Wine makers can’t stand Brettanomyces, most brewers don’t want anything to do with it either. Yet, there’s a group of brewers who might bathe in the stuff given the chance. To them, Brettanomyces represents a departure in the road, the proverbial point where the concrete jungle ends and real wilderness begins. For this journey, we produced a beer with a 100% Brettanomyces fermentation. The idea was sparked by a conversation with Peter Bouckaert of the New Belgium Brewing Company. The notion of a purely wild fermentation came to fruition when Peter stopped by our little brewery to brew this collaborative ale.

This wild yeast ale is made from 2 Row, Flaked Oats, Carapils, and Munich Malts. We added a couple handfuls of German Magnum Hops and let the Brettanomyces Yeast loose. The beer is 6.3% ABV and is served unfiltered. The fermentation produced a ton of fruity esters with Pineapple being the most common in the beer. We have completed this exploration for now, and look forward to reaching this trailhead again where undoubtedly our next journey will begin.

4.4 Golden yellow in colour with an insanely large white head, very fizzy, light lacing. The aroma is very bretty, lots of yeast, lemon citrus, some cheese, hay, light gueuze. The flavour is very musty, lots of apples, the brett is insane, lemons, very funky, earthy. Sour mouthfeel, medium/light body, medium/high bitterness. Finishes sour, acidic with a wonderful bretty bitterness. The bottle had unbelievable carbonation. Touch the bottle and the head overflows. This is amazing, very bretty. The age has turned this into an amazing gueuze like beer. Fantastic stuff. Wow. 750ml bottle obtained in a trade with DarkElf, thanks Stephen. Opened on November 29, 2008. Vintage 2004, Bottle #103.

4.1 Another backlogged rating from the RBSG ’08 Grand Tasting at Pizza Port Carlsbad. Thanks to cquiroga for breaking out this 750ml rarity. 2004 Vintage from what I wrote down at the time. This was a standout Belgian. Pours hazy straw color with a big developing fluffy white head and lots of carbonation. Great nose of lemon citrus, sourdough bread, light bubblegum and fruity pineapple. Sweet flavor with a horsey funk on the back end and medium bitterness. Nice palate with average sourness and a lasting grain note. Great stuff.
4.1 750ml bottle. Hard core Brett aroma and taste. Very effervescent, gushing out upon opening. Murky, yellow-gold color. Some wheaty tastes in there certainly. Nice mouthfeel, sour finish. Thanks to Jeff for sharing this one.
4.1 Thanks to Jeff for this one. Cloudy yellow, very effervescent white head fades quickly. Aroma has light funk, sweet tartness, pineapple, and candy. Flavor is sweet with a tangy bite, pineapple, pears, nicely sweet all around with a pleasant light tartness. Light fizzy body.

Loads of lightly tart grapefruit, citrus, and effervescent breadiness in the aroma; nicely tart and fruity. Lively carbonation. Medium-to-full mouthfeel: grapefruit, citrus, and complex yeastiness; softer tartness than the aroma suggests; complex, dry, and nicely refined brettiness; light acidity overall; a touch muddled, but delicious. Heavy grapefruit presence throughout. Lengthy finish: grapefruit, toasty malts, and very lightly tart citrus.
4.3 Courtesy of Jeffin7. Cloudy golden/peach body with a large white head. The nose cheese, horseblanket, lemon, cotton candy and honey. The flavor is lightly sweet, tart and has a light tannic, pithy bitterness. Tastes of peach, cheese, yogurt, lemon, hay and honey. Medium body is soft and very effervescent.
4.1 Tasted at Cleveland tasting on 8-23-08. Thanks!! Bottle pours gold with a white head. Has a musky aroma. Has a medium body. Taste is really nice. Tart and citrus, lemon, pineapple, apple, and lots of brett on the finish. Overall this is a really nice brew. Crisp and easily drinkable.
4.0 Sampled @ RBSG. Another home run courtesy cquiroga. Cloudy dark straw color, thin off-white head. Moderate musky barnyard funk aroma, but it was quite subdued versus what I anticipated from a 100% Brett fermented beer. Tart citric taste, some sweetness appears, nice dry finish. More tart than the aroma lets on. A real treat.
4.4 Another big thanks to cquiroga for excavating this rarity for the RBSG 08 Grand Tasting. Pours a pale gold with a sticky white head. Lemony gueuze aroma with a big dose of earthy brett funk. Flavor is lemony and cidery with some pineapple sweetness and a dry musty brett finish. Crisp and drinkable.

4.4 ~RBSG ’08~ Bottle at the Grand Tasting. Pours a golden brass color, with a thick well-carbonated white head, and very creamy lacing. Aroma is all brett and wheat, citrus, floral hops, some interesting spices. Flavor is full of apple, wheat, hay, sweet malts, some cider, with a hard dry brett finish. Nice crisp body, very refreshing and smooth, easy to drink. Hope to see this one again some day.
4.1 Another huge thanks to cquiroga for sharing this rare gem! Pours clear gold, with a huge, foamy white head. The brett comes through right away, letting off a nice earthy funk aroma. This, mixed with some crisp malt and some candy sugar, amde a great little nose. The flavor was also very bretty as expected. Smooth and flowing on the palate, the funk and malt combo made a great pair as it mellowed the candy sugar out a bit and just made for an interesting a tasty beverage. Great to be able to try this brew.
4.1 Tasted from bottle at RBSG brought by the man cquiroga. Huge thanks Chris. It’s nice to try such a historical beer. I get the impression this one of the first commercial all-Brett beers. I’ve tried several all-Brett beers, including some homebrews. Including this one, they all have characteristic bubblegum aroma (although brewers call this pineapple aroma, which may be more accurate, but I still stand by my bubblegum descriptor) and low or no sourness, which is an odd thing, because I associate Brett with sour beers. The aroma is muted in Mo Betta Bretta relative to other all-Brett beers I’ve tried. It’s also much better, because of the mellowness and the lean toward sweetness than other similar beers. Excellent. 4.1-4.2
4.1 Bottle @ RBSG Grand tasting. This was very yummy but I didn’t get a chance to write quite as much as I expected.
3.6 Thanks to Kan for this retired bottle. Pours a golden hue with a decent head and poor lacing. Some decent esters and funk in the aroma. Flavours of candied fruit and pale malt with some oats in for good measure. Musty finish with the horse-blanket nature sticking around the palate. Interesting.
3.5 750ml bottle thanks to cquiroga..... clear transparent light orange brown pour with a thin bubbly film of white head.... aroma of musty cobwebs and apple cider with other citrus likes notes, primarily pineapple.... pineapple and citric sweetness came forth in flavor along with a biting carbonation where the brett really took over. very dry but still drinkable.
4.2 Bottle thanks to pantanap for this one. Light yellow and cloudy with fizzy white long lasting head. Aroma is very bretty with light citrus and light sweetness. Flavor is light brett with candy suar, sweet, yeast spice and lemon. Medium body and acidic. Very nice.
3.6 Thanks to Kan for this one as well! Poured clear brighter golden with a loose-bubbled cap of white head. The aroma picked up sweet banana and clove notes with a solid dose of foot-like funk.. lighter fruity and pale malt backing.. great showcase of the Brett. The flavor found sweeter apricot and funky Brett notes for most of the character.. pale malts and lighter fruit again behind.. rather quick, dusty finish with more of the funk. Very active carbonation on the palate made it difficult to swallow (physically.. this was tasty).. crisp finish with refreshing sourness. Very good stuff!
3.5 750ml bottle. pours gold with white head. nose is bretty, lemon, vanilla. flavor is extremely bretty, lively and crisp carbonation. lemony, a bit chemically, slightly sweet going down. tastes a bit oxidized. the brett carbonation really took off.

4.7 Bottle 507 courtesy of Dark Elf. Pours gold with a nice white head. Smells of the familiar horseblanket/sweat thing everyone refers to with some nice tarte funkiness and hints of sweet malt present. Some very subtle hoppy hints popping in from time to time. Taste is very tarte and sour with lots of lambicy qualities. Some sugary hints emerge as the beer warms. Mouthfeel is slightly peppery with heavy lemon tartness. Finish is very tare in the best kind of way. This beer borders on brilliance when it comes to American interpretations of Belgian wild beers.
3.6 Bottle. Cloudy yellow with a soapy white head. The aroma has a lot of fruity cereal, acid, tangerines, and pineapple sweetness. Very effervescent really with sweet pear flavours and some mild barnyard notes. It’s pretty good though not as deep as I was expecting it to be. Sampled at the Pizza Port 12 Hour Belgian Beer Party from one of Chris Q.’s random bottles on March 24, 2007.
4.1 Pour from a 750mL. Aroma starts as a unique banana skin with fragrant herbal tartness. Orange-gold pour, with a bubbling foam of white. Flavor has a crisp pale fruit composition, harboring floral starfruit, passionfruit, old pineapple juice and some peculiar coconut juices. Bretty the whole way through (duh). Smacks nicely dry and clean with some musty Pakistani spices. Very unique. Can’t wait to see this as a Lost Abbey. Thanks Chris!
4.1 From a 750mL Bottle. Slightly hazy, goldenrod colored pour with a medium layer of thick, foamy ivory head. Beautiful nose thats brimming with dry fruity brett characters. A pleasant lactic tang creates a soothing dryness impression thats supported by some well attenuated pinot grigio. Notes of dried pineapple and banana chips add some light fruity dimensions on top of a solid yeasty light bready malt base. Great balance and composition between the funky brett, light fruit, and bready malt characters. Light bodied, gently carbonated mouthfeel that rolls softly across the tongue. Not overly tart, but the brett presence has a great instant refreshing dryness on the palate. Flavors of bartlet pear skins and grassy hops add some depth to the funk fest. The flavors are quite satisfying, but aren’t nearly as intense as the aroma, which is really the strong point of this brew. The palate grows a bit thin on the back end, with the brett and fruit characters disappearing a little quickly off the palate, perhaps from the fatigue of age. Still, a highly enjoyable beer. 4.1 Bottle #113 from cquiroga...hazy, murky orange body...musty, dusty, sour and acrid aroma (agreed with silphium in its resemblence to hydrochloric acid)...flavor is very similar to the aroma..extremely musty, and biting (heavy pineapple and banana present)....instant acid-reflux, but oh well, it was worth it
4.0 Bottle (hand-labeled #113) from cquiroga, sampled with badnewsbeers. Appearance of peach or apricot pulp- murky to the extreme. Medium/thick off-white head. Strong pineapple juice aroma with huge acidity. Reminds me of stomach acid or bile but in a good way. Tart pineapple juice body, sour, fruity, with banana flavors playing off the pineapple. A funky, musty tropical fruit cocktail. Excellent complexity. This beer was great, even though it reminded me of hugging porcelain, which I did the next morning.
3.9 Thanks to Dark Elf for this one. Pours out a very nice cloudy golden color with a very active bubbly fluffy white head. The aroma tells of brett, pineapple and some fruits. The taste is very nice, some sourness balanced by sweet pineapple, apple, pear and some other spice notes with a touch of lemon and maybe some hop here and there. Bret on the finish. Great beer and a very unique one, thumbs up to Pizza Port once again
