Stone Stochasticity Project Quadrotriticale

When testing the inherent makeup of the quadrupel—the warmest and darkest of Trappist monastery beer styles—we added triticale, a hybrid grain combining the pleasant flavor of wheat with the elemental durability of rye. We originally explored this nouveau twist on a traditional style in 2010, when brewing a test batch of a potential beer in our Stone Vertical Epic Ale series. Brewmaster Mitch Steele reached for and subsequently improved on that pilot recipe, bringing it to life as part of the Stone Stochasticity Project. The result is a quad that’s lower in sweetness, but rich with dried fruit and spice nuances.


Appearance:Pours deep chestnut with a light tan creamy head.

Aroma:Tropical fruit, banana and brown sugar, as well as some light pepper and clove flavors from Ardennes yeast.

Taste:Fruity, molasses, brown sugar and banana flavors. There is some spiciness from both the yeast and triticale grain.
Palate:Full and very smooth with a touch of sweetness.

Overall:The Star Trek geek in me inspired this beer. The classic episode, “The Trouble with Tribbles,” referenced a type of grain called quadrotriticale (pronounced “quádro-trítĭ-kay-lee”). As described in the episode, this was a high-yield, four-lobed grain hybrid of wheat and rye with a bluish color. The flaked triticale we used is a cross between rye and wheat and makes up about 10% of the grain bill in this Belgian-style quadrupel.

3.8 Bottle purchased at Champanes, sampled in a glass, this ale had a clear dark red (it did not look that dark for a Abt/Quad ale) pour with faded brown at the edges of the glass, and the pour made a one finger white and faint off-white head that receded to a lasting cover and ring, it left nice spots and small fingers of lacing, the aromas were dark fruit that resembled raisin and fig, toasted malt and bread, some spice, and bread sweetness, it had flavors of toasted malt and bread with some dark fruit, it had some pepper spice to which gave some bitterness after the finish, the mouth feel was medium full, it was a little creamy and had soft to average carbonation, this was a ok Abt/Quad drink.
3.6 Dark brown with a cream colored head. Sweet aroma of Belgian yeast and fruit. Sweet, with a fruity and yeasty backbone. Pretty good, but I hold Stone to a higher standard than this.
3.6 4 oz pour on draft at Spacebar. Clear dark amber with beige head. Aromas of dark fruit, caramel, toffee, malt. Tastes of dark fruit, figs, light spice and caramel. Medium body with a dry finish.

4.0 Sampled at CBC 2016 - second day. A solid quad, with notes of caramel, dried fruit and a bit of yeast spiciness, I think.
3.6 Sample at cbc. Pours clear copper. Aroma is malty, caramel. Taste is sweet, caramel, balanced.

4.1 Red and hazy with a thin foam. Very nice aroma with fruit and nuts. Terrific flavors of dark fruit and vanillin. Finishes off with sherry and oak.

3.3 An amber beer with a beige head. The aroma has notes of straw and caramel. The flavor is sweet with notes of malt, and caramel, leading to a dry finish.
3.7 From tap. Pours clear and golden orange to brown with a small off white head. Aroma is toasted malty and caramelish. Lighht phenolic snd toasted malty. Lingering dark malty.
3.8 Pours a medium dark reddish amber color. Aromas of dark fruit, caramel, and some spice. Flavors are sour cherries, and some spice. Alcohol really dominates.

3.9 Not a big fan of belgians. Very nice aroma of tropical fruits, going into some malty notes, delicate hints of alcohol. Clear dark orange to brown, almost no head, but carbonation is evident. Sweet, bit acidic, (although I have no idea if triticale is present, I have no idea how it would manifest itself in the taste). Full bodied, oily and sticky, average to high carbonation. Finish is pleasant bitterness. Very nice, pleasent and good beer. I was afraid of big (0.7l bottle), but there’s nothing to fear, only more to enjoy. Although I know what triticale is, this one actually made me read some more on wikipedia. Thank you Stone!
3.7 600ml bottle bought at Brewdog Hong Kong. Pours a cloudy amber color forming a small creamy and solid beige head with medium retention but only few lacings formed and left in the glass. Very sweet nose. Strong notes of toffee and candi sugar. Caramel and apples. Sweet upfront taste. Strong notes of caramel malts, honey and candi sugar. Biscuity. Heavy caramel body. Candi sugar in the aftertaste. Good drinkability.
3.7 Poured into a snifter. 3.25 A: Clear medium amber color. Two fingers of creamy/frothy beige head. Retention is about average and just a few wisps of lacing are left. 4.0 S: This smells pretty awesome. To start, it’s very clean without any breadiness or yeast. Big caramel and toastiness. Grainy with brown sugar sweetness. Dark fruits including plum. Spicy earthiness and neutral wheat. 3.75 T: Like the nose, this is very clean. The flavors aren’t powerful, but are poised and rich. Caramel and brown sugar are the biggest components. Plum, currant, and raisin fruits. Earthy spiciness. Toasty malts. Hints of pepper spice. 4.75 M: Lighter medium body. 3.4 Deep amber Ruby pour. Sweet aroma of toffee, bread pudding, rum. Sweet bodied with a dry, boozey finish. Rum, toffee, dry fruits.
3.1 650 ml bottle. Color is deep ruby without any head in the snifter. Aroma is slight Belgian yeast with moderate dark fruits, bold caramelized sugars. The flavor is almost like a Quad. Caramelized sugar and dark fruit is here. What bothers me most is the texture and body. The body is strangely thin with a syrupy texture over the tongue. I enjoy the style but this just isn’t working for me. Cloying

3.4 Bottle from joergen at T&M’s. Pours a clear brown with a tiny off-white head. Sweet with some dryness. Aromas of caramel malts with hints of Belgian yeasts. Also notes of dried fruits and rye. Medium to full bodied. Medium to soft carbonation. Dry and sweet finish.

4.1 Bottle from Wine Emporium 281115. Deep dark copper red in colour with a slight head. The beer as well as the name is a big mouthful. Strong flavour with a sweetish finish.
3.5 Draft at Dutch’s. Pours a deep reddish amber color with a small beige head. The aroma and flavor have sweet malts, caramel, dark fruits, raisins, a touch of spicy rye like notes, comes off thin compered to the better examples, not creamy , smooth or syrupy, the flavor is decent, it just lacks the subtle things to make this something I would want to drink again.
