We are brewing a classic Bavarian-Style Dunkle Weisse (Dark Wheat) beer. Ayinger’s wheat beers are among the best produced anywhere in the world. We decided to bring together our two approaches to the style and create an all-new, rich, and malty version of the style. It’s brewed in our open fermenter to allow the authentic Bavarian yeast strain to shine, with complex aromas of banana bread, caramel malt and clove.

3.0 Medium brown, light wheaty, has a light fruitiness, and a mellow wheaty note.
3.0 Bottle. Deep brown. Strong white head. Sherry flavor, slightly banana. Plus syrup and coriander aroma. Quite alcoholic and sweetness derived from molt. Medium-full.
3.5 Bottle. Mid brown with a pale beige head that fades quickly from an inch. Aroma of spiced and chocolaty briochish dough with cloves and light vanilla/ banana notes. Just enough body, carbonation could be a touch higher for me. Just mouthfilling - hints of rich malt but swiggable. Sticky breadcrusts and a little chocolate with spices and moderate bitterness building towards the end. Top end for a style I'm yet to love.
3.9 Deep umber color with only a little haze. Smaller tight, dry bone colored head. Aromas of toasted malt, wheat and mild cloves and dark fruit. Sweet wheat and barley flavors in the front. Spices work their way into the middle with cloves and wintergreen. Some bits of banana join in. Smooth, fairly thick feel, with a crisp effervescence that helps it from getting cloying. Finish has some more dry toasted malt. A very good traditional dunkle weisse!

3.7 12oz bottle from the Beer Camp box set. Hazy amber brown with a full off-white head. Hay, grain, roasted malt and toffee, caramel, banana and spices. Medium bodied with lively carbonation. Excellent.

3.7 Pours cloudy brown with a tan head aroma of bread, banana, cloves and toasted malt. Taste is medium sweet and light bitter.
3.8 Bottle in CO. Pours mostly clear reddish brown with a foamy, light tan head. Really nice stuff overall, lots of ripening berries, some creamy toffee, bready malts, a little toast. Medium bodied with massaging carbonation. Sweet finish, slightly sticky, with more berries, bready malts, soft toffee. Really fun stuff.
3.7 Sample during the "Collaboration Beers On Deck 2!" event on 08/13/2017. Cloudy brown color with a medium light beige head that recedes steadily to an outer ring. Partial rings of lace. Aroma of fruity yeast, malt and spice. Light-bodied with flavors of caramel malt, wheat, clove and fruit. The finish is fruity with a malty aftertaste. Above average overall.
2.9 Deep dark brown coloured body with a hazy glow and a nice, three centimetre tall off-white and tan head. Aroma of crisp bread, a lot of yeast, some bananas, cloves, earth, wheat and grass with a moderate amount of sugars around, mostly from caramelised elements, but some fruits and caster sugar there too. Medium-bodied; Assertive yeastie and earthy flavours with a big dose of grain and bread, some light caramelised sugars, but much more of an earthy and pungent flavour that has some bitterness from the alcohol, earth and especially the yeast coming through near the end. Aftertaste is much more deep, breadie and yeastie than I expected, even for a 'real' German beer. Overall, a good/decent beer for sure, but i'm not quite sure what everyone is so worked up about and why this is in the top 1% of the style! Good to sample, but i'd take most other dunkles in Bavaria over this one...I sampled this stubby twelve ounce bottle purchased from Whole Foods in Fair Lakes (Fairfax), Virginia on 12-August-2017 for US$25,99/twelve pack, sampled at home in Washington on 15-September-2017.
3.3 Bottle from the box set. Malty chocolate/cocoa nose, clove and banana, caramel. Cloudy orange-brown with a fine head. Estery, chocolate, cloves. Bready, yeasty. Some cherry or grape which I don't want. Ok. Expected more.
3.5 A steady pour produces a one-finger thick, amber-stained, tan colored head. The beer is a deep brown color that shows a concentrated amber / brown, slightly hazy hue when held up to the light. The nose has soft notes of clove, perhaps a touch of banana, and a bright fruitiness to it up front, but the finish is aromatic with notes of toasted nuts, browned whole grain toast, and some roasted, not quite burnt notes. This has a nicely chewy body, a viscosity that lingers just a bit on the tongue, and a prickly, medium carbonation that helps to move things along. Weizen flavors of clove linger through to the long finish, with banana flavor notes here as well. A bit of tart and wheat like flavors, soft caramelized grain, and a touch of toasted, nutty, brown grain flavors add to the complexity of the beer. This is a nicely done Dunkel Weiss, the aroma is especially nice as it show cases the grain and Weizen yeast character quite well together.
3.3 Bottle shared by Jack, thanks! Pours a hazy amber brown with a near white head that dissipates nearly completely. Aroma has a good amount of bread with some sweet grains and a bit of straw. Flavor has a good amount of bread with a light sweetness and straw.

3.5 Bottle from Wegman's Malvern. Pours brown with a khaki head. Leaves some lacing in the glass. Nice blend of banana and caramel malt on the nose and tongue. Finished clean. Solid.
3.3 Poured from a 12 oz bottle. Aroma is very malt forward with nice toasted bread, nutty malt notes with some lighter dark caramel and toffee notes. Medium high esters with banana being most prevalent and some lighter clove phenolic notes. Pours a dark brown color with some burnt amber hues on the edges and a medium sized, fairly thick, tan head that slowly recedes to a thin film that lingers. Flavor has a light sweetness to it, but a fairly strong malt profile. Lots of toasted bread, nuts, dark caramel and toffee. Moderately strong esters of banana with some lighter clove phenolic notes. Hints of raisin and plum as well. Light alcohol spice. Mouthfeel is medium bodied with medium high carbonation. Low astringency and low alcohol warmth. Overall, a nice beer, for the style, but I really don't like those banana esters in darker beers (I also strongly dislike banana bread).

3.8 It pours cloudy brown with a tan head. Head retention is moderately low. It has a bready aromas for the first impression. There are also moderate aromas of banana and caramel. There is also a clove impression that provides moderate spiciness. The flavors are bready with a mixture of banana and clove. There is also a moderately low wheat flavor and low amounts of fruity esters. It has a moderate feel to it with a low level of bitterness. Overall, It has a nice balance between the banana, clove, and bready with other flavors and aromas being in nice support.

3.1 Can sample at a tasting at troubles’ place. Thanks troubles. Murky amber-brown. Faint caramel, sugar, malt, faint dried fruit and apricot aroma. A little tarty, fruity, apricot and banana taste. Medium-to-full body, fizzy, fruity banana finish.
3.7 Clear deep brown with a thin light tan head that dissipates pretty quickly. Full nose of cocoa and roasted wheat, a touch of clove and light banana bread and a hint of cafe. Full flavor with a pop of carbonation, filling in with dark wheat malt, light clove and light cocoa, and a mellow finish. Pretty nice.
4.1 Bottle. Banana bread aroma with notes of caramel malt, clove and some wheat. Pours dark caramel colored with a thin off white head that has little retention and or lacing. Starts with nice banana bread and wheat flavors. Finishes smooth and sticky sweet with caramel malt and some clove flavors in there as well. Really good dunkle.
3.7 12 ounce bottle. Cloudy, medium brown color. Fluffy beige head. Sweet toasted wheat malt nose. Notes for banana and cloves. Flavor follows nose. Notes of caramel, vanilla and cocoa. Quite good.
3.2 Pours a murky brown from the bottle worth bubbly tan head that leaves moderate lace. Aroma of typical German wheat esters and a hint of chocolate and toffee. Taste follows, clean easy, but pretty unexciting. It’s to style, but just meh.
