Saint Amatus, also called St. Aimé, was a Benedictine monk.


He took the defense of the lesser man who was exploited by the Merovingian king Thierry III.


In Belgium, Oostvleteren is the only parish to patron St Amatus as saint.


Struise started brewing at Deca in Vleteren early 2006, we ankered ourselves by starting the development of our own micro brewery in Oostvleteren during 2009. With this adventure being on the rails, we thought the making of Saint Amatus 12 was as evident as can be.


The terrific artwork was brought by our narcissistic artist Carlo Grootaert.



Saint Amatus has aged on Woodford Reserve barrels from Labrot & Graham, Kentucky USA. Some batches were instead aged on Pappy Van Winkle whiskey barrels, both varieties are valid for this entry.

3.4 33 cl. bottle @ home, bought @ van Rooij, Culemborg. Hazy dark brown with a very thin off-white head. Caramel and raisins aroma. Sweet taste with a sweet finish. Low carbonation and quite thin body. Alcohol very well hidden. Bourbon is not very present. Interesting but could do with a bit more carbonation
3.5 Bottle sample at a tasting. Hazy brownish-amber with beige head. The aroma has notes of toffee, soapy, alcohol, bubblegum, minerals, dried fruits, wood. The flavor is sweet with notes of alcohol, dried fruits, toffee, caramel, bubblegum, wood, oxidised, acetaldehyde. Full-bodied.
3.5 Bottle from The Beer Cave. Black body with no head or lacing. Aroma of wood, ginger, toffee and marmalade. Flavour of treacle, bourbon and raisin. Medium body with a slick texture. Soft fizz. Interesting but boozy.
3.6 33cl fles. Helder donker robijnrood kleur, fijne romige creme schuimkraag. De geur is karamel en rozijnen. Smaak is zoet, karamel, rozijnen en pruimen. Medium body en veel koolzuur.
4.0 Vintage 2018 10.5% 2y BA on Woodford Reserve Bourbon barrels. Pours blackish ruby brown with a quickly disappearing beige foam head. Scary initial chemical nose that thankfully turns into a sweet, candylike, wonderful bourbon quadrupel aroma in a few minutes. Medium body on sweet burnt caramel malt assisted with a perfectly balanced bourbon barrel ageing. Beautiful!
3.3 Bottle at a tasting. Hazy dark amber-brown color. Aroma of candy, fruity esters, a bit of caramel. Very sweet, sugary, cloying, caramel, overripe fruits, candy, prunes, alcohol, mild bitterness. Medium-bodied, sticky.
4.2 Brune très foncée aux reflets rouges surmontée d’un col de mousse assez court de couleur beige, assez stable et compact. Tenue moyenne. Au nez explosent la pomme et la poire, très mûres, ou cuites. Parfum malté, de grain grillé, de pain gris, caramel, cannelle. Note alcoleuse douce de bourbon. La bouche fait elle aussi une grande place aux fruits : pomme rouge mûre, bled, cuite, poire fraiche, panade, compote, sirop d’érable. Douceur fruitée mais pas de mauvais sucre collant, fraîcheur. Petite amertume type pépin, petite astringence. Ceci repose sur une pâte légère, grillée, note de beurre, de viennoiserie. Touche vanillée. Rondeur moyenne, corpulence pas si épaisse. Finale alcooleuse à l’amertume moyenne. Corpulence moyenne, carbonatation assez faible. Quadruple classique très fruitée assez légère de texture, douceur puissante mais digeste, équilibre intéressant en fin de bouche. Vieillissement en barrique peu marqué, pas de brett détectée, pas tant boisée, bourbon se marie à la bière et sa douceur maltée.
3.8 Bottle ordered from Sophie's. Aroma is rich. Fruit, nuts, slightly gluey. Opaque cola brown. Beige head soon disappears pretty much entirely. Initial sweetness which reflects the aroma. Underlying boozy bitterness from the barrel aging. Develops a nougat and dark chocolate element. Medium bodied. Creamy. Flat-average carbonation. Long dry astringent finish.
3.7 2013 Vintage bottle, black beer, small head, aroma is malt, light fruit, bit metal, raisins. Taste is the same, raisins, sweets, full taste. Nice!
3.6 Toń zmętniona, brązowo-kasztanowa. Piany nie ma. Aromat karmelu, nugatu, cierpkich owoców, drewna, piwnicy, ciemnego chleba, wina, śliwek w czekoladzie. Ciało pełne, klejące, nisko nasycone. Rozgrzewa przełyk w przyjemny sposób. W smaku głównie słodko, trochę gorzkawo. Cukier trzcinowy, ciemne pieczywo, kakao, śliwki. Piwo o bardzo złożonym aromacie i całkiem przyjemnym smaku.

4.3 Zapach: ciemny chleb, karmel, śliwki, susz wigilijny, intensywny i zachęcający do degustacji. Smak: śliwki, susz wigilijny, gładki, lekko kwaskowy, gruszkowy posmak, karmel, delikatna nuta waniliowa w tle. Rewelacyjny przedstawiciel stylu.
4.5 So, does De Struise ever get one wrong? Not in my experience. Today is the day to sample and rate St Amatus Oostvleteren 12. I brought home a vintage 2013 33 cl bottle from our spring trip to Belgium, just can’t wait for cooler weather to try. I am going with my Straffe Hendrik glass obtained in the same trip. Heavy pour with half the bottle, a cola brown and a wisp of light tan foam after it settles. It has a nose of figs, alfalfa and great promise. The taste is an explosion of flavors, dates, dark plums, wheat bread, cherries, malt and something earthy. A small bitterness wraps the backend. Light carbonation, creamy. Phenomenal. Now to sit back and enjoy the ride.
3.9 Noire, pas de mousse. Senteurs de vin rouge, de fruits noirs, de chocolat en arrière-plan. Saveurs en bouche de framboise, de fruits noirs avec un alcool bien présent et une finale légèrement sucrée. Pas la meilleure de chez Struise à mon avis mais intéressant !
4.0 2013 Vintage. 2 finger beige head, red-brown body. Nose: Prunes, raisins, dark bread, Madeira, malt and caramel. Taste: Raisins, Madeira, caramel, malt, prunes, pumpernickel-bread and dark bread. Semi-long ending with low bitterness.
4.0 Bottle vintage 2013 from Kvickly Middelfart. Dark brown body with a medium offwhite head. Dark fruit, vinous, yeast, slight tartness, alcohol notes. Good.
4.4 10 March 2019. At In de Verzekering tegen de Grote Dorst. Shared with the lovely Anke! Vintage 2013. Pours hazy dark brown-red with a lasting, small, foamy tan head; some lacing. Intense & rich aroma of raisin, ripe blue plum, prune, dried fig, dark fruits drenched in liqueur, praliné, pear syrup, dough, port, 'carré confiture', almond, madeira. Taste is medium to heavy fruity sweet, lots and lots of overripe plum, pear, raisin, prune, a bit caramelly & doughy, some red grape & marzipan; light herbal bitter middle offers balance with dried tea, pepper, even orange peel. Dryish, earthy hoppy finish, lingering raisin, orange, and expected warming port alcohol. Full body, syrupy texture, soft carbonation. Very rich & decadent, pure dark fruitiness, an ideal dessert in itself.
4.1 Bottle. Pours a murky brown with a fading light beige bubbly head. Aroma is of dark fruits, berries, treacle, caramel, cherry, sherry. Taste is of treacle, raisins, figs, dark grapes, cherries, cranberries, chocolate. Oily mouthfeel, soft to medium carbonation.
4.1 330ml bottle. Hazy reddish brown with a very thin off white head. Red wine aroma with coffee and chocolate notes. Flavour is fruit cake, booze and some of that chocolate. Splendid

4.5 De Zombier. En copa Grimbergen. Viendo Los 100 1x07-08. La mejor struise que he probado. Llena de deliciosas frutas oscuras y alcohol bien oculto. Solo se echa en falta mas cuerpo y mejor aspecto (no genera casi nada de espuma)
4.4 L: -pours a hazy, dark ruby with a small to medium,frothy,beige head -medium carbonation visible S: -plums,dates,figs,fruitcake,raisins,strawberries,syrupy T: -follows the nose + nutty,spicy,roasted chestnuts F: -medium to high carbonation -full body -boozy O: The Bourbon unfluence is negligable and it's not nearly as yeast-heavy as most other Quads. A great ,fruity Quad.
3.6 330ml Bottle (2011 vintage) - Dark brown with some red tinges when held to the light. Marzipan, raisins and cherries in the aroma. Malty and slightly sweet taste which becomes rather warming after the first sip. Notes of marzipan, chocolate, currants and muscovado sugar can be detected along with a hint of honey.
4.8 Attention, De Struise fait dans la haute couture avec une très belle complexité aromatique alliée à un alcool lui permettant d'affirmer son caractère. Un conseil : prenez le temps de la déguster et d'en découvrir les différentes facettes. En verre rien d’extraordinaire toutefois, mais un brun sans mousse tout de même convenable. Le nez vous invite au voyage : pruneau, cerise griotte, café, whisky forment un assemblage à la fois subtil et puissant. L'attaque est splendide d'équilibre et de complexité. Les épices y font leur apparition en complément avec un alcool toujours chaleureux. L'intensité va cependant encore piano, tout comme la seconde bouche qui est linéaire. L'arrière bouche est quant à elle légèrement plus amère avec une présence en bouche qui aurait pu être plus poussée. La troisième bouche donne toute sa mesure à cette bière avec un alcool gagnant en profondeur et une complexité s'affirmant que davantage sur une intensité très appréciable. Le final termine élégamment la dégustation sur le pruneau et le whisky. Aucune faille dans l'équilibre avec un quatuor alcool/sucre/Houblon/malt parfait. Du grand art.

3.5 330mml. bottle. Tasted on the 10/07/2018 at home. 2010 vintage (10.5%). Many thanks koelschtrinker for this bottle. Deep red to cola colour with a minimal and dissapearing head. Aroma is toffee. sherry, dried fruits, caramel and plum. Taste is caramel, toffee, dried fruits and some oak and plums on the aftertaste. Medium carbonation. Well balanced. Next one please!
4.0 Bottle Vintage 2013 from Jef Verstraete, many thanks: Aroma is full bodied, malty, lots of dark malts, candy, caramel, wood, some dark fruits. Flavor is also full bodied, lots of dark malts, (milk) chocolate, toffee, candy, wood, whiskey, roastiness, some dark fruits. Very tasty and well balanced, rich brew.
4.6 Fles 33cl thuis. Vintage 2013 No. 5. Gerijpt op Bourbon vaten. Warme alcoholsmaak, donker fruit, chocoladetonen, gebrande mout, carameltonen, laurier, zoeten en zuren, basterdsuiker, ergens bittertonen. Lange nadronk waarin Bourbontonen aanwezig blijven. Erg lekker. (10-7-2018).
4.4 Bottle. Vintage 2013, Bourbon barrel aged, 11%. Color: Very dark ruby, very thin beige head. Aroma: Malt, caramel, toffee, boozy hints. Taste: Medium sweet, dark malty, notes of toffee, caramel, chocolate, sugar, boozy notes. Hints of figs and vanilla. Lightly bitter. Complex and nicely balanced. Great one from De Struise.
4.2 Vintage 2013, 33cl bottle (from De Bierboom, Brugge) poured into an Augustijn chalice at home on 20th June 2018. Deep red hue to the brown body, wispy lightly tanned head. Lovely stuff, Bourbon esters and flavours in this boozy, heavy brew. Lots going on, this is a winter warmer/barley wine type of quad and all the better for it. Just lovely.
