3.8Poured from bottle thanks ClarkVV red brown with a nice beige head. Aromas of dark fruit caramel and molasses. Taste is caramel bomb with lingering alcohol burn. Whoa.
3.6More old beer. This one shared by ClarkVV, who is easily The Bruery’s biggest fan. Thanks, Clark! Pours red brown with a beige head. Aroma is caramel, molasses, dark fruits. Flavor is caramel, molasses, dark cherry. Held up well. Alcohol well hidden.
4.4750ml bottle of Papier pours a brown color without any head. Low carbonation but still ok. Raisins, port and toffee.
4.5December 11, 2015 - bottle via Bruery cellar sale. Light brown pour with limited head. Aroma was nice blend of caramel, bourbon and maybe some vanilla and dark fruit. Taste was consistent with aroma. This was fantastic.
3.7Rating of CUIR, which is the 3rd Anniv. edition and not the same as Coton.
Large shared bottle. 4 years old.
Very fruity aroma featuring dried plums and other dark fruits. Bitter and sweet with a touch of tartness.
Warming but not hot.
3.7Given the bottle is 5 plus years old I am trying to balance what this once was versus what it is now. Lots of caramel sweetness but also some sherry like oxidation. Their Anni beers are spectacular and there is no reason to believe this wasn’t at one point. The alcohol has been subdued quite a bit but the oxidation isn’t a great replacement for me.
3.8Bottle 2010 Cuir 25% Barrel aged. Color is murky brown with soft white head. Toffee aroma and brown sugar. Taste is nice and mellow oak and vanilla
Age has worked well on this.
3.9Bottle at Craig’s. Pours hazy brown, nose is roasted, chocolate, taste is rich, sweet, fruity, roasted.
3.0Papier
Tasted on 8/31/13 from a capped 750mL bottle that I had purchased at a Whole Foods a long time prior. Pours muddy brown with no head. The nose is mostly oxidized with caramel, toffee, raisin, date, and maple. The flavor is not as far gone as the nose with all of the same caramel, raisin, date, and maple, and the toffee showing a bit more toasted bitter. The body is huge with no carbonation and a long burnt sugar and sweet finish.
4.32011 Cuir bottle. Murky dark brown pour with almost no head. Awesome burnt caramel aroma along with some sweet toffee, vanilla, and plums. Tastes like liquid candy. Burnt caramel, vanilla, oak, some dark fruit. Pretty awesome. No booze at all. It’s a sipper but doesn’t seem anywhere near 14.5%. I love this.
4.3The head is ok, the body darkbrown and cloudy. It smells darkmalty, raisin, dry fruits, bit alcoholic but not much for 14.5%. The taste is darkmalty, aromatic, hoppy, sour, fruity. Intensive barrel aged taste. Delicious!
4.2750ml bottle courtesy of Thanasis. Dark red brown color with small beige head. Aroma is malty, caramel, fruity, dark fruits, pecorino cheese, wood. Sweet and light bitter taste, malty caramel and fruity, some vanilla notes, wood again. Medium oily body with soft carbonation. Alcohol is very well hidden.
3.7Bottle of Cuir.
Aroma is showing some slight oxidation with sherry notes. Lots of dark dried fruit including raisins and prunes. Some dark toffee and caramel notes with a bit of a smokey roast character. Hint of meaty soy sauce. Light alcohol note.
Pours a somewhat murky, burnt amber with brown hues. Moderate sized, fairly thick, dark tan head that exhibits good retention as it recedes to a thin film in the center of the glass.
Flavor is rather sweet with a lot of dark caramel and toffee notes. Lighter chocolate and burnt sugar with hints of roast and smoke. Moderate dark fruit notes of cherry and plums. Some raisin and prune notes as well. Faint meaty, soy sauce note; definitely lighter than the aroma. Medium light alcohol spice. Lingering dry fruit and dark caramel.
Mouthfeel is full bodied with medium carbonation. Low astringency and medium low alcohol warmth.
Overall, an alright beer but I can’t tell whether its going through a bit of a weird phase or totally turning for the worse with that meaty note. Its quite a different beer from the Fruet I recently had. Lots more fruit notes and signs of age.
4.3Anno 2011 cuir. Hazy brown. Aroma of candied sugar, plum, wood, bourbon malt, vanilla. Taste is sweet and tart. Sticky. Dry bitter finish.
4.4shared bottle by a friend, bruery CUIR, 100% bourbon barrel aged! poured a deep brown ambr colour with a small non lasting off head. verry bourbon forward, caramel, toffee, oak, vanilla, almond, dried red fruit, it’s drinking very easy for it’s 14,5% bourbon soaked raisins, plum, molasses, really smooth bourbon, just my kind of beer!
4.0On draught at Saraveza for their 6th anniversary. Dark amber color. Aroma is brown sugar and molasses. Taste is similar, with definite honey and vanilla notes. Amazingly strong, yet sweet and tasty.
4.2Drank during an awesome tasting at Thijs’ place 28-3-2014. Very sweet, almost like a barley wine. Carbonation, present alcohol taste. Chocolate after taste. Magnificent beer.
Posted 7 months later cause I accidentally rated the wrong beer back then!
4.0"pours mahogony with a thin tan head, big time sweet alcoholic aroma hits home...fig/raisiny sweet, vanilla, bourbon. you’d think due to the intensity and strength it was far more than 25% barrel gaed, but that’s what it said. the bourbn didn’t dominate, but it was sweet and warming still. very very tasty, but it could’ve been better toned down a bit. maybe 11-12% and not as sweet? usually with the partially barreled beers i’m begging for 50/50, but in this case, the 75% ale was sweet and hot to begin with, so it was good...but too aggressivesubsequent years less sweet even while getting stronger. Up a tenth. to be great."
3.9750 ml "Cuir" bottle shared with the Quebec City crew. Pours a veiled and flaky ruby reddish dark amber with a short lived white head. Aroma is leather, cherry, maple and wood. Flavor is liquor, leather, rum, sugarcane, port wine and caramel. Finish is booze, barley candy, burnt caramel, wood. Lingering port wine, rum and booze. Medium to full body, soft mouthfeel, low carbonation.
3.7Bottle at RBSG 2014. Thx to everyone for sharing today’s bottles!
APPEARANCE: clear dark blond beer, no foam.
NOSE: very sweet, caramel, alcohol.
TASTE: very sweet, alcohol, caramel. Too much sugar for me, also too much alcohol...
4.1Having this 2010 bottle at Eulogy in June 2014. Very rich dark caramel malts with deep red and brown fruit. Poured a deep translucent ruby with some light beige foam. Complex berry notes. Charred steak. Figs. Pomegranate. Duck sauce. Passionfruit. Cherry cordials. Rich sweet and sour. No funk. No bad notes. Syrupy succulent body. Lip-smacking finish. High ABV numbs the tongue but does not feel overpowering. Has aged very well in the bottle - a lot of the original burnt notes have smoothed and sweetened.
4.0Had this as Cuir 100% Bourbon Barrel Aged: pours a deep amber color with off-white head. Tartness, funk, oak, bourbon, and some dark fruits on the nose; follows onto the palate. Very nice. Finishes tart and dry.
3.6Cuir 25% Bourbon, 2011 bottle Very hazy red a nice 3 finger head. Aroma is loaded with molasses and figs. Sweet taste. Huge oak presence and a heavy prune juice taste. Absolutely delicious
3.2Bottle share at DLD 2014. Pour is clear red/orange with a very small tan head. Aroma and flavor are borderline cloying - toffee, wood chips, vanilla, dark fruit, citrus, rock candy. Low carbonation, alcohol is well hidden mostly due to the high amount of sugar.
3.5Traded bottle as Papier with a thick dose of black wax to keep that cap on. Pours a murky brown color with no real head just some bubbles. Big aroma of molasses, dark malt and a hint of steak sauce I think. Bold flavor with a bit of spice and a syrupy mouthfeel. This is definitely a sipper but for 14.5% the booze is actually well hidden. Strange lingering finish. Good but not really my thing.
3.9Pours a cloudy amber brown color with aroma of fig, raisin, cherry, and wood. Thick complex flavor with lots of dark fruit- fig, raisin, and cherry-, wood, and bourbon round out the flavor. 2009 bottle. Very nice and very big beer.
3.82009 1st anniversary bottle, labeled "Papier". Black wax. Thanks to beace for this one. Shared with Jay. Hazy dark red brown color. Beautiful color, but no head or lace. The beer is pretty flat, but it doesn’t hurt it at all really, it’s pretty nice and has a good creamy texture. The beer is 5 years old, to be fair. Awesome nice dark fruit, vanilla aromas. Moderate sweet taste, lightly dry finish. Just a light hint of tart / tannic notes. Hides alcohol amazingly well. Very enjoyable stuff. Great one to share between two people.
3.8cuir 25% bba. pours cloudy, almost dirty, light brown-reddish with a small light beige cap, some retention and lacing. fruity burnt caramel, booze, raisins, dried dark fruitiness, some minerals, coconut and nice woodsy notes, demerara, rum qualities, pepper. very fruity in fact. moderate carbonation, medium to full body - oily and sticky, cloying grassy-spicy and warming finish. nice.
4.0At c&g tasting. Pours brown no head. Aroma is big fig raison burnt plumb. Taste very nice boozy figs.
3.9On tap on 06/06/2011 as Bruery Cuir. Somewhat cloudy dark amber body with a medium creamy tan head. Sweet vanilla, cherry, oak, and caramel aroma. Sweet oak, fruit, caramel, and light tart flavor. Medium full body with moderately low carbonation.
