Stone Stochasticity Project HiFi+LoFi Mixtape

Stone Stochasticity Project HiFi+LoFi Mixtape

A beer that pays homage to a centuries-old tradition of combining new beer with aged “stock ales.” Freshly brewed beers of the day often were very smoky and bitter tasting, and were blended with older beer that had mellowed with age to produce more drinkable libations. This modern brew will showcase our brewers’ talents by blending a stock ale aged more than three months in oak foudres (large wooden fermentation vessels) with a fresh version of the same beer to create a perfect harmony spanning end to end on the taste spectrum.

2.5 Odd duck of a beer, semisweet and bitter yet with an unexpected brett-like funk forcing its way into the party. Not sure if wild yeast is a component, but damned if it doesn’t taste and smell like it, with a leathery barnyard pungency accenting the woodsy oak undertones. Pours swell enough, but the nose is mildly off-putting, stinky and, well, almost urine-like to be honest. Too funky. Kinda gross, actually. Curious taste, though; starts mildly sweet like a strong English ale, toffee and caramel and dates, then gains a heavy oak backside, medicinal and dry, with all sorts of horseblanket complexity underneath. Booze peaks through as it warms--surprising for a beer that’s two friggin’ years old--and the fade is all oak and funk. Again, not sure if the funk is the result of design or this beer sitting on a liquor store shelf for two years, but it’s a strange brew nonetheless.
3.8 Bottled 2 years ago. Pours a hazy amber color with an off-white head. Aroma is floral hops, oak, a hint of citrus, caramel malts, and alcohol. Flavor is sweet with some citrus and floral hops. Plenty of oak on the finish.
3.3 Aroma: woody, barrel notes, vanilla, malty. Appearance: hazy golden color and white head. Taste: vanilla, woody, malty notes, low herbal bitterness, semi-dry. Palate: medium body and medium carbonation. Overall: Without barrels, flat and empty beer, but at this shape quite decent.
3.4 Bottled (MT/KS/MB February tasting). Finally reached the end of beers for this session. Murky ambery brown colour with a small off-white head. Aroma has some brett, mild spices, some alcohol and mild smoked notes. Flavour is quite similar, but also has a rather strong bitter edge to it. Mild tart wooden notes toward the finish as well.
3.3 22oz bottle. Pours a hazy amber with a pillowy off white head. An interesting brew to be sure but doesn’t quite work for me. It is a weird combo of sweet and sour. Flavor notes of dark fruits and caramel and, most notably, oak. Lots of oak. I dunno. Maybe paired with a cigar might be better. My guess is that there will be many out there who will love this one.
3.3 Hazy brown/orange appearance, with slight head and solid lacing. Aroma is very complex, woody, earthy, malty, floral, coffee, spices.. Tastes like malts, coffee, oak.. fairly flat and bitter. Not the most drinkable beer, but not bad either.
3.4 Bottle. Sweet caramel and toffee aroma. Pours a dark orange/bronze colour with a thin head. Sweet caramel flavour with some hoppy bitterness. Medium to full body. Balanced finish.
3.2 Refrigerated brown bomber poured into a snifter. Cloudy orange with small white head. Aroma is caramel malt, medium body, lower carbonation, and little carbonation. Taste is caramel and oak.
3.2 Very creamy white head stayed on a lightly effervescent dark golden body. Sour fruits, citrus, mango with caramel & brown sugar. Full bodied smooth to top fore, tingly on the back - cloying. Dry. A very bitter/sweet affair. Vinous. Caramel, brown sugar & malts followed by a back of sour stewed dark fruits, citrus, grapefruit with a really bitter aft.
3.2 22oz bottle. Murky amber-copper body. Thin, soapy, off-white head. Quite brett forward, this drinks like an oddball strong Belgian Ale. Somewhat soapy, astringent, phenolic. The barrel version seems to really be overbearing, almost giving it an Adambier feel, oily, brett dominated. An odd creature.
4.1 This is solid. A spicy Belgian ale aroma. Flavor is strange. Fruity and smoky. Tingly mouthfeel.
3.9 $8.99 bomber, Wine Warehouse. Pours hazy amber-orange with a giant, soft off-white head and floaty chunks. Aroma is very floral with hints of spice and dried fruit. Flavor is also very floral, good amount of Brett hitting almost immediately after the beer hits the tongue. Hints of candied orange and almost a barleywine-like flavor at times too. Quite complex and impressive.
4.2 1pt 6fl oz shared bottle at home from brewdog webshop. Nose is fruity, vanilla, floral. Body is opalescent orange amber, tons of tiny particles, head is medium, white, frothy, mostly diminishing, good lacing. Aroma is tropical grapefruit, fruity, citric. Light sweet, heavy quinine bitter, light citric sour. Finish is long lasting medium to heavy hoppy bitter. Medium body, slick texture, average carbonation. Easy, quite refreshing, very bitter but somehow perfectly balanced, quite unique, great one.
3.7 Poured from 32 oz. "crowler" can. Clear amber with a 3-finger off-white head and very good lacing. Aroma of citrus, vanilla, toffee, golden raisins and oak. Taste of orange, vanilla, earthy herbs, toffee, golden raisins, oak and honey. Medium body and medium body and with a rich, smooth mouthfeel. An unusual and interesting beer with an exceptional mouthfeel.
3.8 Bottled. Golden coloured. Unclear. Dense light beige head. Aroma. Fruits, caramel, herbs, wood, oak. Flavour. Fruits, brett, citrus, some flowers. Medium to full bodied. Ends citric and fruity.
3.6 Visual: Pours translucent frosty orange-brown with barley any head, ringed retention with a big island, a mix of fast and slow streams, no surprise actually. Nose: boozy caramel barley malts, like a barleywine, a touch of sourness. (lvl-4)-intensity Attack: micro-creamy smooth mouthfeel Mid-palate: (lvl-7-sweetness), background tangy citrus, heavy boozy toasted barley malt, tangy-zingy alcohol, subtle smoky Finish: oaky backdrop, residual barley malt sweet, lingering bitter hops. Summary: Very smooth entry, a burst of heavy alcoholic barley malts in the mids that is nicely balanced with some tangy bitter hops and an oaky backdrop. Halfway through though it definitely drinks heavy - a bit too alcoholic and sweet if there’s no salty food to go along with it.

4.3 2015 BJCP Category: 22B American Strong Ale AROMA: Interesting mix of citrusy hops, Brett tartness, and vanilla/wood aromatics. 9/12 APPEARANCE: Amber/orange hue; hazy body with small CO2. Large, off-white froth. Fine lacing. 2/3 FLAVOR: Full of flavor despite 13 months of age. Strong hop presence with taste of citrus concentrate. Bitterness fairly strong. Malty for sure, with some caramel/toffee notes but mostly a general (but reserved) sweetness for balance. A hint of Brett tartness on the finish. All the flavors work very well together. 18/20 MOUTHFEEL: Medium CO2, though body is medium-full. No sticky or cloying presence; but not crisp per se. Some astringency from the hops. Alcohol is well hidden. Smooth. 5/5 OVERALL IMPRESSION: A beer as interesting as it is tasty. Definitely a worthwhile project. Age hasn’t harmed it. 9/10 TOTAL SCORE: 42/50 DISCLAIMER: The author is not a certified BJCP judge; therefore, this score sheet is not necessarily indicative of proper BJCP judging techniques and protocol.
