We brewed this ale only with the famous sake yeast No. 7 from Masumi Sake in Nagano, Japan. On advice from Masumi’s master brewers we fermented this ale very slowly at low temperatures to bring out No. 7’s fabulously fruity character. This is a beer, but has some flavors found in a sake. A great combination!

3.4 "light orange in color, sweet fruity honey-like aroma and a similar flavor. alcohol is obvious, but it’s not overly hot. a little sticky and slick going down. the sake yeast lends a unique aspect, but it’s not elite, and therefore not worth the high $."
3.2 25 cl bottle @ home. Pours dark amber with no head. Aroma and flavour are caramel, dried fruit, and alcohol - with an alcoholic finish.
3.6 8.5 ounce bottle, with some age obviously. Pours a hazy brown with not much of head (and there was barely a hiss upon opening). Aroma of toffee, caramel, earth, cardboard, tart and dry fruits, faint hints of booze. The taste is sweet caramel, sunflower seeds, nuts, honey, oats, booze, candied berry like fruit notes, vanilla. Medium-full bodied, low carbonation, fairly hot. Solid beer. Interesting.
3.8 Milky amber pour with a white head. The aroma is fairly heavy on the caramel and alcohol, as expected with a beer that is 17%. The flavor is very sweet with a lot of caramel notes and brown sugar. There is also a strong tobacco character with a lot of cigar notes. Medium mouthfeel and medium carbonation.

3.9 Consumed New Year’s Eve 2010 into Stölzle Grandezza Snifter 21oz at 45°F half inch white head quickly settles to very thin sheet and delicate ring, bright pinkish orange softly hazed body Pears, apples, honeydew, quite sweet, slightly floral, some characteristics similar to white wine and brandy, warmer temps introduce sweeter woodiness, alc is present but not overwhelming Med body thickens at higher temps, warming, low carbonation
3.5 Bottle. 5 years today. Pours brownish/cobber, no head. Some coating. Aroma is malty, clean, sweet, fruits, bit alcohol. Taste is really sweet. Caramel and red fruits. Nice alcohol! Bit burning but in a comfortable way.
3.6 Pours clear copper brown with almost no head, very fine lacing. Malty aromas, toast, caramel, vanilla, cherry, plum, venous, sake, pepper. Medium-thick body, boozy hot, very low carbonation. Heavy sweet, just a touch sour, with a light dry bitter finish.
3.0 Pours red/brown with a small effervescent white head that dissipates quickly. Not much on the nose, some malts. Strong arrival of sweet aroma, some bitterness. Some earthy yeast. And the main aroma I can make out is... American beef jerky. An odd beer.
3.6 Rödaktig i kroppen. Spritig i aromen, sötma, röda bär. Väldigt kraftig smak. Besk eftersmak.
2.2 Dark brown body, thin light tan head, minimal lacin. Caramel, aggressive sake. Infwcted , booy. Raw and Harsh. Shaky feel and rough carbonation.
3.5 Reasonably clear rusty coloured with no head. Aroma is booze, soy sauce, quince, brandy. Dry on the palate with a little booze burn on the finish. Absolutely no carbonation. Taste is wood, caramel, sake, toffee, hints of dark fruits.
3.7 Well, today seems like as good a time as any to taste this beer, which has been in my fridge for years. The best-before-date is 2014-06-08, batch nr is #430 and brewed-on-date is 2009-06-08. It pours an amber liquid, with a small head which after a minute or so retracts to a bubbly halo around the edge, and the bubbles just keep getting smaller. The aroma is complex, somewhat sweet, notes of berries and fruits, with a kind of artificial strawberry thing dominating; also some pear and a bit of caramel? A note of alcohol as well. Flavorwise it follows the aroma, with some malty flavors and some nutty flavors. There’s not much more I can say. The 17% abv is very noticable. The mouthfeel is full and almost oily. Lingering flavors of burnt sugar and fruits - (artificial) pear-ish notes, nutty notes and something else. Quite on the sweet side. Not as special (flavorwise) as I thought a beer made with sake yeast would be - but maybe my expectations were unrealistic. Very much a beer I’ll be slowly sipping for the rest of the evening. I’ll update the rating if I discover anything worth adding.
3.8 2014, January. The color is slightly hazy orange amber with a small head. The aroma has notes of ripe fruits, raisins, burnt sugar, caramel, light yeast and malt. The mouth feel is oily. The flavor is sweet with notes of yeast, loads of ripe fruit, light alcohol, burnt sugar, caramel and there is even more alcohol in the finish.
3.1 Nøgne Ø. red Horizon. 17%. 75 IBU. brygget den 08-06-2009.gæret med en japansk sake gær. ingen skum men hade jeg heller ikke regne med af en øl på 17 %. dufter kraftigt af sød stær alkohol med et twist af frugt. lidt rosin duft .smagen er stærk sød med en et twist af ristet brød. en smule rødvin noter. en mellem mundfulde. tror den skulle ha være drukket frisk for den smager lidt af øl som har stået og lageret længe. sidste salgsdato 8-6-2014
3.4 Bottle from the Norwegian contingent. Amber pour with a thin ring of off-white foam. Sweet sugary aroma. Vanilla, citrus, sweet red beans, brown sugar, and yeast. Flavor is really sweet and sugary. Brown sugar, citrus, vanilla, and caramel. Yeast, booze, and some vinous character.
3.7 Bottle: I have been holding on to this one for a while, pours cloudy orange with no head and some yeasty chunks, aroma is slightly sweet, taste is sweet at first then the sake flavors take over, warming finish from the alcohol. Interesting.
4.5 super rich malt nose, with some elegant oxidation/sherry notes. some alcohol as it warms. a bit estery/fruity. slightly hazy medium amber/gold with a hint of a red highlight. the head quickly falls to large bubbled lacing. smooth, smokey, viscous. the alcohol is well masked by the rich body, malt flavors. almost a saltiness to it towards the finish, before some bitterness pokes in. very warming. after two sips, the alcohol is very easy to notice -- but it still doesn’t taste like a 17% beer.
2.2 Honey and syrup thickness. Golden orange. Burnt red. No head. Nose is nose is like and English barkeywine. Toffee and figs. Hop bitterness and caramel. Ugh. Tastes terrible. Major boozy and chemical taste. Sweet medicinal finish. Do not buy. Whoa.
4.5 Pours clear, golden brown in color. Nutty, sweet and complex, one of the most enjoyable beers I've tasted.
4.0 Bottle at home, Masumi Plus. Light hazy orange, no head. Aroma heavy of alcohol and malt (caramel, fruits). Flavor medium to heavy sweet, complex (vinous, fruity) etc. Full body, flat.
4.3 The honeysweetness from the Sake yeast makes this strong ale an explosive Barley Wine taste bomb. Brewing creativity at its best!
2.5 Bottle. Golden clear beer with almost no head. Malty, berry, rubber and floral aroma. Rubber, alcohol, caramell and hay flavour.
3.4 Bottle sample at Beoir Go Leoir. Sweet butterscotch, dried fruits, and spiced orange, and boozy aroma. Cloudy orange with no head. Sweet caramel, honey, spice orange, strong clove, and hot boozy flavor. Full sticky body, flat carbonation.
3.9 Bottled. Almost looks like dark honey, no head. The aroma is very much honey-like, quite identical to some better miod pitny (honey mead) found in Poland. The taste is more like a nordic mead, with freshness of lemons and other citrus. It’s surprisingly sparkly considering the lack of head. The finish could be a bit more exciting, currently it’s more alcohol than fruits.
3.5 Shared 0,25 l bottle. Batch # 430. Pours a muddy golden amber body with no head. Dates, raisins, prunes and alcohol on the nose. Sweet, dried fruits, salty and bitter with cellar notes. Full bodied and alco warm.
3.6 Bottle. Pours reddish orange amber. Small Off white head. Nose and taste of baked bread, orange cream, orange zest, herbal, sake yeast, dried citrus and caramel malt. Medium body.
3.8 From bottle. It pours rich golden, slightly hazy with a minimal white head. Aroma is big sweet with peaches, mango and ripen fruits. Taste is again mostly sweet with big fruity notes and slight alcohol. Good stuff indeed.
4.5 Dark brown with yellow medium cup, very very sweet, some soure notes on the tongue root afterwards.
2.9 0.25 L bottle from Bieropholie, cool, tulip. Hazy deep amber with no head. Rich and pungent, fruity, spicy, boozy, peppery, very malty, savory, salty caramel. Medium plus body, very relaxed effervescence. Big and punishing, so much alcohol, quite peppery and savory, bad booze, grassy? I guess there is some sake character; big and very boozy.
