St. Sylester’s Flander’s Winter Ale is a rich Hearty winter ale top fermented in the classic tradition. In1918, Remy Ricour took over the old Brasserie in St. Sylestre in the heart of French Flanders. His dream was to produce authentc brews like the Trappist ales brewed at the nearby Monastery of Mont de Cats before the turn of the Century. Today, Serge Ricour, continuesthe third generation family tradition of brewing had crafted, full flavored, top fermented ales. In Flanders, it is traditional to make a hearty brew for Noel. At St. Sylvestre, hops are harvested in the fields surrounding the village. The "Malterie", 20 kM away, supplies a malt, with and appropriate Munich roast. The local hops plus the robust malt, produce a winter al with rich warm brown tones. While originally brewed only for Noel, it is now drunk throughout the winter season until the first brew of spring arrives.

3.3 Bouteille 750ml sous le nom de "Brassin d’Hiver". Nez de levures fruitées (léger de fruits rouges, traces d’agrumes et de pommes), de malt sucré, léger de houblon hebreux et de pain avec quelques notes de caramel ainsi que quelques traces d’épices et d’alcool. Moyennement ronde en bouche et modérément pétillante avec une texture légèrement huileuse. Goût de levures fruitées aux petites notes acides (léger de pommes rouges, notes de cerises, traces d’agrumes) avec des notes épicées lors de l’entrée en bouche suivi d’un goût malté sucré et légèrement terreux avec des notes de caramel et de pain puis en finale l’on retrouve une légère amertume de houblon hebreux avec des notes d’alcool réchauffantes. Post-goût moyen, légèrement amer d’alcool et de houblon herbeux avec un léger goût de levures fruitées. (notes de 2006)

3.3 Bottle, 75cl corked. As Brassin D’Hiver. A big, off-white head. forms over an almost clear dark golden body. Some lacings left. The aroma is rather spiced and herbal, with toffee-ish maltyness and pale malts. A touch of fruits too. The flavor is pretty much the same, sort of typical BdG, maybe a bit too fruity though. Full body, quite dry. Lasting finish with biscuits, dried fruits and caramel. A quite pleasant one. 130222

3.2 750 ml bottle (aged almost 2 years), clearly labeled Brassin d’Hiver (and not Bière de Noël...). Pours a clear reddish amber with a resilient white head. Smell is malt, cereals, chocolate. Flavor is very malty, chocolate and soft caramel. Very little hops and bitterness, subtle finish. Lingering notes of chocolate and caramel. Medium body, soft, sticky mouthfeel. Average carbonation. Good!

Les saveurs de sucre cuit, de crème brûlée et de fruits tropicaux, annoncées au nez, se manifestent. Une belle bière plutôt ronde, qui cache bien son alcool. Une des meilleures françaises sur le marché québécois.
3.2 Sampled @ PINT Winterbierfestival Gouda 2013. [as Brassin d’Hiver] Clear orange to brown color, small light beige head. Smell malts, some sweetness, lightly alcohol. Taste malts, some sweetness, lightly yeast and herbs or spices. A bit thin texture, ok body, low to medium carbonation.
3.8 750ml bottle as St. Sylvestre Brassin d’Hiver aged one year in my cellar. Pours with a large creamy head, red/amber colour. Aroma is boozy, nutty, sweet and fruity. Taste has those elements plus some herbal hops. Body is light and crisp, but slightly flat. Overall, not quite as amazing as the Gavroche, but still enjoyable.
3.6 Bottle. Clear golden color, tan head. Aroma of peppery spiced raw bread dough. Taste is fruity, light licorice, caramel.
3.8 Bottle: Medium sized airy and quick disappearing ashy white head on top of a clear amber colored beer. Smell raisin, grains, hint of butter, butterscotch, buttery malts. Taste grains, chalk, raisin, some malts, yeast, butterscotch, herbs and some yeast. Aftertaste is grainy, some chalky raisin, floral and malts. Low carbo, soft light blown mouthfeel, good medium body and a light creamy texture. For a Biere de Garde it’s pretty good!
3.4 Glowing red body with lively carbonation, giving a big stable frothy beige head. Cookies, spices, raisins - all good but I had liked some fuller, sweeter malts as well. Quite a clean body, fruit biscuit taste, nice bitterness but also a bit of alcohol that’s clean instead of giving a warmth. Nice autumn beer, but not quite the perfect winter warmer. 3.4 750ml corked bottle labelled as Brassin D’Hiver pours a brownish amber color with a 2 finger off-white head that settles fairly quickly leaving some nice lacing on the glass. Aroma is mild with caramel and light fruits with some yeasty notes. Taste is caramel malty sweetness with a herbal hop bitterness and dry fruitiness with hints of yeast. Medium bodied with abundant carbonation leaving a nice tickle on the tongue. Classified as a brown beer on the bottle, this beer is quite tasty and definitely worth trying.

3.7 Deep amber pour with a tight off-white head. The aroma is a little bit chewy and lightly caramelly. Some nice fruitiness along with a rich cooked plum fruitiness. There’s a nice stewed fruit flavour along with a hint of spice as well. There is a little bit of soft pepper. Not a whole lot of rusticity but it does have an aged character that I enjoy.

A little subdued on the nose with notes of spice and brown sugar. Much bigger on the palate with lots of maltiness and spice but still nothing really stands out.

3.3 Originally rated June 2006. Got this one under the name Brassin d’Hiver, at 8% ABV with a best before date written on back label as 02.06.07. Again, just like their 3 Monts, a hard time taking the metal tab around the cork, off. After a slow pour, a humongous, cream, off-white head is created. Long lasting, leaving very nice spider webing lace. Copper-orange colour with lots, and I say lots of carbonation. The nose is warming with alcohol and Belgian yeast. Also found, are spices, mild caramel and apples. The mouthfeel is watery with slight tart in the finish. There is a bit of sourness in the taste. The apples and caramel are also present. Dry finish with metallic notes. Quite smooth with no burn. Pleasant winter warmer.
