Side Project Saison du Blé

Side Project Saison du Blé

Saison du Blé is the harmony of a fluffy wheat Saison with Brettanomyces and Lactobacillus. The wheat balances a very dry body with a creamy, billowy mouthfeel and our house Saison yeast adds complexity and acidity. This farmhouse ale was aged in Missouri oak barrels for several months.

3.8 September 2017 - Keg at Beavertown Extravaganza. As 'Side Project Saison du Blé'. Translucent golden yellow, very little head. Aroma is quite syrupy – mostly golden syrup on pancakes, pleasant golden syrup and maple syrup. Body is smooth with tingly carbonation. Taste is thinner than the aroma, sugary, little straw, raspy dryness. Good. (8-4-7-3-16=3.8)
4.0 Bottle. Aroma of coriander seeds, light malt, citrus, light funk. Hazy golden with white head. Taste is light+ sour, dry and more citrus funk. Light body, dry feel and citrus funk finish.
4.5 (En fût à la source - Batch #7): Belle texture de blé enrichi, assaut vineux gras et complexe, sulfure et bois épicé sur immensité de fruits à noyaux. Brillant.
4.0 On tap. Golden colour with white head. Grain aroma. Grain, sweet, fruit and wood taste. Medium body.
3.9 (Sample @ CBC 2016 Red Session, Copenhagen) Pours clear medium gold with a white head. Aroma of wheat cracker, white wine, edgy sulphurous funk, fairly balanced, a funky wet wood character floats around above everything. Flavours of white wine, wheat cracker, moderately funky, cheesy, fairly bright and zippy, but with a relatively expansive grain profile, lightly fruity, somewhat grassy. Medium bodied, a bit creamy feeling, soft carbonation. This is quite solid but it doesn't feel as involved or focused as the best SARA or HF saisons, perhaps a matter of personal preference.
3.6 Keg at Beavertown Extravaganza. It pours yellow – gold with a pretty small white head. The aroma is bready, cereal, must, funk, hay, stone fruits and oak. The taste is crisp, dry, tart, decent mouth – pucker, acidic bite, funk, must, white grape, lemon, gooseberry, vinous vibes and some sherbet through the finish. Medium body and fine carbonation. Pretty drinkable stuff, but it didn’t wow me. Perhaps lacking in a bit of depth.
4.2 Initial pour is clear but turns unclear as yeast is introduced to the mix. Let’s call it semi clear with a very small head. Aroma is loaded with wine barrel notes, tart white grape, bretty fruit, oak shavings. Taste is sharp, cutruc and with a good amount of saison yeast. Gets funky and a little peppery. Flavours are lasting on the palate, mouthwatering sour notes. Endlessly enjoyable.
4.7 Tart woody aroma, cucumber, caramel, perfume, citrus, some floral notes. Tart vinous taste, quite woody, hay, grapes, some floral notes. Very good..
