Mikkeller / To Øl Walk on Water

Mikkeller and To Øl present to you - our effort to make the lightest beer in the world.
What is the lightest beer in the world???

What we mean, is that Walk On Water is the beer with the lowest density. It simply weighs the least.
Brewers and beergeeks alike tend to describe beer by its density (or gravity). The specific density of a liquid is determined by its amount of dissolved matter. Normally proteins, carbohydrates, lipids and ashes are the four factors governing the density of a liquid. But for a beer it is more appropriate to describe its density by two factors; carbohydrates(sugar) and alcohol. Alcohol is much lighter than water, while carbohydrates (or sugars) in solution will raise the density of water.
When we brewed this beer the challenge was to ferment as much of the sugars from the malts as possible, without leaving any residual sugars. This is fairly easy for low ABV beer types, but is much more challenging for a 14% ABV beer - you could say the higher alcohol percentage the lighter, but then again high alcohol would lead to high amount of rest sugar and therefore the beer would be heavier.

After working on the breakdown of residual sweetness (dextrines etc.) and optimising our fermentation, we ended up with this beast of a boozy beer!
14% alcohol and no residual sugar making it a 100% attenuation fermented beer makes this the dryest and lightest beer in the world.

3.7 Bottle in celebration of the birth of one of my best mates daughter, Tabitha. Cloudy, honey gold with a quickly dissipating off white head. Wonderful aromas of honey, peaches, nectarines, apricot, cereal, grain, caramel jersey lollies and a big whack of rummy booze. A sweet beginning of honey and stone fruit, leading into a long, dry, boozy finish. The alcohol perhaps drowns out the flavours. Love the interplay between sweet and dry though.
3.3 Bottle from tasting at home. Pours bright orange with white head. Nose of alcohol, citrus, hay, florals and herbal. Finishes very boozy with lots of fresh citrus. Lighter body.
3.4 Tap at G-Town Paradiso. Awesome concept. Unfiltered golden orange. A beast. I’d call it a wheat wine, but it doesn’t have that malty rich insanity. Like an APA, if you added grain alcohol. Just a monster of a beer, in shiny smooth clothes. Mead tendencies. Champagne yeast? Boozy all the way, but a cool experience. Well done, but brutal.
3.2 Yellow pour, white head. This is pretty boozy up front, some cereal grain, slight hops. Nothing special here but not offensive either.
3.8 Bottle. Pours apple juice yellow with a small white head. Notes of caramel, honey, citrusy hops. Surprisingly light on the mouthfeel for the amount of alcohol in it. When it warms up it gets more Belgian tasting, though with the alcohol presence of something cheap and eastern European. Kind of surprised I liked it.
3.4 Bottle. Pours clear golden with a small white head. Aroma biscuit, booze, oak, fruit, citrus, pine and spices. Taste is heavy sweet and moderate bitter. Body is medium, texture is syrupy, carbonation is soft+. Finish is very long, bitter and warming. Goes down real easy until temperature goes up.
2.5 Parceria da To Øl com a Mikkeller no projeto de produzir a cerveja mais alcoólica com a menor densidade possível. Deu a cerveja notas acéticas que para mim são desagradáveis. ---Rated via Beer Buddy by Sátyro
2.8 Bottle at Haket, Göteborg. Clear golden beer with a decent offwhite head. Malty grainy aroma, bready, some fruit, some alcohol. Boozy flavor, bready, grainy, fruity notes. Way too boozy.
3.8 330ml bottle at home. Pours clear pale gold, thin white head. Aromas at the lemon end of citrus, light sweetness. Taste has honeyed sweetness and light bitterness. For the strength I expected it to be richer and thicker, but it’s surprisingly light and refreshing.
3.7 caramel, roasty, toast, cereal, amber, orange, cloudy, minimal head, white foam, medium sweetness, lightly bitter, full body, oily feel, lively, bitter,
2.8 On tap at Bangers & Lace. Pours a clear gold with a white head that dissipates to the edges. Aroma is boozy with a bread and hay backing. Flavor has a combination of syrupy grass, booze and sweet grains.
3.3 Tap; Hazy straw/gold color; Medium creamy body; Aroma and flavor of sweet malt, fruit, caramel, and some spice; Warm finish; Nothing too complex - but decent.
2.7 Bottle. Clear yellow with a medium sized diminishing white head. Hops, biscuits, and alcohol in the nose. Quite some alcohol presence in the aroma, citrus, fruit, honey. Medium body, oily texture, soft carbonation. Medium sweet and bitter. Sharp alcoholic, dry, warming, rough. Low drinkability, probably more fun to make than to drink.
3.9 Draught at Mikkeller Bangkok. The beer looks interesting. Hazy yellow body with a creamy white head that melts down to a small lacing one. Aroma of juniper and pine, grapefruit, fruity yeasts. Easy bodied one, veryvery dangerous. Well hidden alcohol, the high abv is undetectable. Fruity taste with a bitter character of juniper, pine and resin. Nice and dangerous!
3.3 On tap @ Patricks. Unclear orange body with a small, lacing off-white head. Aroma has ripe fruit, caramel, honey and alcohol. Flavor is intense sweet, sticky caramel, dry fruit, bitter and alcoholic. Full body and long aftertaste. Too sweet, to sticky and too boozy for me, out of balance.
2.1 Just don’t know what the point of this is. Sake up front, jet fuel in the finish. Harsh booze, still sweet.
Bella, bella birra.
4.3 A good non-American strong ale, potency is there but not the full robust body of others.
3.3 Bottle. Pours a hazy golden color with a medium sized white head. The aroma and flavor have some fruity character, herbal, sweet honey, mildly spicy and boozy alcohol. Hints of resin come with the flavor and try to cut the honey sweetness. Interesting to try, but no revisit in the near future.
3.9 On tap at underground. Clear gold, white cap and solid lacing. Aroma of tropical fruit purée, apple tart, brown sugar. Taste is a great balance of tart and sweet. I dig it.
3.8 Pours a light golden yellow with a small white ring but leaves good lace. Aroma of citrus, light caramel and fruity floral notes. Taste is caramel malts, alcohol, citrus(lemon, orange, grapefruit) and then transitions into some green apple on the finish. Overall this is a very interesting beer and worth trying the mastery that is mikkeller!
3.2 Faint caramel aroma, some toffee in it. The taste is kinda promising but it will let you down. It kind of tastes like urine. Not very good.
4.0 I appreciate the experiment that was motivation for brewing this, but as a beer it's not particularly successful. Belgian yeast is good, and the fruitiness (mango?) is good. But too sweet -- and way too boozy hot.
3.1 Bottle thanks (i guess) to adnielsen. Aroma is really boozy, i think it singed my nose hairs. Flavor is better, piney and sharp, reminds me of pine-sol. Ok
2.3 Bottle @ Greg’s dump. Last rotbox offering of the night thankfully. Pours a touch hazy yellow appearance with a white head. Sweet goopy candy, somewhat boozy, herbal honey aroma. Slight rubbing alcohol, boozy, goopy mess. No.
4.0 Hazy pale gold pour with barely any head. Nose is strong alcohol with hints of pine needle, smoke and toffee? Taste is strong. There is clover honey under not overpowering pine hops. Body is a bit thick but not syrupy. Finishes with the honey mellowing. A very impressive and balanced brew.
3.0 Bottled 330ml@VWPBF Hazy yellow color, small white head. Citrus and peach in the nose. Medium-bodied. Fruity flavor, citrus, burning alcohol dominates everything. Interesting but not very good.
3.5 Pours a spritsy, clear golden yellow with a foamy white head. Starts at about a centimeter and recedes to a super thin disk gradually but quickly. Smells pretty boozy. Hoppy, too. Resiny and piney. A little floral. Almost... a honeycomb... kind of sweetness. Smells... like you could sterilize surgical tools in it.This tastes a lot sweeter than I’d expected. Lots of honey to it. I like how the alcohol burn feels in the mouth. Spirit-like. This is a pretty remarkable beer. Maybe not great, but remarkable in a "Makes me feel like remarking on it" kind of way. Whiew...it’s a little like shochu in the finish... Very clean. Very dry. >_____< But woof- that alcohol is... palpable.
