Amager Bryghus and West Lakeview Liquors Collaboration

When we launched BorrachaBaker made us some s'mores shaped like dinosaurs for our launch event. Then, we made an imperial stout with graham flour, marshmallow fluff, vanilla, and cocoa nibs with Amager and West Lakeview Liquors. Then, we brought this beer to the Brewpub Shootout and paired the beer named after the food with a food the beer wasn't named after. People were confused and named it best beer (or was it food?) at the Shootout.

4.2 12oz bottle from BeardedOCBrewerH - thanks for your overwhelming generosity! Very dark brown pour with little head. Aroma has sweet malts, chocolate, thick molasses, roast and marshmallow. Taste has sweet and thick malts, chocolate, roast, marshmallow, and - if squinting - perhaps some graham. This leans toward sweet, but never too far, and this is not too deep for the ABV, but solidly deep. Overall well-rounded. Medium-to-full bodied with a solidly tasty blend, there is surprisingly low alcohol presence. Finishes well in the mix of bitter and sweet, leaning perhaps a touch to the sweet side. This is a nice tasty brew. Curious now what the variants are like. 15.7
3.9 Smells like s'mores but comes off fake, especially the graham cracker. Shiny black color with a dark brown head that recedes quickly - beautiful. Really tastes like s'mores, the marshmallow comes through well. Strangely good.
3.8 Graham crackers. Very sweet. Table sugar. Lots of vanilla. Chocolate. Tasted at my random bottle share.
3.6 Sampled at Gregwilsonstls. Almost black. Nose is roasty and fruity and so is the flavor. Chocolate but not as much as expected. Heat is big.
3.9 It pours very dark with a small off white head. It has a rich full body with very little carbonation. The taste has chocolate, graham crackers, cocoa nib bitterness, vanilla and overall richness. Very well done.
3.7 Aroma: rich, roasty, sweet; Appearance: pitch black with offwhite head that fades quickly; Taste: follows nose with nice undertones of flavor; a little cloying at end; Palate: heavy body; Overall: good; a nice treat.

4.0 Shared a bottle at home. Pours black with a very small brown head that disappears very quick. The aroma is coffee with some sweetness. The flavor is chocolate with some coffee and marshmallow. This is pretty good, I was hoping for more smore flavor
3.8 Pretty good stuff. The aromas that I pick up on not so much as billed since I pick up coffee not any of the other advertised qualities. But for flavors I get definitely some strong Graham but I don't really pick up vanilla or cocoa at least not very much. Very tasty beer none the less. Great body and finish no off qualities.

4.1 12 ounce bottle into snifter, bottled on 12/6/2017. Pours opaque dark brown/black color with a small dense khaki head with decent retention, that reduces to a thin spotty lace cap that lingers. Slight spotty lacing clings on the glass. Aromas of big milk/dark chocolate, cocoa, caramel, brown sugar, vanilla, cream, marshmallow, molasses, graham cracker, cake batter, and toasted dark bread; with lighter notes of nuttiness, coffee, licorice, dark fruit, smoke, herbal, grass, and yeast/roast/toasted earthiness. Damn nice aromas with great balance and complexity of dark/roast/bready malt, cocoa, spices, light-moderate earthy hops, and light fruity yeast notes; with great strength. Taste of big milk/dark chocolate, cocoa, caramel, brown sugar, vanilla, cream, marshmallow, molasses, graham cracker, cake batter, and toasted dark bread; with lighter notes of nuttiness, coffee, licorice, dark fruit, smoke, herbal, grass, and yeast/roast/toasted earthiness. Light roast/char and herbal/grassy/spicy hop bitterness on the finish. Awesome complexity, robustness, and balance of dark/roast/bready malt, cocoa, spices, light-moderate earthy hops, and light fruity yeast flavors; with an awesome roast/hop bitter/sweet balance, and zero acrid/astringent flavors after the finish. Lightly increasing dryness from hop/char bitterness. Light carbonation and fairly full body; with a very smooth, creamy/bready/silky, and lightly sticky/chalky mouthfeel that is great. Minimal warming alcohol for 10.5%. Overall this is an awesome spiced Russian imperial stout. All around great complexity, robustness, and balance of dark/roast/bready malt, cocoa, spices, light-moderate earthy hops, and light fruity yeast flavors; very smooth and dangerously easy to sip on for the big ABV, with the mildly bitter/drying finish. Very rich/complex malts with awesome balance of spices; nice earthy hop presence, and mild complementing English yeast fruitiness in the background. A really enjoyable offering, and spot on style example.
4.0 Pours thick black with no head. Aroma is heavy chocolate and vanilla, light roast. Taste is instantly dark chocolate with a hint of some marshmallow, warming to vanilla and coffee. Finish is smooth vanilla. A really tasty dessert stout.

3.7 $5.99 bottle from Wine Warehouse. Pours thick dark brown, not quite black blue close with a small brown head. Aroma is vanilla, marshmallow, chocolate, coffee. Flavor is tangy metal, chocolate, coffee, vanilla, marshmallow. Has that weird metallic taste that kills this from being top tier, but it's still good. Finishes boozy.
3.8 12oz bottle. Dark black color tan head. Roasted malt coffee aroma. Chocolate cherry vanilla malt flavor. Heavy body. Weird aroma and flavor that I’m not sure how to describe.
3.7 Pours black with light brown head. A roasted malt, chocolate, vanilla and coffee aroma. A chocolate, roasted malt, vanilla, coffee and some winter spices. A lingering coffee and roasted malt aftertaste.
3.7 Bottle - dark cola-looking pour - fizzy, but no head - nose and flavor are pretty sweet, but that’s to be expected here, and there is ample complexity, with notes of toasted marshmallow, vanilla, anise, chocolate - flavor has some bitterness, alcohol warmth, and a bit of smoke that compliments the toastiness of the graham cracker and marshmallow - lingering caramelized sugars and roast - good.
3.4 This was too sweet for me. The marshmallow flavor I got, with some coffee. But I just didn’t care for it much.
3.7 12 oz bottle. Unusual nose that’s not bad but not promising either. Fortunately, the flavor lives up to expectations: it’s rich, lightly sweet and harmonious with well set levels of input from the cocoa and vanilla beans. Hints of graham crackers too. Partially hidden alcohol. Full body with light carbonation and well hidden alcohol. Overall: a fine sipper.
3.6 12 oz. bottle, shared by Scott. Pours black, with a small, tan head. The aroma is milk chocolate, vanilla, molasses, and sugar. Very sweet and syrupy, with no hint of bitterness or balance. Heavy body, syrupy, creamy, and thick. This is a fun beer; cloying sweetness, but that should be expected. Nails the smores character.
4.0 Bottle shared by a friend. Pours darkest brown with a thin tan head. Aroma of malt, marshmallow and chocolate. Malt and vanilla flavor giving way to chocolate and metal before a roasty finish. Metal flavor diminishes as the beer breathes a little.
4.2 12 ounce bottle, stamp on bottle says bottled on 14 DEC 2016. Served in a snifter, the beer pours dark brown/black with about an inch tan head. Head retention and lacing are both pretty good. Aroma is nice, the brew smells like chocolate, marshmallows, graham crackers and vanilla. Taste is similar to the aroma, but there’s also some roasted malt, vanilla and molasses flavors noticeable too. This really does smell/taste like a S’mores would, but there’s also a nice amount of bitterness so it’s not overpoweringly sweet at all. Mouthfeel/body is medium/full, it’s slick and creamy with a moderate amount of carbonation. Glad I bought this, I’d like to drink this again! $5.99 a bottle.
4.2 Bottle poured into a wine glass showing pitch black and half a finger of dark coffee brown foam. The nose shows big deep dark malts with sweet but light notes of marshmallow. The palate is moderately carbonated and medium bodied. Light lactose sweetness runs throughout warming up to a marshmallow sweetness. Dark malts take the center stage. Finish is a dark chocolate bitterness with a resurgence of vanilla and marshmallow. Surprisingly well done.
3.2 Kinda smells like a s’more, doesn’t look like one and tastes vaguely like one. Mostly marshmallow, very sweet, the definition of a dessert beer. Tried at Omaha’s Extreme Beerfest with Jess and the parents in 2017.

3.8 Black pour with a thin tan head .... aroma of vanilla, marshmallow, chocolate, roasted malts, graham cracker, cocoa and light coffee .... taste is of vanilla, marshmallow, light graham cracker, cocoa, roasted malts and light coffee .... finish is sweet and roasted with lingering cocoa and marshmallow .... slick and oily mouthfeel ... medium body and the abv is hidden very well .... very sessionable and tasty brew. Loved it
