Sour Red Ale, aged in red burgundy barrels with cherries.



This beer is the second iteration of a project we have been working on at the brewery for a few years now. We wanted to create a modern sour ale aged in barrels that had the same complexity and depth of flavour that our favourite sours from the USA offer. After using a Belgian yeast strain to give a good foundation on which to build, we aged the beer in Burgundy barrels with the fruity for well over a year. Adding cultures of Brettanomyces, Pediococcus and Lactobacillus at set points let us sour the beer gradually over many months and give layers of flavour that can only develop over time. The rich fruit aroma and flavours compliment the sharp sourness which subsides for more malt and yeast character to come through. Lively, dry and thirst-quenching, this beer is a beer to savour; a complex and mature sour ale that we feel fulfills our original objective.

4.1 Clear reddish/brown color with minimal head. Aroma of strong cherry, little sour, wood. Taste is first acidic but then it turns to loads of cherry with pleasant sour and wood. medium body, average carbonation.Rich, complex, refreshing. Excellent
3.9 375ml bottle - Pours a light hazy reddish-brown colour with a small off-white head that settled. A tart fruity aroma, cherries, overripe grapes, with some vinegary and woody notes. A moderately sweet and fruity sour taste, tart fruit, balsamic vinegar, sour cherries and woody flavours with a drying sour finish.
3.9 Cherry taste.very smooth.a little bit sweet,fudge maybe.very mucu like a lambic,except for the sweetness.
3.2 Bottle at home. Intense. Sour cherry. An interesting experience for the mouth. Quite drinkable. I’m not sure I’d go for one if given the choice but a solid drop.

3.8 2018 bottle. Clear reddish brown with beige foam that's gone as you finish pouring. Aroma of Balsamic vinegar - malty and fruity - baked cherries, oak. Cherry stones and oak come with almonds and vanilla. Lowish carbonation. Almost syrupy. A sour edge but more sweetness than guessed. Booming cherry flavour, then gentle sourness and acid before tannin and oak. Really quite vinous at the end. Lovely flavours but not as drinkable as it might be.

4.0 Vintage 2017. Robe ambre sombre et rougeâtre, légèrement trouble. La mousse s’évanouit très rapidement. Le nez est très agréable et très fruité, sur la cerise avec une pointe d’acidité. En bouche l’attaque se fait sur l’acidité d’une lambic, bien marquée et qui se maintient et se développe en bouche avec des notes boisées. La cerise se retrouve au troisième plan. Une bière intense en saveur et rafraîchissante, qui persiste en bouche.
4.1 Hazy amber colour, no head. Aroma is full of funk, fruity and sour. Taste is heavy sour, funk, lemon, very intensive. Strong lambic.
3.5 Red-brown color, no foam. Nose. Sour Cherries, berries, Brettes, tree shades. Taste. Sour, tart, light sweetness, Cherry, Wood, Cherry pit. The finish is tart, sour with notes of a barrel. Very high quality!

4.0 Deep muddy ruby red, fast fading white head. Aroma sour cherries and red currents, tart, funk. Taste acidic, cherries, berries, funky notes. Complex and accomplished.
3.8 Bottle at home. Vintage 2017. Pours a deep mahogany colour with a fast fading light beige head. Aroma of red currants, brown sugar, fudge wet basement, oak, forest floor, leather, raisins and apple cider vinegar. Flavour of red currant, leather, lemonade, oak, fudge and vinegar. Has a sparkly and slick mouth feel, medium body and a light bitterness. Fruity, sour with sweet undertones.

3.9 Caña en Cimmeria 13..12..2019. Color rojizo velado con poca espuma beige que desaparece casi por completo al poco tiempo. Sabores intensos destacando ácidos y frutos del bosque. Afrutados. Ligeras maderas algo secas al final. Cuerpo medio con bastante sabor y fino con buena combinación de sabores y ácidos. Bastante buena, toda una sorpresa en la marca. Para repetir sin duda alguna.
3.9 On tap @Jabeerwocky in Warsaw. Amber pour with crazy orange highlights and an off-white medium-low head. Nose: balsamic with a medium aroma of red fruit and so much wood. Lovely. Mouth is even better and very peculiar. Acetic, balsamic, vinous with a lovely cherry overall and a medium peppery aftertaste. A great beer.
3.8 Dłuugie to jest na podniebieniu, kwas otulony wiśnią i beczką po pinot noir, takie winopiwo, ciekawe, gęste, do sączenia. Nie przesłodzone szczęśliwie.

Very moderate hops.
