Pretty Things Babayaga

Our winter seasonal beer, Babayaga is a 7% export-strength woodland stout. We smoked some malt with rosemary, and added a few other embellishments. This beer is inspired by Eastern European folklore, by woodland, streams, cold dark nights and woodsmoke. This was brewed at Westport, MA by Dann and Martha with help from our friends Adam and Br. Brian. The mash contained over 4,000 lb of malt (the biggest beer we’ve done) and there were also rye, oats and wheat in the grist. Fermented with a mix of English and Belgian yeast strains.

3.6 Color caoba muy oscuro, casi negro con espuma beige densa. Aroma dulce y tostado, azúcar moreno ligeramente afrutado, plátano. En boca es dulce, nuevamente se notan los matices de azúcar moreno, los toques dulces y tostados. Muy rica.
3.6 65cl bottle. Courtesy of Andrés Lúpulo. Pours dark with some nice tan head. Some head retention and lacing. Roasty, liquorice, spicy aromas. Medium body, silky texture. soft carbonation. Taste is roasty, spicy, some dry notes. Quite enjoyable.
4.0 Bottle: A very dark brown color with a mountain of brown head that fades away slowly and leaves sticky sheet lacing. Nose is relatively muted at first, but comes through stronger as it warms. Roast and dark chocolate are significant with just slight hints of espresso. The same carries on in the flavor by way of an outstandingly silky and rich mouthful. Delicate, but stout. A simple interpretation of the style done with great care and attention to detail. Very well done.
4.1 Enjoyed on 12/26/2013. This is a very smooth stout. Pours on the lighter side of most stouts that I've had. This is not too flavorful but is a great session stout. Recommend by a fire or with a steak
3.7 Black colour with a foamy beige head with good duration. Aroma has notes of roasted malts, black chocolate and rye. Flavor is roasted, black coffee, ripe fruit and licorice notes. The final is mild bittery with notes of roasted malts on palate. Creamy, dense and smooth on palate.
3.6 Nice roasty dark stout. A little smokey hint. Dark dark brown clear color and some bitterness after the malt.
3.4 Sampled at an ESBLS tasting. It poured a deep dark red with a white head. The aroma was of dark chocolate, dark ripe fruit notes, some lemon, hints of cocoa and mild herbs. The taste was of mild dark malts, ripe dark fruits, hints of spice notes and some wood. Good stuff.
3.7 Solid stout. 10/2011 bottled and drank 2 years later. Dark pour Malt and coffee in aroma. Med palate. Taste is like aroma some coffee bitterness lingers
3.7 Almost Smokey nose, poured from draft @ Lord Hobo, Cambridge. No lacing, little foam retention, mouth feel is reminiscent of English bitter hops and a Porter.
3.5 Bottle share thanks to droofus. Coffe and chocolate in the nose. Flavor is a mix of dark cocoa and chocolate. Not much roast in the flavor. Overall pretty decent but kinda flat and one dimensional.
3.5 Pours a deep dark blackish color. Malty, grainy, roasty, sweet chocolate aroma. Roasty, chocolate, grainy flavor as well. Medium light body, a little thin.
3.8 Sampled at Mass Brewers Fest @ Julio’s. Pours dark brown with some rusty edges. Bubbly tan head. Hint of smoke on the aroma with charred malt and coffee grounds. Molasses and dark chocolate give a bitter, yet sweet flavor with a bit of Belgian yeast. Palate is full & creamy, yet kind of dry. Nice.
3.7 Pours out jet black with a big frothy tan head. Lightly smoky and malty aromas. Flavor is super smooth. Lots of layers of sweet licorice malts, herbs and smoke. Expertly balanced. Lingering smoky sweetness.
3.8 Poured a thin tan head on a pitch black body. The aroma is molasses, black licorice, coffee and roasted malt. Great blend. Taste is licorice sweet at first, warm alcohol and roasted malt middle, finishes with a mild lemon bitterness. Nice profile. The texture is thicker with a good fizz and overall moderate carbonation. Nicely done.
3.7 Bottled. Dark brown pour with a small tan head and good lacing. Roast aromas, caramel, and a little smoke. Malty flavor with a long finish and good body.

3.7 22 ounce bottle. Thanks Summer Secret Santa! Pours black with a nice tan head. Aroma of malt, chocolate, and fruit. Taste is roasted malt, chocolate, dark fruit, caramel, and a bit of smoke. Nice.
2.7 Bottle as shown. Pours a dark brown with small tan head. Aroma of roast and chocolate. Thin mouthfeel with sweet malt and sweet finish. Decent.
3.4 Bottle. Color dark red/brown with small brown head. Aroma roasted, caramel, malt, chocolate. Taste sweet, chocolate, roasted.
3.9 Bottle. Pours a near black color moderate light tan head. Nose is somewhat roasty with a hint of some milkiness underneath. Taste is a tad roasty and very smooth with a nice creaminess to the feel.
3.8 Botella. Color negro profundo con corona beige. Aroma café, regaliz y licor. En boca muy equilibrada roasted y café con alcohol. Postgusto dulce y cafetoso.
2.9 30th July 2012 Opaque black - brown beer, tidy tan head. Nose of minerally dark malt with a little bubblegum. Palate is smooth and slightly dry. Smooth darkj malt, whisper of coffee. Some spicy bubblegum, a bit too much so. Mild minerals. Semi dry finish. Okay.
4.4 Bottle from Debucas. Pours out jet black with a big frothy tan head. Lightly smoky and malty aromas. Flavor is super smooth. Lots of layers of sweet licorice malts, herbs and smoke. Expertly balanced. Lingering smoky sweetness.
3.6 Medium brown head. Opaque black body. Earthy roasty chocolatey aroma with toffee notes. Sweet alcoholic chocolate taste with licorice and toffee notes. Full-bodied. Mild, mealy mouthfeel. Dryish cocoa, licorice, and toffee aftertaste with roasty alcoholic notes. Spicy herbal lavender, too. Lovely. Very harmonic and drinkable. (0.65l bottle, shared by gr0ve.)
4.0 22oz bottled october 2011, consumed april 2012. Received this bottle as a groomsman gift from my soon to be brother in law. I was pretty stoked to try this, but decided to cellar it a bit, then forgot about it so it cellared probably 6 months longer than I intended. aroma is sweet with maybe a hint of smoke. I spy a hint of ruby in the darkness of this stout.. taste is sweet and smokey. I love how any roast/coffee notes have fallen off almost completely. it tastes like a black beer with out tasting like coffee. palate is slick and smooth. I think the palate matches up to the complexity of the beers other elements nonetheless. overall an excellent stout, its a bit weird but very enjoyable. I wish i had it fresher, so i could compare to this cellared version.
3.9 Bottle 650 ml from erzbierschof.ch. In its classic ebony dress, it’s a creamy Stout, a little smoked, torrefied with aromas of bitter chocolate, mocha, licorice, dark fruits and notes of dry fruits, yeast, spices and herbs. Already trend to Abt. A taste full and strong, not too sweet. Earthy flavors, smoked and dry torrefied dragging shall end a moment full of taste
3.7 From a 0.65 L bottle. Rocky tanned head. Body is opaque, near black. Cocoa, toasted dark malts and dark tinned fruits to the nose. Hint of something herbal and floral. Good malt body, with a fine sweetness and a predominant licorice flavor. Some dark fruits too, and hint of ash. Light, sparkling mouthfeel. Finishes dry. A complex and balanced beer. Good, indeed.
3.2 Bomber 2011 vintage poured a clear dark reddish brown with a lasting tan head. Aromas of roasted malt, cola and cocoa. Palate was medium bodied and smooth with a dry finish. Flavors of roasted malt, cola, cocoa and a hint of coffee with a smooth dry lingering cocoa finish.
3.5 Black color with lasting tan sheen. Black licorice, table sugar, dark roast aromas. medium body, average carbonation. Sweet black licorice flavors with dark coffee, dark fruits, candi sugar---sweet stout.
4.0 Tasted from the bottle, 13/03/2013. Aroma is quite silky smooth, lovely vanilla and a bit woody and ashy, just amazing. Taste totally compliments the aroma, not overly intense or hammering, just perfect balance. Recommended.
