La stout impériale russe St-Ambroise est un hommage québécois aux stouts impériales anglaises de la fin du XVIieme siècle, qui étaient brassées pour la cour de l’impératrice russe Catherine II la Grande.



Faite d’un mélange de malts d’orge, la Stout impériale russe St-Ambroise est infusée aux houblons Cascade, Goldings et Willamette, ce qui lui donne un caractère houblonné remarquable avec une finale moelleuse. Brassée avec du bois vieilli dans le bourbon, cette ale corsée se distingue par son riche arôme fumé aux accents de vanille, d’expresso et de chocolat.



Servir la Stout impériale russe St-Ambroise entre 13°C et 15°C, de préférence dans un verre à porto ou un ballon à brandy. Comme cette bière se bonifie avec le temps, il est recommandé de la conserver dans un lieu frais et sombre durant quelques années.



St-Ambroise Russian Imperial Stout is Quebec’s tribute to the late 1700’s English Imperial Stouts, brewed for the Russian courts of Catherine the Great.


Made from a blend of barley malts, St-Ambroise Russian Imperial Stout is infused with Cascade, Goldings and Willamette hops, resulting in an outstanding hop-character with a smooth finish. Bourbon wood-aged, this full-bodied ale has a rich, smoky aroma with hints of vanilla, expresso and chocolate.



Serve St-Ambroise Russian Imperial Stout between 13°C and 15°C, preferably in a port glass or a brandy snifter. This stout will improve with age for a number of years. Store in a cool, dark place.

4.0 Cellared since 2013. Pitch black with grey head. I get coffee, chocolate, vanilla. It’s also a little boozy. But it’s also extremely smooth and creamy.
4.0 Appearance: opaque unrelieved black with two fingers of creamy dark brown head, good retention and moderate lacing. (4/5) Aroma: toasty malt, boozy dark fruit, chocolate, marshmallow, leather and tobacco, oak, bourbon, vanilla. (8/10) Taste: moderate-high sweet, high bitter. (8/10) Full viscous body, moderate-soft carbonation, lingering bitter and warming finish verging on astringent. (4/5) Considering I’ve now collected four different vintages of this one, I figured it was time to try it new, just to establish a baseline. I’m glad I did: I’m not disappointed by it, as such, but I feel like there’s room for improvement, and I suspect ageing might accomplish some of that improvement. As it stands now, as a young RIS, it’s definitely hot, with some edges that I think (hope?) ageing might smooth. In particular, it feels to me like both the alcohol heat and the slight astringent thinning in the finish could stand to mellow. Very good, but I have high hopes that it will exceed that some day. I’d recommend buying at least two, with the intention of ageing one, but you won’t be disappointed by trying it fresh, either. (16/20)
3.5 12oz bottle shared with Julien. 2013 version. Pours jet black with a light foamy mocha head. Smells of dark fruits, berries, a bit of cocoa and roasted coffee and malts. Roasty flavor, slight vanilla and cocoa, some boozy and way too much fruits. Good mouthfeel, seems promising but the flavor just doesn’t pull through. Disappointed in this one but still enjoyed it. The 2015 is MUCH better.
3.9 2013 vintage. Chocolate and marshmallow aromas, sweet chocolate and smoky tastes. Medium to high-bodied beer. Really nice beer made by an underrated canadian brewery. Rating #70
4.2 341ml bottle from Viti Liquor Store DT. Vintage 2013. Pours an opaque dark brown with a dark brown head. Aroma is chocolate, leather, caramel, marshmallow. Taste is slightly sweet, loads of chocolate, burnt malt bitterness, slightly boozy bourbon notes. Slightly sour, burnt malt aftertaste. Amazing beer.
3.7 Les notes sont très axées sur le chêne, autrement elles sont assez classiques au style. C’est très rond et agréable en bouche comme liquide. Une bière forte, qui a du punch, mais qui manque légèrement de folie, à mon avis. Au bout du compte, c’est plutôt bien, particulièrement pour quelque chose qui se trouve relativement facilement!

4.2 Apparence : Noire opaque, léger col brun très foncé sans grande rétention laissant une légère dentelle. Carbonatation semble plutôt douce. Nez : Torréfaction, chocolat vanillé, notes du bourbon. Intensité tout de même élevée. Goût : Malt torréfié avec un côté cendré en entrée, vanille et léger chocolat noir qui s’y mêlent par la suite, finale marquée par une amertume brûlée, boisée. En se réchauffant, le café et le chocolat prennent plus de place aux dépens de la torréfaction. Sensation : Soyeuse, assez dense, longue finale en amertume moyenne, mais bien présente. Effervescence plutôt faible. Chaleur moyenne en gorge. Bref : Excellente bière, ni trop sucrée, ni trop amère, rien d’excessif; tout est dans l’équilibre, mais aussi dans l’intensité. La sensation en bouche se démarque vraiment. À noter qu’elle s’exprime réellement lorsqu’elle se réchauffe. Plus froide, elle est quelconque. À la température du cellier, elle dévoile son caractère lui permettant de se classer parmi les excellentes Imperial Stouts.

Served into a snifter, ABV 9.2% Thick pour, jet black coloured body, with a good sized and thick dark brown head, with very good retention. Aroma of liquorice, roasted malts, faint smokey character, vanilla, alcohol after a deep sniff. Taste also of liquorice, roasted malts, coal, dark chocolate on the finish, vanilla, hints of hops, olive pit, alcohol. Medium thick body with good carbonation, sticky palate. Very good.
4.2 Robe noire complètement opaque avec une belle mousse moka. Saveurs de bourbon, de bois brulé, de mélasse, de vanille et de chocolat noir. Corps moyen. Excellente.
4.3 Hot diggity damn this stuff is good. Tried the 2013 version last night, 2014 tonight. Both are phenomenally good, and both have aged very well. Jet black motor oil pour with a small, dark brown cap. The 2013 version seemed a touch smokier/toastier, heavier on the licorice. 2014 seems more chocolaty, but both are pretty much the same. Burnt toast, licorice, chocolate, coffee, oak, vanilla/bourbon, dark caramel, this stuff hits all the right IS notes - this stuff is smoother than a barbershop shave. Sweet syrupy malt, velvety, creamy texture, lingering burnt grain bitterness on the finish. Did I say this stuff was smooth? Because good god it’s smooth. There’s a bit of warmth from the booze but otherwise it’s dangerously well hidden. I have another couple bottles aging but like a horny teenager seeing his first pair of boobs on prom night, I’m not sure I’ll be able to keep my hands off them. Good god what is with the similes lately. I’m sorry Mr. Chandler.

3.6 Quite the real deal. Pours an impenetrable and soupy dark dark brown and no head. Dark bitter chocolate and roast on the nose and very similar in the mouth. Good length and low fizz lets the flavours cut through easily. Looking very good at 5 years of age and should go another 2 to 3 without too much trouble.

4.1 2013 bottle. Black pour with thin brown head, leaves a good lace on the glass. Exceptionally smooth, rich malty flavour, smoked meat smell, long roasted finish. Easy to drink somehow, awesome!

Sweet flavour of roasted malt, dark chocolate, espresso, soya sauce, peat, oak and a hint of vanilla with a dry, bitter, bourbon finish. Full body with a creamy, smooth, oily texture and soft carbonation. Excellent, probably the best beer they make.

4.0 Bottle. Nearly black pour, thick with a brown head. Aroma is dark chocolate and raisin, touch of anise. Taste is chocolate, fairly bitter, hints of raisin and spice. Lots going on, quite nice.
4.2 341 mL bottle. Black pour thin dark tan head. Heavy heavy roast aroma, dark chocolate, espresso. Thick body, a real sipper. Alcohol comes through a bit. Doesn’t get much darker or heavier.

3.8 Black color with inch thick beige head. Aroma is vanilla, dark chocolate, coffee, fantastic. Taste is similar, but not thick enough for this beer. Bitter finish. Still good stuff.
2.9 11.2 ounce bottle purchased in Vancouver. Aroma is a bit ashy, some anise and licorice. Not much else. Inky dark brown/black body with a small virtually non-existent tan head. Starts with lots of oaked woodiness. Super woody. Has some anise and ashiness in the middle. Finishes with a bit of astringency. Kind of harsh.

4.0 341 cl bottle. Thanks Timo A! Pours pitch black color with a small beige head. Aroma has distinct bourbon in it, dark chocolate, even some dark ripe fruits, cocoa and caramel. Flavor is chocolaty, bourbon is present, vanilla sweetness, maybe some coffee too. Quite bitter palate, still very smooth. Excellent. 4326
4.1 341 ml bottle. Thanks a lot Timo A. Pours a pitch black colour with thick beige head. Aroma of rich sweet bourbon notes, smoked meat, dark chocolate and wood. Flavour of rich sweet roastiness, harsh licorice notes, dark chocolate, espresso, smoked meat and even peat notes. Strong wooden notes. Full bodied. Very thick mouthfeel and soft carbonation. Wow, so good balance.
4.2 Colore marrone scuro quasi nero, schiuma sottile di un marroncino legno. Aroma dolce di malto, si apprezza subito al palato le note di caffè e malto tostato ben equilibrate. Consistenza piena, alcol in evidenza, bassa carbonazione, beverina. Una eccellente Stout con belle note date dell’invecchiamento in botte.
3.9 Bottle to stout glass Coffee, bourbon, oak, cherry wood, smoke, and vanilla. Dark, opaque brown with a thin creamy, light brown head. Taste is chocolate, bourbon, wood, Worcestershire sauce, chocolate malt and a nice hoppiness at the end.
3.8 Bottle in blind tasting. Pours a transparent black with a nut brown, dense head. Aroma is malty sweet, but also has coffee, berries, chocolate and slight lavender. Taste is mild, malty and coffee bitter. Salmiak, old hops. Low carb, smooth but bitter body.
