What you hold in your hands is an experiment. This IPA is spiked at bottling with Brettanomyces, a wild yeast that, over time, brings about charmingly unpredictable complexities of spice, funk, acidity, and more. The operative words in our beer-cellaring thesis are "over time." For those of you who are impatient or like to experiment, the earliest we recommend sampling this beer is 10.31.14. The beer won’t be fully carbonated until that date. Ideally, you’ll want to cellar the beer up to--or beyond--the Enjoy After date to help it reach its full evolutionary potential. At that point, some facets of the Brett characteristics will have mellowed, while others will have become more profound; it all matures into a fascinating and delicious culmination. Individual results will vary...and that’s both the beauty and the intent behind this beer.

3.6 Bottle, 75cl. Sample. Pours hazy neon yellow with a large, staying creamy white head. Aroma has brett, horseblanket, peach, oranges. Lowish carbonation, fine dry and fairly creamy mouthfeel. Flavour has funk, citrus, peach, oranges. Fine bitterness.
3.9 750ml bottle, at the Beer Jerk Bunker bottle share, thanks to Matt. Date is 04/20/17. Pours bright yellow. Pineapple, orange, mango, lavender, floral, lemon, lots of farmyard funk. Spritzy. Good.
4.0 Odbita, gruba, średnio trwała piana. Barwa słomkowo złota, zamglona. Aromat intensywnie brettowy z nutą chmielu - siano, liście porzeczek, agrest, cytryna, zioła... W smaku podobnie, półwytrawne, goryczkowe, lekko cytrusowe, sporo fenoli w typie mniszka lekarskiego, geranium, liści czarnych porzeczek... Goryczka chmielowo brettowa - w typie tej występującej właśnie w mleczu. Średnie, grube wysycenie, zero alko. Dziwne i zarazem fascynujące dzikie IPA, Brettanomyces poszły we właściwym kierunku i choć zdominowały piwo, to nadal jest to przyjemne i pijalne. Takie Stone lubię!
4.0 Enjoy after 07/04/16 pour a dark golden color with a big whtie head. Aromas of brett, citrus, funky. Medium bodied, unique and very interesting.
4.0 Bottle sampled at SBWF 2018. Short white head. Opaque yellow color. Dry brettnomyces aroma with some woody hop aroma. Dry bretty taste with a balanced bitterness.
3.0 Aus der Flasche (Vintage 07.04.2016) im Stone Brewing Berlin 2018-09 getrunken. Dies ist deutlich nach dem Hopfenaromen ein Stone IPA mit ein Hauch von Wilde Hefe. Ich hätte mit einer Säure gerechnet doch Fehlanzeige. Vielleicht liegt es auch daran das es jetzt schon mehr als 2 Jahre alt ist. Ich fand es gut trinkbar aber auch etwas beliebig.

3.8 Bottle:   Enjoy After 12.26.15.   Deep hazy straw, faint orange hue, big pillowy white head, clumpy lacing.   Strong bretty nose.   Hoppy in a citrus peel sense, but very bretty and barnish.   Moderate to full body and mouthfeel.   Seems like a solid example of a Brett infused IPA.   Its hoppy and citrusy, yet with that very barnish mustiness that comes with the Brett.   Fairly bright.   Solid example.

4.1 Enjoy After 12.26.15; Sampled May 2018; Did I wait long enough? This was aged in my fridge at 48°F since purchasing. As steady pour produces a four-finger thick, light tan colored head; as it slowly subsides it forms a rocky, variegated surface that is perfect. The beer is a golden, honey color that shows a brilliantly clear, rich golden hue when held up to the light. The aroma smells of citrusy hops, subtle pine and funky Brettanomyces, just like it should. Plastic phenolics, a bit of hospital clean, musty, and definite Band-Aids mixed with floral orange zest. Explosively fizzy as it hits my tongue, the body is also light and refreshing, though not overly thin, in fact there is still some palate heft and viscosity here. There is a solid bitterness from beginning to end, and there is lots of citrusy hop character as well. Musty and Band-Aid like at the beginning, but the long finish gets medicinal and plastic. There is a light woodiness here, a grassy herbal note, but really the orange zest, grapefruit zest, and perhaps some floral apricot are the more dominant hop notes here. The malt plays a purely supporting role here, perhaps it brings out a hint of honey-like malt character, and just a touch of sunbaked grain & cracker towards the finish. This is actually doing quite well right now. I would recommend drinking this right now; it is a good mix of funky and hoppy still, and not excessively carbonated yet (though this has been in a fridge the whole time). I have no idea what this tasted like when it was younger, but I certainly don't regret holding on to it for so long.
3.5 Taster @ Kill the Cat for the Stone event. Light gold with a white head. Citrus, dry and spicy nose. Really special.
3.8 Bottle at Kill the Cat, Brick Lane. Cloudy yellow. Big plumb, apricot aroma. Super dry on the tongue, with fruity sweetness at the back, with a super dry palate.
3.0 Corked and Caged 750ml bottle from my partner’s cellar. The pour is really carbonated with a giant white head that lingers. The nose is incredible rich and complex. The mouth feel is interesting. The taste is kinda soapy.
3.3 Enojy After 04.20.17. Straw hay color with about 3 fingers of head with slow pour (way over carbonated). Aroma: herbal citrus, yeast, bread and peppercorn. Taste: Grapefruit and orange zest with weak hop presence. surprisingly underwhelming for a Stone brew. Aging an IPA is a no no!!
3.6 Pours a hazy yellow wit ha small off-white head, and good lacing. Smell is of grapefruit, spice, and some hops. Taste is of grapefruit, spice, a touch of caramel, hops, and a little pine. Ends bitter and a little tart.
3.8 Enjoy after 07.04.16 version. Pours a clean golden colour with heavy carbonation. The head is huge, very long lasting with some foamy lacing. The Brett is in the aromas with the earthiness and mild sourness, all well-blended with some Belgian Ale yeast sweetness. The taste is where the IPA appears with some sharp bitterness. The Brett shows earth in the background, but the grassiness is the strongest. Gets hazier and hazier as it pours. Another very nice brew from Stone.
3.9 Bottle at tasting. Aroma of funky barnyard, brett, citrus, mild acid and vanilla oak. Taste of dry brett, citrus, hay, funky barnyard, wheat, oaky vanilla and a dry finish. Heavy flavor, interesting and quite nice.

4.7 Enjoy after 4/2016. Very nice aroma. Very well carbonated and a big fluffy head. Nice lacing and overall very appealing appearance. Lots of citrus and lemon notes balanced with an aggressive but not intrusive hop profile. A very well crafted beer. Highly Recommended and for me a definite buy again if I see it. 3.7 Bottle from Stone Berlin. Aroma is light funk, soap, lemon. Very high carbonation. Taste is rather dry, tart, quite funky, strong herbal notes and bitter aftertaste.
3.9 Poured the 07.04.16 on 12.17.17. Poured this one aggressively as the aroma pouring out of the bottle was sublime. . It's cool they experimented with the Brett yeast as it really took hold of the grains and hops during fermentation and really give it a nice earthy and funky body. So this odd IPA is definitely a tasty one. Worth the wait!
3.7 10.31.16 bottle shared by Dan. Bit of a gusher. Hazy, orangish-yellow color, with a big, foamy head. Lemon, dirt, leather, pine, and rye. Sweet and citrusy, with a light funk and only a little bitter. Light to medium body, with a dry, grainy, dusty mouthfeel. This is a fun, flavorful, and funky beer.
5.0 Bottle - enjoy after April 2016 - so this is 18 months later - wow - super sour and quite sweet too! - lovely Brett influence - just brilliant - well done Stone. Retaste April 2019... now 3 yrs.... still brilliant and even more funky - less sweet than I remember - almost too much to drink by itself but with food.... wow what a great match and soooo much better to drink - drank alongside homemade burger and all the trimmings (plastic cheese, caramelised onion, gherkins, tomato sauce, bit of salad) - just phenomenal when sipped with this.
