Celis White has been revived by Michigan Brewing Company with the blessing of its founder and his daughter, Christine Celis. The original Celis White, brewed in Austin, TX by Pierre Celis during the early and mid 1990’s, ceased production when Mr. Celis closed his Austin microbrewery and moved to Belgium.

In 2002, Michigan Brewing Company acquired Celis, and Celis beers were back in production. Michigan Brewing continued the production of Celis beers until its closure in 2012. In June 2012, the Celis trademark made its way back to the Celis family. In 2014, Christine Celis began having Pierre Celis’ original recipes brewed at Two Roads Brewery in Connecticut.[ABV previously listed at 3.9% - kmweaver]

4.0 From the 12 fl. oz. bottle dated 02/11/15. Served roughly 45 degrees. Hazy pale yellow pour with white foamy head that fades. The aroma has all of the Witbier esters I would hope for including mellow toasted malts, crackers, light spice, orange peel, and wheat. Light body. The taste has the same toasty and mellow herbal quality with a slightly bitter finale. They did this one right.
3.8 BOD 12/23/14. Pours a cloudy gold. Normal head volume, lacing and retention. Outstanding classic Belgian nose of clove, banana, hint of hops, light biscuit and Belgian yeast. As it warms, lemon notes emerge. Light medium body with a bit of silkiness to the smooth texture. World class carbonation with a nice effervescent middle and a rollicking finely bubbled prickly finish. The flavor profile is very good. Intensity is reasonable, as is balance. The shortcoming is complexity whereas the flavors don’t separate well and come across in a blended, somewhat muted, fashion. Clove is the predominate flavor and the others from the nose are blended underneath. You really have to look for them. The finish is a mild slow fade of phenolic clove.

3.1 10/26/2007 9:52:09 AM Bottle from Cracked Kettle. Orange hazy. Nose of grapefruit, citrus. Tart taste. Fruits and lemon taste. Some grapefruit and citrus as well. Too sour for my taste. But appreciate a good beer.
3.3 Keg at the Hanging Bat. Pours hazy gold with a thin white head. Aromas of banana and lemon. Taste is more banana, sweet finish.
3.5 Draft at The Brass Tap-U Square, served in a flight. I’d seen this on the menu forever and needed to clear it out of my brainspace. It pours a totally clear pale bright gold with a finger of soft cream-colored head that laces the glass and lasts for a while. Notes of banana, wheat, coriander, citrus, doughy and cereal malts, hay, and light herbs. Light-bodied, with medium soft carbonatoin and a dry mouthfeel. Not bad.
2.9 Gold/green color, cloudy, lacy. Medium body, moderate flavor, smooth mouthfeel, little carbonation for the style, avg length, uninteresting finish. Dry, moderate bitterness, low acidity, hint of sweetness in the finish. Herbal, soapy, yeasty and bready. Not my style, not fair for me to judge.

3.4 Bottle listed as brewed in Stratford, CT. Pours a clear yellow color with white head. Spicy, yeasty, wheat, slight skunky aromas. Yeasty, spicy, zesty, a touch skunky flavors. I had this beer about 7 years ago and it was really great. This one is still pretty decent but a touch lacking and skunky. Not sure if that is because of maybe being contract brewed in Connecticut.

3.7 Slightly musty aroma with hints of clove. Pours crystal clear with a thick white head that lasts. Very balanced and refreshing. The spices are very faint unlike some other wits. Enjoyable beer
3.2 Pours light golden yellow from bottle with frothy head. Malty and citrus aroma. Tastes filling, not much malt, orange, and surprisingly bitter at the end with a bit of astringency (from the bitter orange peel?), hops dominant. Full bodied and filling with obvious wheat malt presence. Ok beer, fairly standard Belgian wit although this is supposed to be from the guy who resurrected the entire style. Little too heavy on carbonation and bitterness imho.
3.0 12 oz bottle from Leukens (Tampa FL). "Brewed and bottled by Celis Brewing Co., Stratford, CT". Feel: a bit too thin; medium carbonation. Aroma: more spicy than fruity, and slightly more fruity than wheaty. Flavor: more balance across these three aspects. O: the fruity/spicy flavor was very good with pumpkin pie.
3.8 TX bottle Hazy to cloudy yellow straw color, fluffy white head. Aroma of subtle spice and orange peel, light banana. Taste has citrus, subtle bubblegum, light spice. Good example of the style.
3.3 Pretty much a stock witbier, I’m almost disappointed given how much I like the St. Bernardus wit and how this is supposed to be the same recipe. It’s just your typical lightly sweet, orange dominant with some coriander, wit.

3.5 "a touch of skunk or sour that kinda fits with this very very light bodied and colored ale. fruitiness from the citrus and coriander done very well. this was a very nice, very refreshing surprise in a style i don’t go out of my way to drink. will revisit in the summer."

4.1 That great aroma of coriander and celery is exactly what I remember from the old Celis White. Crystal clear and very pale yellow (so much so it looks like cider) with a white foamy head. Lightly sweet with a sour tinge and that great vegetal flavor that makes this beer so unique. The lightest of floral hop bitterness shows through, but the taste is very unified although not one-dimensional. Residual honey sweetness and lasting yeasty flavor makes another sip inevitable. A classic beer that I wish was easier to find. Looks like Pierre’s daughter is going to revive it in Austin, TX this year, so let’s hope that dream comes true!!

2.9 I don’t remember drinking this beer but my wife really liked it. And I got lucky that night so I guess I’ll be buying some more. The rating is based on the results.
3.3 Poured from 12 oz. bottle. Lightly hazy, pastel gold with a near-white head that nearly filled the glass on first pour and decent lacing. Aroma of lemon (both sweet and tart), lemon zest, yeast, coriander, mild banana and light malt. Taste of lemon, yeast, bread, light malt coriander and banana, with the lemon and light malt dominating. Medium/light body and low/medium carbonization. A refreshing lemony quaff, but then so is lemonade.

3.7 Pours extremely pale yellow with a short white head. Scent is underrripe banana, light orange. Taste is slightly sour citrus, wheat. Very, very light....crisp. A tasty and nice drinking beer.

2.9 This witbier poured a cloudy light yellow colour with a big, beautiful, bright white head. To the nose there are scents of spice, cooked veggies, dough and a little vinegar. First sip was very carbonated and somewhat watery with flavours of cinnemon, spice, vanilla and hay. Finish is spicey with flavours of cinnemon lingering on the palate.
2.6 Yellow pour, white head. Aroma is banan, coriander, yeast. Flavor is much the same, not a whole lot going on. Meh.
2.5 12 ounce bottle from Tops. Very pale hazy (not cloudy?) with lasting flat head and some lace. Coriander aroma with some lemon. Fruity lemon apricot sweetness with coriander finish almost like Indian food. Thin and a a little watery. Further confirmation that Hoegaarden is one of the best beers in the world.
