Dette er et eksperiment, der nærmest har taget over hånd. Ov-ral- er To Øl/Mikkeller collab øllen, Overall IIPA, bare i en wild yeast version. Resultatet er en hyper kompleks øl med et ordentligt skud humle, som bliver balanceret af gærens syrlige og funky noter. I sandhed en ener.

This beer is one of a kind. It is our good "old" To Øl/Mikkeller collab - Overall IIPA - fermented with wild yeast. The result is a dry hop bomb that has been balanced by the tart and funky wild yeast notes.
When we added the wild yeast the fermentation went out of control and made a 100% attenuation - leaving no left over sugar in the beer.

4.1 Tap at Gar Eden. Aroma is a bit stinky and sweaty, with some tropical fruit and lots of booze, but the taste is great. More fruit, very tropical but with a citrus sharpness. Bit of bitterness, zesty, booze is quite well hidden, it’s almost crisp. Later on some salty caramel! Really good stuff.
2.9 One of my go-to stores is selling bottles of this for a buck a piece - given that it’s a Brett IPA I figured it was worth a try, despite it’s age (I had no idea it was made a few years ago - there are several stores I can think of that still have it on the shelves) - pours kind of a pinkish copper - minimal lace - tons of chunky floaties - nose is sweet pink grapefruit, loads of musky Brett, some mild plastic phenols - flavor is fairly sweet (the commercial description says there is no residual sugar, so maybe the sweetness I am tasting is from the alcohol, which is fairly present in the flavor?), but balanced by dry Brett and hop bitterness - alcohol is quite evident, and burns a bit in the finish - some oxidation is present, showing the age a bit - Brett notes of pineapple, plastic, barnyard - alcohol burn in the finish, and also a bit of acetone, both of which burn the throat a bit - the aroma is the best thing about it, and even that is just okay.
3.8 Clear deep copper with a thin white foamy cap. Lovely and full complex nose with floral hops and big floral resins, like actual flowers and some potpourri and rosemary--or something herbal. Big flavorful but also dang bitter flavor featuring pine, grapefruit, grape, loads of sticky caramel, dry bretty farmhouse funk, herbal esters, maybe rosemary, more citrus and pine, some bitterness, and more funk. Loads of complexity, but also loads of bitterness. Lots of bretty funk.
3.7 (330ml bottle @ VilleValla Pub, Linköping, April 14 2015) Pours hazy orange with a moderate frothy white head, lace. Aroma has some caramel/orange/mango sweetness, tart fruity notes, soft resin, florals. On the palate, fairly dry, lightly lactic lemon tartness, orange, tropical fruit, bready malts with touch of caramel, a little pine resin. Finish is sweet/tart fading to dry, pretty balanced, soft bitterness. Funk is very moderate but there’s a little there. Medium body, a little oily, average carb. Alcohol slightly detectable. Pretty nice dry/tart DIPA but the Brett is on the tart rather than funky side. Tasty.
3.7 Bottle at home for Vikings. Orange amber beer. Nose is tart fruits and yeast, and hops. Tastes of ripe fruits pineapple and range, resin, oily hops, bready, yeasty, and pine needles. Malty, some bitters and sweet finish. Lingering finish. Decent.
2.8 Bottle at home. Hazy orange with a white head. Taste is malty, bitter, sweet, caramel, a bit hops, a little foral.. Maby to old.
4.1 Bottle. Aroma of pungent hops and malts and the taste is, resin, floral, alcohol and nuts - the latter a bit surprising. An accomplished and fantastic double ipa where the streak of wild yeast breaks through!

3.7 Tap . Pours unclear darker amber . Smell is hoppy , in a malty sweet way ( not really bitter ) . Taste is malty , some hoppy notes . No brett to be found in the taste though ... Good beer nevertheless
3.8 Bottle from Sake Taniguchi (World Beer Market). Very big floating citrus aroma, caramel, small barnyard notes, and some alc. fumes. Medium orange/amber color, with a sudsy head. Thick caramel initial, which is immediately undercut by hopping and a wild sourish notes. Alc. intrudes a bit. Some yeastiness and then it finishes a little dry. Warming stuff. Medium-heavy body. Interesting stuff. The wild yeast works here. Alc. level is perhaps a bit too high.
3.2 1/22/15. On tap at The Craft Bar. Hazy orange pour under a small tan head that fades, mild lacing. Huge burnt caramel/brown sugar aroma, fruitiness, a little dusty and husky. Rich burnt caramel/toffee flavor, fruity, surprisingly sweet. Disappointed.
3.9 Appearance: Cloudy orange golden color with a fine white head. Ok lacing. Aroma: Wild yeast, malty and citric hoppy and fruity. Palate: Medium to full body. Moderate sweet, and a fine fresh bitterness. Balanced acidic. Average carbonation. Taste: Malty, citric hoppy, yeast and mild fruity. Overall impression: Nice tasty and fresh ale. 3.8 4oz pour on tap at Rattle n Hum NY. n amber beer with a lazing yellow head. The aroma has notes of alcohol, brett, caramel, and malt. The flavor is very sweet with notes of brett, wood, caramel, alcohol, and malt, leading to a dry, tart, bretty, and alcoholic finish.
4.1 Quite a few bottles @ Fox and Hounds, Aabenraa. Almost clear orange body with a fina, stable off-white head. Gould say a lot about the aroma, citric, grapefruit, malt etc. but actually I find this aroma like the smell from the inside of a brand new car! Flavor is medium sweet, quite malty, hint of caramel, quite complex fruit flavors, peaches, grapefruit, mango, resin, dry fruit with more and a tart, slightly acidic funky little finish. Strong bitterness, still not out of balance. Fine and balanced body, long lasting tasty and bitter finish. I really enjoyed to have this one easy available for my two weeks in December.
3.7 Keg at CBC2012, from some old notes. Pale with a creamy white head. Aroma is zesty, fruity. Lively carbonation. Assertive grapefruit zest and lemon flavour. Super dry finish. Very drinkable.
3.4 [6026-20131030] 330mL bottle. Fragrant fruity orange rose petals aroma. Slightly hazy, red orange body with a quick foamy white head. Boozy woodsy orange leaves flavour has a lingering sweet aftertaste. Medium-full body is all high octane fuel so it also feels dense. Interesting but couldn’t have a lot. (8/3/6/3/14) 3.4
3.7 Bottle. Amber color with a white head. Aroma is hoppy with citrus, fruits and grass. Taste is hoppy with long bitter aftertaste. Flavors of citrus, spices, grass, caramel and also some alcohol in the end.

3.2 Bottle from Mogwai Bar. Smell has hops and some fruits. Pours amber with a small white head. Taste is a bit bitter with some ginger and some hops. Palate is easy with some strayness. Overall a beer just above decent, but it do hold some nice qualities.
3.1 Flaska på Beer ditch. En besvikelse. Saknar det man förväntar sig mest, humle och brett. Istället en ganska medelmåttig malttung IIPA med viss citrusfruktighet och caramellsötma. Helt okej men hade förväntat mig mer.
3.9 September 15, 2014. Bottle, best before november 15, 2014. Pours hazy amber with a white head. Aroma is caramel, citrus, passionfruit, brett, light alcohol. Taste is medium sweet, caramel, resin, medium grassy and piney bitterness. Finish is light caramel sweetness with a medium dry grassy bitterness, slight alcohol warmth. Medium bodied, light sticky mouthfeel, average carbonation.
4.1 Pours a dark hazy peach with a medium white head. Aromas of caramel, peach, funk, figs, raisins, honey and some roasted notes. Taste is caramel, peach, raisins, figs and some roasted barrel malty notes. Mouthfeel is medium body with medium carbonation. Very good!
3.8 Pours hazy copper with low white head. Aroma of resin and caramel, light peach and mango, funk and basement. Taste is mellow fruity bitter with light barrel notes, sweetish finish. Body is medium rich and smooth with soft carbonation.
4.3 Imperial IPA hopped with Simcoe, Amarillo and Centennial and distinguishing itself from its predecessor (Overall IIPA) by the fact that it’s refermented with Brett - hence the name, a clear reference to Orval. Yellowish white, sticky, stable head, beautifully warm orange blonde colour, light hazy. Very assertive and powerful aroma of grapefruit, orange zest, lime, jute, leather, triple sec, pepper, amaretto, mango, ginger, cloves, wodka and pineapple. Very complex taste from the first sip, exotic fruit sweetness, lively spiciness, soft and smooth mouthfeel, mellow caramelly malts, all drenched in a tongue-stripping, herbal, peppery and citrussy hop bitterness, stretching very long into the finish along with Brett fruitiness and subtle funkiness as well as dry, warming alcohol, but not in an astringent way. This is an absolute masterpiece from Mikkeller - once again.
3.5 Lots of simcoe. Some aroma similar to ovral, soapy, very stingy resiny aroma. Taste is grassy with citrus and orange. Quite balanced, not sour whatsoever. Refreshing, low bitterness with a decent pilsner malt background.
4.0 Pours a hazy rust orange with light white head, light sediment, and light carbonation. Aroma is a nice mix of citrus hops, fruity malts, and caramel. A very unique taste I’ve never had before... A instant hop bomb that changes to an interesting fruity-yeast and caramel taste. A little tart. A light bitter aftertaste.

4.1 33cl bottle pours with a murky copper body that has gold hues and supports a tan head of foam. The aroma offers up citrus hard candy, pink grapefruit, berry like fruitiness, spicy wood and then a pleasing earthy black tea note. In the background are green leaf, lime and sort of funk notes. The taste starts with berry and tangelo and then quickly sweet pink grapefruit joints in. To midway it gets sweeter with slippery malts and then heading toward some pine hop bitterness and mild earthy black tea. Cool brew with balance and all of flavors meld nicely. Damn! I love To Øl.
3.1 Pours an orange-golden color with a white head. Very malty nose. Nearly no hop character on the nose. Heavy mouthfeel. Flavor approximates the nose. Some coal stove hop character does emerge.
