Omnipollo Hypnopompa Marshmallow Stout

On my way to this iconic brewery with a suitcase full of marshmallows I admittedly questioned my good judgement. However, sipping on a glass of this beer I am utterly happy that the purist in me stayed at home.



Omnipollo Hypnopompa is an imperial stout brewed with almost 100 kgs of marshmallows and Tahitian vanilla beans (the size of cigars). Virtually no carbonation and boiled a bit extra for good measure this is a beer strictly for the stout inclined.



Batch #1 intentionally has no carbonation.
Batch #2 has low carbonationd and cold extracted Hafursa coffee.



Drink now or age for many years.

4.1 Much better than you would imagine a marshmallow stout. Everything here is quite subtle and we'll balanced. Marshmallow and vanilla. Roast, chocolate and caramel. Bittersweet finish. Black oily pour with good head. Can.
3.8 16oz can pours out black topped with a small tan head. Nose is sweet chocolate coffee vanilla cake. Taste is more of the nice sweet chocolate coffee vanilla cake notes.
4.1 Can. Moderate to heavy toasted and molasses for the malt, no noticeable hops, light dough for the yeast, with vanilla, cola, dark ruhm and raw sugar in the background. Head is small, frothy, light brown, with fair but slippery lacing and good legs, and is mostly diminishing. Color is very dark opaque brown. Flavor starts moderately to heavily sweet and lightly acidic, then finishes lightly sweet, acidic and bitter. Palate is full, creamy verging on syrupy, with a soft to lively carbonation and a boozy and sticky finish. Excellent Imperial Stout with both complexity and perfect balance.
4.0 16oz can from Urbandale Hy-Vee, in a Sam Smith pint glass. Aromas of dark-roast coffee, caramel, vanilla, malted milk balls and brown sugar with traces of old wood and smoke. Pours oily black with good carbonation and a thin cover of milk chocolate head. Flavor is sweet, creamy and chocolatey up front with roast and malt gradually taking over on the mid-palate and a long finish that's sweet and milky with the tiniest little flicker of heat as that 11% ABV hits bottom. Easy enough to drink for the style thanks to the vanilla and CO2, with just a trace of sweet stickiness in the back of the throat. Pretty good. Quite possibly the easiest drinking imperial stout in my memory. Cheers Omnipollo!

3.9 Draft pour at GBs bottle shop. Pours nearly pitch black in color and capped by a small tan layer of foam that settles quickly to a thin film. The aroma shows notes of dark chocolate, big roasted coffee, and a touch of vanilla over a dark roasted malt base. There’s a hint of marshmallow in there but this one is all about the roasted coffee. The flavor follows suit with notes of dark chocolate, earthy roasted coffee, and some toasted vanilla up front and backed up by the dark roasted malts and a firm, roasty bitterness on the back end with a hint of marshmallow sweetness. Full bodied and smooth with balanced carbonation that leads to a bitter sweet, roasted coffee, and toasted vanilla on the finish. Solid and enjoyable coffee stout, but I was expecting more marshmallow from the description. The roasted coffee and chocolate malts definitely dominate this one.
4.1 Black oily pour with tan head. Roasted and slightly burnt malts, vanilla, marshmallow on the nose. A little bitter coffee on the palate in addition to the rest. Smooth sipper.
3.9 Draft to taster in a flight at Flipside, from recent notes. Pours dark brown to black in color with a small beige head. The aroma and flavor have roasted malts, dark chocolate and a big shot of marshmallows and vanilla, a hint of dark fruit, and a touch of alcohol to the finish, good.
4.0 Taster at liquor express. Pours black with a khaki head. Leaves some lacing in the glass. Fairly big roast and chocolate notes. Hides it’s booze well. Finished clean.
4.5 Black pour. Strong vanilla aroma and flavor. Vanilla bean sweet finish from all the vanilla. Almost sweet like black licorice.
3.9 Pours black with one finger, tan head. Aroma is marshmallow, vanilla, roast and molasses. Taste is chocolate, brown sugar and marshmallow, moving to vanilla and roast. Finish is marshmallow, vanilla and roast. Very good stout.
3.6 Pours a very dark brown with a beige-taupe head. Dark roasted malt, coffee, and nutty aromas. Thick mouthfeel. Dark roasted malt, cherry, coffee, cola, and cream flavors.
3.9 Black appearance with a light brown head. Aroma of roasted malt, fresh vanilla, mild chocolate and light marshmallow. Similar flavor, rich and moderately sweet with a medium to full body and a smooth finish. Nice.

3.8 At Hopportunities , a self tap brewery. Get a wrist band , scan and pour. A dark chocolate pour with a java head. Nose is deep toasty chocolate malt. Taste is strong alcohol, chocolate and malt with hints of marshmallow. Finishes on the same tasting notes.Nice!
3.8 330ml bottle @ home. Pours an opaque black shade with a small brown head. Nose is largely roasted malt, dark chocolate, and roasted coffee grinds. Flavour is bold roasted malt upfront and then sticky marshmallows. Sticky full bodied, decent carbonation, and a moderate sweetness that's kept down from the roasted bitterness. Interesting, tasty, and smooth despite the heavy bitterness.
3.5 Draught @ Ginger Man (9/13/19). Clear dark brown with ruby red highlights, small foamy beige head, mocha aroma, medium carbonation, sweet mocha-marshmallow taste with bitterness seeping in later, strong alcohol undertones, thin body, long finish. Potent; the alcohol escapes a bit.

4.2 Pitch black, sort of rauch vanilla. Sweet, kinda rich in aroma. No head. I am not sure it is marshmallow in taste. Kinda marshmallow aroma. Good beer, worth.
4.2 Pours jet black with a thin tan head, sweet aroma of burnt caramel, taste to match, touch of burnt coffee at the very end, a great dessert beer that's a smooth 11%, tap.
4.0 1 pint can. Pours black with moderate tan head. Aromas of sweet vanilla, marshmallows, cocoa, chocolate biscuits, and slick roasted malts. Flavors of sweet chocolate, black coffee, toasted marshmallows, and oliy roastd malts. A really nice balance of bitter and sweet with the ABV lighting the mouthfeel without really adding heat. Seems to be a bit of de Molen in this one...
3.5 16 ounce can at sissy’s house. Heavy scent of malt. Black/brown in color. Very little beige head. Taste the malt and some alcohol. Don’t notice the vanilla or marshmallow as advertised. Malted aftertastes. Really strong beer. Very good. Cheers!
4.3 Can from Cask & Flask in San Jose, CA. Aroma is roasty dark coffee, marshmallow and vanilla (seriously delivers on all 3). Taste is rich espresso with creamy vanilla. Not much else to say, extremely drinkable and not at all gimmicky despite the gimmick.

3.8 One dimensional vanilla aroma. Great jet black color. The marshmallows really come out in the flavor but there is enough roast, bitter coffee flavors and booze to keep it from becoming too sweet. Good palate. Overall very enjoyable.

4.3 Bottle. Pours opaque black with small light brown head. Aroma is roasted malt, vanilla, coffee, coconut, Amarone red wine and hints of soap. Taste is medium to very sweet, light to medium bitter and light salty. Body is oily with light fizzy carbonation. Finish is long, very rich, and balanced sweet, bitter and salty with notes of roasted malt, chocolate, soy sauce, espresso, brown syrup and hints of vanilla. Very intense and rich
