The traditional brewing process used in the production of Traquair House Ale consists of the following; 1. Traditional infusion mashing process. The wort is then drawn off and boiled during which process the hops are added. 2. The wort is now cooled and pitched with top fermenting yeast under controlled temperature. It is then fermented in oak over a period of seven days. The beer is then transferred into cold storage tanks or barrels and matured over a period of weeks. After maturation the beer is filtered prior to packing.

3.8 A 330ml bottle I brought some 4 years or so ago on a trip to Scotland, best before Aug 24. It pours a very dark brown with a white head. Aromas & tastes of dark fruits, caramel, vanilla, oak, chocolate, raisins, figs, hints of spice & sweet malt. Medium body. Dry fruity & malty finish. Excellent
4.0 Sweet aroma with dominant figs followed by a solid malty backbone with some caramel notes and (for me) undefined spiciness. Taste is dominated by the traditional scotch ale Malty profile, somewhat sweeter than others in the same style. The spiciness is More present in the taste, and figs lingers in the aftertaste. Perfect mouthfeel for a scotch, low to medium carbonation and full. Apperance-wise, very dark brown with small tan head that dissapear quite fast.
4.3 0,33 l bottle from Solna Systembolaget. Might be the same although 8,5% alcohol, very solid brew.
3.5 Pours clear dark amber with a three finger, light tan head. Aroma is dried fruit, roast, bread and wood. Taste is caramel and fig, moving to roast, wood and light bitter hops. Finish is the same.
3.7 330ml bottle. Dark burgundy with a foamy beige head. Flavors are dried fruits, banana bread, molasses, vanilla, licorice and dark chocolate with earthy and nutty notes. Medium body, soft to moderate carbonation, slick texture.
3.6 33 cl bottle poured into a Snifter. Slightly hazy amber colour with a thin off white head. Sweet aroma with caramel malts, liqourice, fruits, vanilla and oaked notes. Taste is sweet. Medium bodied. Dry and fruity finish. Nice wee heavy.
4.0 Friday, September 18, 2020. Bottle, 33cL. 7.2%. Gift from my dad ! Merci :) Home. A sparkling very dark brown beer with a medium beige head ; short retention. Roast, caramel, alcohol, fig, light nut, light banana. Medium round sweet, medium dry, warming background, light bitter. Good body, average thin texture, soft gaseous, round roast dry warming finish. Overall, great !
3.9 Appearance: chestnut brown, near to clear, one finger tall off-white head staying as thick ring. Aroma: caramel, toast, toffee, vinous and smokey, dried fruit, nuts, hoppy hints. Taste: Light sweet, rich malts, dried fruit, esters, vinous notes, light smoke, hop. Light to medium bitterness. Palate: medium minus body. Average carbonation. Overall: an ale for careful studying. Good.
4.2 Très beaux arômes pour ce scotch ale de 7,2% qui est agréable, fin et distingué. Je m'attendais seulement à une corpulence un peu plus poussée, tout comme la longueur ainsi qu'à un alcool un peu plus tonique même s'il est globalement appréciable. Le visuel est sur un brun limpide, sans mousse. L'effervescence est peu marquée. Très joli nez sur le raisin, le candy, la cannelle, l'écorce d'orange et le cognac. L'attaque est en deux temps, avec en premier lieu la fraîcheur de l'amertume qui laisse ensuite place au malt, plus riche et avec des arômes épicés qui viennent s'ajouter à ceux présents au nez. La texture très fine n'a toutefois pas ma préférence. La deuxième bouche voit l'alcool prendre un peu plus d'importance, faisant honnêtement ses 7,5% mais qui aurait mérité d'être un peu plus tonique. L’arrière-bouche est plus épurée, davantage sur l'amertume et des arômes de fruits mûrs et candy. Le final, quant à lui manque de flamboyance tout en restant agréable, sur le malt. Belle symphonie, pas entièrement achevée, mais très mélodique.
3.6 Taken while wrapping up the evening of chapter 2 Out of the Abyss, the party went a bit awry when they saw a group of Hook Horror Spore Servants, it didn’t go as planned. A nice strong wee heavy, lacked a wee bit more caramel/sweetness to it. Still, worth the try.

3.5 0.33 l bottle from Vrutak. Shared with little Dina. Deep dark amber to brown color, small beige head. First impressions are malts, wood, light smoke, light metal, cherry and dried fruit. Cherry prevails giving out lots of fruity character in the aroma, even cherry brandy. Caramel emerges. Body rather thin, not too sweet, dose of caramel. Wood, alcohol, malts, syrup. Good balance, nothing overwhelming. Warming. Fruity. Slightly boozy, moderate carbonation, moderate finish.
3.8 12/4/2020. Bottle fro Beers of Europe. Pours mid-brown with a lasting off-white head. Aroma of toffee, malt, brown sugar, wood, bread, golden syrup and molasses. Medium plus sweetness and low bitterness. Medium body, average carbonation. Sweet caramel finish. Warming alcohol finish, enjoyed this.
3.4 Bottle (1 pint 0.9 oz.). Pours ruby-brown with light tan head. Light roasted malt and toasted bread notes. Light roasted malt with chestnut and chocolate notes; brown sugar and raisin follow. Lighter body and flavor than expected. Short finish.
4.0 Dark brown with a very thin head. Fruity smell of berries. Agreeable malty taste with a strong raisin and a weaker chocolate note. Low carbonation.
3.9 Bottle, served at 8 degrees in a tulip glass. Pours a clear amber, topped by a finger or so of off-white, lacy foam, with moderate retention. Nose is subtle in oaky notes and toffee, but the ethanol comes through sharply. Taste is liquorish, half-sweet toffee and subtle oak. Malty brew with a nice mouthfeel. Unfiltered must be killer.
4.0 Bottle@Kahdet Kasvot, Tampere, Finland. Medium, balanced nuances of dryish plums and prunes, some bourbon like notes. Medium taste spectrum and medium aftertaste with classy dark fruits. 3.4 Copenhagen 30/10 2019. 33 cl bottle from Voldby Købmandsgaard (web-shop). Classic looking label with a old castle. Presented as a “Potent Liquor as brewed by the Laird”. Sounds inherently Scottish. Pours clear deep brown with a red hue. Small off-white head. Settles as thin patch of foam unable to cover the surface of the beer. Aroma is dark, sweet and boozy. Dark, fermented fruit, plums and prunes, light salty licorice, sugar. Hints of lightly smoky peat. Light carbonation. Slightly thick, oily texture. Flavor has a strong sweetness followed by a lighter saltiness and light bitterness. Aftertaste is sweet leading to a boozy finish. Dark, strong and Scottish. As it should be.
3.5 Pours a deep but still clear brown, with amber hints if seen through light. Low-sized off-white head shows good enough retention and lacing. Soft-sweet, not very intense aroma of caramel and dried/red fruits, with some oak hints. Taste shows a caramel malts base, with some hints of chocolate; dried/red fruits as per aroma; a delicate underlying oak and liquorish feel. Highly sweet but definitely not over the top. Overall delicate but surely well crafted. Medium bodied with low to medium, delicate carbonation, resulting in a semi soft, semi smooth feel. A well made scotch.
3.7 Acheté à la SAQ du centre ville de St-Hyacinthe. C’est une belle rousse très foncé avec une faible mousse beige peu tenace. Au nez, c’est liquoreux avec des touche de bois de chêne. En bouche c’est très complexe. On retrouve du bois de chêne, un peux d’épice, des petits fruits et une très longue finale parfaitement amer rappelant le chocolat noir. Très bonne bière de dégustation.
3.8 Butelka 330ml. Ciemny ,mahoniowy kolor z delikatnym rubinowym refleksem. Piana beżowa,średnia,opada dość szybko. W aromacie susz owocowy,rodzynki,karmel,słód. W smaku podobnie,słodkie nuty suszonych owoców,rodzynek,fig,daktyli. W tle ciemne owoce leśne i czerwone jagody,wanilia,karmel,"beczkowe akcenty". Wszystko raczej słodkie z delikatną goryczka na finiszu. Alkohol dobrze ukryty.
4.2 The Aromas are lots of dark malt, tree bark, a little dark ripe fruit and a hint of Peat. Flavors are like nose, sweet up front but with good carbonation and a little bitter to balance. This smoke seems to be a little milder than it was in years past and it was never very prominent to begin with. Great balanced Scotch ale.

4.0 01.06.2019 - a bottle from Beers of Europe, drunk at home in Taipei on my return home from leave. Aroma: yeast, fresh laundry. Appearance: opaque dark brown, one finger tan head. Palate: medium-bodied and slick, soft carbonation, long and lingering bitter finish. Taste: medium bitter, port wine, vinous fruits, vanilla. Good stuff.

3.8 A parte la storia e tutto il resto è un'ottima birra secondo me. Color tonaca di frate. Liquorosa. Sapore intenso, di botte, caramello e frutta sotto spirito.
3.8 En copa, cerveza color caramelo oscuro con una fina capa de espuma blanco hueso. Aroma a cereales, licor, notas ácidas y astringentes, frutas maduras, caramelo, regaliz y algo de café torrefacto. En boca, textura ligera y licorosa, de carbonatación media y amargor suave. Presenta sabor intenso a licor (7.2%), avellanas, cereales, caramelo quemado, regaliz, café y frutas secas como higos. Una Scotch Ale curiosa, licorosa y de sabor intenso. Recomendable.
4.0 Pours dark ruby brown, no head. Aroma is caramel, toffee, freshly cut apples, figs, sweet poppy seeds, dried plums. Flavor is dark fruits, caramel, toffee, plums, coffee, mild liquorice, berries. Smooth with a pleasant fruity sweet aftertaste.
