Our Brewmaster Dan launched his Wild Fruit Cave this winter brewing Oud Bruin, a Flander’’s style ale that is immensely complex both tart and sweet. Soft toffee notes lead with a blend of Wisconsin, Brittish, and German malts that first rested in the Coolship before spontaneously fermenting on oak in the cave. Hallertau hops, matured in the horse barn, elegantly support sparkling fruit notes that frolic before a punctuated oak finish. 100% naturally fermented in oak vessels this is an elegant beer that can be enjoyed now or the patient few can lay in their cellar to age.

3.8Bottle from flandersned-thanks, Steve! Ruddy brown. Nose is mostly oak, and red wine elements...line a cellar at a vineyard. Cherry, some dried dark fruit, fresh red grapes, leather, and lots of smooth oak. Nice stuff.
3.9Bottle shared by Ryan. Pours a brownish red without much head. Light vinegar aroma with a slight dark fruity character. Very enjoyable.
3.412oz bottle pours a dark murky red with zero head. Cherry tart fruit and fig taste.
2.312oz bottle to chalice. Light brown with a hint of red. Generous tan head that lasts and laces. Aroma of sweet malt. Maybe a hint of tartness. Taste follows. Some cherry. Mostly sweet and mildly tart on the finish. Thin with prickly carbonation.
2.5Malty sour smell with a distinct metallic copper note to it. Mildly sour taste with metallic penny/copper.
3.7Pour out of 12 oz bottle, dark reddish brown pour with off white head, aroma brought notes of sour fruit, cherry, lemon, some slight acetic into a bit of sweet caramel, bread, toast, some earth. Taste was a mix of tart cherry, vanilla, some sweet chocolate, caramel, slight acetic into a bit of oak, finishing slightly tart, fairly sweet.
3.4Drake’s 10k. Excited to try something from New Glarus, as it had been a while, and neat to see they are working on coolship beers. But this one, while not bad, wasn’t all that either. Medium amber, slight sour aroma. Flavor is lightly of soured caramel accented malts, faint wood, but everything very restrained. More cowbell needed.
3.8Bottle. Dark caramel with foamy cream head and nice lacing. Nice sour/sweet smell. Enjoyable.

3.2Bottle. Cloudy burgundy hue with a fuzzy head the color of donuts. The aroma’s fairly benign. I do get a dash of caramel with a little grape, vanilla and balsamic, but it’s all very faint. The flavor is similarly tame, blending apple skins, pretzels, oak and a splash of cherry vinegar in a surprisingly dry amalgam. Supple medium-light body; mild carbonation with lots of fizziness. Not a bad example of the style at all-- just lacking in oomph.
3.4Bottle. Pours an amber body with light white lacing. Mouthfeel is medium with notes of soft fruit, toffee/caramel malt, soft oak and spice.
3.7Pours a garnet tinged muddy tea color with a persistent tan head that leaves nice lacing. Aroma of vinous fruit, oak, and a bit of apple cider vinegar. Taste is fruity sweet with a combination of apple, fig and raspberry. A slight hint of malt vinegar, toasted oak, toffee and a hint of cinnamon. Finishes with some oak and malt. Mouthfeel is semi creamy with a medium body and moderate carbonation. Very nice blend of flavors and low level of sourness.
3.8Soft ruby reddish copper pour with two fingers of sudsy off white head. Viscous woody nose with with wonky oak and fruit tones. Very woody/tannic in the flavor with a light acidity and vinous note. Light bodied and tannic.
3.2Bottle with Jenny during our snow day and Scream marathon. I had this during Muckfest, and most of us agreed it tasted young and needed more age on it before rating. So here we are, 7 months later, thanks to all those bottles SHARED BY MOTORTODDHEAD WHO DOESN’T LIKE ANY OF THAT FUNKY SOUR SHIT. Nothing really changed here: some mild cherry pie and toffee notes but otherwise very little flavor. Just not a lot going on. It’s clean, at least. Nose is mild of really sweet toffee and slight cherry pie Flavor is similar. Not bad, just a bit of a dud knowing New Glarus.

Ambrée présentant un léger trouble, col épais et crémeux beige.
Arôme offre un bouquet de sucre brun résiduel avec cette impression de fruits fermentés. En rétro, je note une légère note boisée qui est, elle aussi, judicieusement placée.
Palais est aigrelet assez agréable, sucre brun tirant presque sur le toffee accompagné de fruité noir, malt caramel, légèrement grillé. Petite note boisée de chêne avec une note épicée. Rappelle de mûres et de griottes pour le profil aigrelet.
3.6Bottle courtesy of summer santa 2014. Pours reddish brown with a small reddish beige head that leaves some sparse spotty trace on the glass while dissipating. Smell is sour and malty with dark bread, caramel, cereal, lemon juice, blackberries, cranberries, moist soil, minerals, hay and lemon zest. Taste is tiny sweet, slightly sour, malty and tiny fruity with crisp bread, dark bread, butterscotch, lemon juice, yoghurt, pineapple, cranberries, hay, moist soil, minerals and lemon zest. Mouthfeel is soft, tiny dry and medium bodied. Finish is tiny sweet and tiny sour with dark bread, crisp bread, cereal, lemon juice, pineapple, cranberries, moist soil, hay, dry soil, minerals, lemon zest and hints of sheet metal. A nice drinkable beer but nothing that slows you away like other New Glarus Sour Red/Brown.
4.0Dark reddish amber. Big frothy off white head. Fairly malty. Dry malty. Woody. Leather. Light fruity. Yeasty. Super well made as always.
3.5Deep orange brown with a creamy soapy beige head and light lacing .... Aroma of oak and tart cherry with light acidic qualities and some toffee ..... Taste is of tart cherry, oak, light toffee and caramel malts .... Has some fruity yeast notes to it ..... Has a dry spicy bite in the finish that lingers for a little bit..... Decent average tart and sweet
3.6355ml bottle. Rusty in colour, thin white head. Aroma is lightly sour, cherries. Lightly sour flavour, some tart cherries. Finishes long, light sweetness, tart cherries.
3.4Une expérience en deux temps. Tout d’abord habitée d’une certaine richesse, elle diffuse ses jets de vanille, toffe, fruits rouge avant de sombrer aqueusement dans une mineralité qui frôle le métallique. L’oxydation a aussi fait son chemin mais le 3/4 de chaque gorgée est bien ficelé. Agréable, sans plus.
4.012 ounce bottle
Another home run from New Glarus might not be a true Oud Bruin. Regardless of that fact it shines in the same spirit as Enigma and other malty sours. I wish I had another bottle but I can make due with a four pack of Apple Ale and other seasonals until it eventually comes back around.
Aroma / Appearance - A creamy caramel base swirls like stained maple wood melted into liquid form. Dirty white caps stick to the top. Old cherry soda, caramel chews, and molasses rise from the glass. The total impact reminds me of a dewy forest path in early spring after a dusting of snow.
Flavor / Palate - Carbonation tickles the tongue. Oak covered cherry candies double dipped in caramel and chocolate taste like they have then been dropped into sawdust. A semisweet profile is both tart and chocolately. A fine release from southern Wisconsin compares favorably to almost anything else in the Unplugged / Thumbprint series. I don’t know how long it will hold up but if you can get a bottle by the end of the year don’t wait to crack it open.
2.9I have to say this is quite disappointing. Oud Bruin is my favourite beer style, and this, whilst not a bad beer, this really the blandest I’ve had.
Looks good in the glass, if a little pale, but good head retention. Very little aroma, which is followed by a very bland taste. I don’t know what else to say, this was my last hope from New Glarus, having visited the brewery and tried a lot of their beers, but this like the others fall far short, I wont bother trying any more.
3.2Bottle (12 oz). Thanks to Rich for this one! Reddish-brown with a small off-white headd and some lacing. Aroma is of toffee, light fruitiness, hints of sweetness and light wooden notes. Taste is super mild with light toffee, red fruits, very light sweetness and hints of spiciness. Light body. Almost watery at time. Moderate carbonation. Short finish. No acetic presence. Not the most complex Oùd Bruin, lack of depth and more on the sweet side (even though it’s not super sweet). No one that I would buy again.
4.1Bottle from the brewery. Tawny red. Thinnish head. Beige head. Great sour nose. Hint of cork. Raspberry jam. Taste is tart throughout. Lots of fruit. Tasty.
3.0Pours a deep rusty mahogany color with three fingers of thick eggshell foam. Aromas are nutty fruitcake, some burnt sugar, autumn leaves, dark unfiltered honey, baked apple,vanilla. Palate is slightly revolting... metallic, fish emulsion, rich composted soil, tannic lipton tea. Seem artificial but has glimpses of uniqueness. Hmmm.

Mildly tart with a more subtle bitterness. Ripe fruits and old bread hints in the flavor.
Watery light body.
3.8Poured from bottle to glass. Deep copper/brown hue with creamy tan head. Aroma is oak, lactic, toffee, brown sugar. Mouthfeel is good with a medium light body and crisp carbonation. Taste is dry sweet with a tart following and an oak tannin finish. Overall this is an interesting brew.
3.5Bottle shared at Darkness day. Pours orange with minimal head. Smells slight sour and tart. Minimal sour taste with some grapefruit and dry finish. Okay but not great.
