with both citric and lactic acidity. There’s a lightly cheesy, yeasty funk, along with hints of white grape skins and wild scuppernong. The nose rounds out with some fresh cereal sweetness, along with notes of dusty cinnamon and herbal white tea. Not all of those complexities play themselves out in the flavor, but the lacto-citric acidity is certainly there, as is the light cereal malt, crisp lemon, and floral-herbal spicing. The stuff is pretty darn tasty, and the light, sharp edged body is about as refreshing as it gets. A light tingle promulgates the lemony acidity throughout the mouth. Damn, surprisingly good. A perfect summer beer for Florida. Fans of Berliner Weiss, lambic, and tea alike will enjoy this stuff. 3/10
3.6 Bottle, at Novare Res, Portland, Maine. A hazy, pale golden beer with a small, off-white head. The aroma is fresh and lightly fruity, with some lemony sourness. Lemon, some funk, leather and barnyard in the flavor, it’s tart, thin and pleasantly carbonated. Long fruity and lightly sour finish. Very refreshing this one, quenching and quite flavorful. 150609
3.5 Bottle 750ml @ Novare Res Bier Café, Portland, ME Pours hazy golden with a white head. Aroma has notes of malt, funk, barnyard and som fruitiness. Taste is light sweet and medium sour with a long light funky and sour finish. Body is light, texture is thin, carbonation is soft.
3.7 750ml bottle in a tulip. Pours hazy golden with a white head. Aroma of pickles, some sourness, light malts, and hints of oak. Flavor the same with a very interesting blend. Average texture. A really unique beer.
3.3 Bottle. Pours a cloudy gold with medium frothy offe white head. Aroma smells like a sandich and pickles. Medium mouth with pickle flavor and vinegar.
2.3 Clear golden with a thin fizzy white head. Odd aroma thats vinegaresque with a sour earthy leafy aroma that I wasn’t too keen on. The flavor was fine, a bit tart and bubbly with a semisweet leafy flavor thats sour and slightly lemony with a medium light body. Glad I got this on sale because if I paid $11 for this I’d have been upset.
3.9 4 oz draft pour at ChurchKey. Slightly hazy shiny yellow with off-white head. Aromas of tea, herbs, light tart notes. Tastes of tea, tart notes, light floral notes, citrus, lemon lime, herbs. Medium body with a dry finish. Interesting blend and works fairly well.
3.7 On draft at ChurchKey in D.C. Pours a hazy gold with a bubbly off white head. Herbal, minty nose. Flavors of lemon. Tart finish.
3.9 750 ml bottle into tulip glass, no bottle dating. Pours lightly hazy bright golden straw color with a 1-2 finger fairly dense white head with good retention, that reduces to a thin cap that lingers. Light spotty lacing clings on the glass, with a moderate amount of streaming carbonation. Aromas of tart lemon, pear, green apple, hay, straw, grass, herbal tea, wheat, leather, oak, musty funk, light vinegar, light pepper, and herbal/yeast earthiness. Very nice aromas with good balance and complexity of fruity/funky yeast, herbal tea, and oak notes; with good strength. Taste of lightly tart lemon, pear, green apple, hay, straw, grass, herbal tea, wheat, leather, oak, musty funk, light vinegar, light pepper, and herbal/yeast earthiness. Very slight tartness/spiciness on the finish; with lingering notes of lemon, pear, green apple, hay, straw, grass, herbal tea, wheat, leather, oak, musty funk, light vinegar, and herbal/yeast earthiness on the finish for a good bit. Very nice complexity of fruity/funky yeast, herbal tea, and oak barrel flavors; with a great balance of the tea and lambic character with zero cloying flavors after the finish. Medium carbonation and light-medium bodied; with a very smooth, crisp, and slightly acidic mouthfeel that is nice. Alcohol is well hidden with zero warming present after the finish as expected of 3.5%. Overall this is a very nice spiced unblended lambic. All around good complexity and balance of fruity/funky yeast, herbal tea, and oak barrel flavors; and very smooth and crisp to drink. A very enjoyable offering.
3.1 Poured a golden color with aromas of funk, hat, light resin and some light fruit. Flavors matched the aromas with a light mushroom flavor. This was an odd beer to drink, not overly sour, just something different about it.
3.2 Cloudy yellow orange color, moderate head, some lace/retention. Aroma is strong kombucha, barnyard action, funk, lemon. Medium bodied, sharp kombucha flavor. Hit or miss beer.
3.3 Golf colored beer with a white head. Funky as hell, warty hops, hints of kombucha , mushrooms. Quite an odd bird.
3.4 Tried this from a bottle at Sour Fest at the Cajun Cafe. Pours a pretty gold with small head in a flute. The aroma is certainly unique with citrus, pine resin, black tea, and funky barnyard. The taste was also very unique with strong pine and pine resin, fruits (citrus), funky barnyard yeasts. Light body, heavy carbonation. Odd finish. Very unique flavor. Not so sure I need another one.
3.7 750 ml bottle from BoostIPA - thanks again, Shawn! Pours a clear, bright gold with a small white head that dissipates quickly. I don’t know a ton about Kombucha, but I know that’s what’s leading the way in the aroma - very leafy and herbal - with some lemon-lime tartness. The flavor dials down the tea and dials up the tartness, and a mild vinegar acidity. Light-bodied, with modest carbonation, and a tart, herbal mouthfeel that turns out almost briny. Pretty interesting. I like it.
3.2 Bottle at a tasting event. From notes. Tart and fruity with a decent bit of barnyard funk. Enjoyable, but not something I would seek out.
4.0 Excited to try this. Pours an almost hollow yellow with a fine whtie foam. Smells strait up brats & sauerkraut, sole lemons, nice traditional kombucha character, bits of pepper. I like the nose. Flavor is tart with black tea of the kombucha and a nice lemon tartness and a slight hit of meat and a good run of herbal and depthy character. Medium with a fun fizzy, nice wet finish. 3.1 I like Kombuchas. I even. Grow them at home. I like Lambic. Might of should of left these two worlds apart. Hazy yellow. Has tart aroma and some vinegar and spices. A little bit if the tea quality, but mostly funk and lemon.

I was curious about this one because I worked at a natural/organic market for a year recently and learned all about kombucha - though I can’t say I ever grew to like it. The aroma is vinegar - a bad combo of mediocre lambic and kombucha tea - light funk, tea, mint, some spice. Vinegar on the flavor as well, bitterness as well, mild tea, more mint and spice. Meh.
3.7 Sampled from a bottle at Where the Wild Beers Are. Tart fruit and quite dry - maybe some tea elements in here. I thought this was pretty solid.
2.8 Memphis Taproom, Philadelphia 750ml ($16): Pours murky yellow with barely any head. Aroma is an herbal bomb. It is a smell I remember very well, but I can’t quite pinpoint it. Sort of tastes like middle eastern food. Probably reminiscent of some Komboucha I have had. I am getting way more Komboucha in this than I am getting Lambic. My brother has been dying to try this for quite some time, but upon trying it, he was sorely disappointed. I have to say that I was expecting something better as well.
2.7 7/08/2010: Lambrucha... Aroma: Tart (like cranberry) and minty?; a bit fruity. Appearance: Fuzzy melon color (think blush wine). Flavor: Tart cranberry right up front and then POOF! gone... to tea with some floral notes and weak berry to a hint of peppermint and then finishes sour; quick and painless since nothing lingers; not much there. Palate: Light; mild carbonation. Overall: Refreshing, but it’s a very weak lambic; somebody said, "pickled watermelon" and "table lambic" and both those describe this beer well! 1 pint 9.4 fl. oz. bottle (3.5% Alc. by Vol.). Rating #157 for this beer.
3.7 Bottle from Total Wines, Tampa. It pours cloudy gold with a small white head. The nose is earth, damp leaf, mustiness, herbal, lemongrass, faint blue cheese and sour apricot. The taste is lemon, juicy tartness, sherbet, lime, sour apricot, mild acidity, vinous and earth with a dry, tart finish. Light-medium body, high carbonation and velvety mouth-feel. I’m not a massive fan of the nose, but it tastes rather nice. Nice refreshing sherbet thing going on.
2.8 Bottle from Sourfest. Pale golden pour with a bubbly white head. Weird, almost off putting aroma of tartness, herbal tea, and yeastiness. Flavor was just as awkward. I’m not sure what to make of this.
3.7 Rating from 6/9/13. 750 ml corked and caged green bottle. Pours hazy pale yellow with a white soapy head with great retention. Aroma is bizarre: earth, vinegar, barnyard funk, herbal (I have no idea what Kombucha tea smells or tastes like). I’ve never smelled a beer quite like this. Taste is sour (8 in a scale of 1-10), acidic, herbal (like a gueuze spiked with herbal tea). Mouthfeel is foamy, body medium to near thin, finish dry. Odd. I’m glad I got to experience it, but I’ll never buy it again.
2.7 Pours an orange gold with no head. Aroma is vegetal and piney. Taste is tart, vegetal and funky. Kind of off putting. Not what I had hoped for. It doesn’t capture lambic or kombucha. It’s not good

3.7 Bottle: Poured a light hazy golden color lambic with a medium size bubbly head with minimal retention and not much lacing. Aroma of tart notes with light funky notes. Taste is refreshing with easy drinking tart notes with some light funky notes. Kombucha tea was harder to detect. Body was about average with good carbonation. Nice refreshing drink for summer with just the right amount of complexity.
