IPA Primitif– Ever had an extremely hoppy sour beer before (sour, as in Lacto… Bretta does not create sour flavors)… The answer is NO! You have never had a super hopped sour beer, because the microbes that make the ’cheek puckering sour’ are extremely sensitive to hops! We’ve figured out a method to get around these sensitivities and developed a 100 IBU brew fermented with Lacto and Bretta, aged in barrels, and then dry hopped.
This Third installment in our Office Space themed ’Case of the Mondays Series,’ uses a unique double fermentation (warm with Lactobacillus delbrueckii in the kettle then cool with a special Bretta). This sour/wild beer is extremely hoppy, barrel aged, and dry hopped. Focus of this beer is decidedly fruit (think ruby red grapefruit), from the choice to use mosaic hops, citra hops, Amarillo, coriander, and tangerine zest.

3.9375 ml bottle. Pours a cloudy golden yellow colour without a head. Aroma of fresh grapefruit, some herbal notes and sour berries. Flavour of crisp citrusy bitterness, lemon zest, sourness, a bit of grainy malts and grass. Light bodied. Very crisp and refreshing. Great.
3.7Bottle. Gusher! Turbid dull orange with a lively head. Aroma of grapefruit and sour yoghurt with funky undertones. Juicy and acidic, sour and hoppy as promised! Woody undertones, imparting kind of a dirty quality that I thought took away from the zesty focus. Finish is sour and dry. Really good.
3.3(750ml bottle) Pours a clear copper body with a medium off-white head. Aroma of pink grapefruit, vinous, melon rind, barnyard, lemon, and tangerine. Flavor of grapefruit, white grape, coriander, tangerine, peach, and brett with a moderately dry finish.
3.6Bottle at BrewDog Malmö. Hazy golden with a white head. Aroma and taste of citrus, funk, light oak and some grass. The finish was tart and rather dry. A good one.
2.5I'm not a hop head so I was a little concerned about this, but honestly the lacto balances the bitterness.
4.0Bottle. And, it was a gusher. And, I really wish they wouldn’t dip the cap in wax. Cloudy yellow with a small white head that soon fizzes away. Aroma of sour citrus and some barnyard funk. Taste highlights mixed sour citrus with complex grapefruit, tangerines, papaya and lemons. Bready malt base is way in the background. Palate is medium, finishes long and mildly sour. Overall: This is the third sour I’ve had from Trinity and each one is a winner. I will not hesitate to try anything these guys conjure up . Also, these are a very good value at only $7.00 per bottle. Paired well with a cocoa encrusted Italian cheese.

4.3Just reading all of the stats and specs on this beer was convincing to say the least. What a fascinating beer, even before trying it. Draft 12 oz pour at Brouwers. Rating #1999. A year that reminds me of Austin Powers every time I think of it. Awesome tap handle/ bottle by the way. Dark orange pour with a mountain of foam head. Aroma Isa semi sweet and sour orange fruit, which is a fragrance I would pay for in itself. I love these hybrid styles. Has its hop profile, but complimented by a sweet peach, tropical fruit, and a solid sour backbone. So easy to drink. Lingering palate of sweet tropical fruit and hop bitterness. Standout beer for sure. Excellent stuff.
3.3Bottle @ Steasy’s. Thanks for sharing! Amber pour with a small head. Nose is fairly tart and fruity. Cran-raspberry juice. Funky red fruit skin. Mild acetic sharpness. Flavor is similar. Lemon tart. Cranapple juice. Active carb. Fairly clean flavors. OK.
3.7Bottle at Monks. Hazy gold pour that got more cloudy the further down the bottle. Short fizzy top that dissipated quickly. Very tart. Very jammy. Lots of citrus hops. Grapefruit marmalade. Golden plums. Apricots. Pinecones. Big juicy sour. A ton of flavor in such a low ABV brew!
4.2Nice surprise here and a new favorite Trinity beer. Big jammy hops with lots of peach and apricot (ironically they make a peach apricot version) and a lot of funk and acidity. Opened up really nice to a bouquet of floral and fruity hops and a barn full of funk. High carbonation.
3.7From a 355ml bottle on 27/12/2015 (part of an early Xmas pack from the better half). Pours a murky dark golden with pretty much no head - lots of yeasty stuff settling on the bottom. The aroma is fruity, with some mild sour and zesty notes. In the mouth, there’ lots of puckering sour - lots of grapefruit, tangerine and lemon, with some orange and mandarin sweetness evident. While certainly hidden by the sour, you do get some hops, even if it will never be mistaken for a hop monster. The palate is slick and the carbonation prickly. This is actually a very good, nicely balanced sour beer - complex and refreshing. Wild/sour beers are not really my thing, so my rating is intended to represent some quite high praise.

Flavor: The flavor is a little funky, nicely tart / sour, with the spice and fruity notes on the finish
Palate: The body is light-medium, zero wateriness, tingly feel, and a somewhat dry close

Love the Office Space theme, if you took this beer away from me and moved my desk to the basement I don’t think I’d set the building on fire, but it is pretty good. Also, I’d be really pissed to be working in the basement. I certainly prefer this to Duality’s Boston Stapler beer because it doesn’t bind up as much.

Funk, tart, wood, white wine, yeast, biscuit, fruit, grape must and biscuit flavors. Medium light body and lively carbonation. Funk, grape must and tart finish.

Bottle: The aroma consists of light-moderate citrus, lemon, and a hint of florals. It’s a hazy golden-orange with a small white head that quickly fades to a minimal film outlined by a thin ring. The flavor starts with light-moderate tart citrus. The finish has moderate sour lemon, light lemon peel, and a hint of florals. It’s light bodied with light-moderate carbonation.

3.112.7oz bottle to tulip. Pours tangerine orange, white soapy head, dissipates immediately. Aroma of ripe peach, mango, tangerine with a sour wine bite. Taste is BAM! right in the cheeks sour. Chardonnay, pear, tangerine, citrus peel. Not much for malts, reads more like a fruit wine cocktail. Finish is a bit hoppy, but not enough to justify anywhere near 100ibus. There is definitely a lot going on here, but sour just isn’t my thing.

Tart some cherry and lemon, then some reasonable hop bitter and grass. Reasonable beer but just not my thing.
4.1Bottle. Aroma is super juicy with some fresh pulpy sourness and moderate brett. Leather, barnyard, ruby red grapefruit, tropical fruit, cherries, and oranges. Tastes very unique. A touch of juicy tropical and citrus up front but quickly turns dry, moderately sour, and a little bitter. Leather and grapefruit big time on the back end along with lime, salt, and coriander. Medium to full body. Really cool beer. Love the combo of sour fruit, brett, and hops. A must try beer.
4.11/2L red-waxed bottle from Whole Foods PM. Pours turbid golden orangy with minimal head and a lot of effervescence. Nose is very hoppy,bready, with yeasty funk, citrus, lemon. Tastes tart, with lemongrass, lactic tartness and funk, earthy, bready. Finishes tart, with lemon all around,grapefruit (ruby red), and a complex and smooth finish.
3.8Thanks to errl for sharing this bottle. Hazy golden pour with a white head. The aroma is very hoppy. I get some big tangerine and mango notes. The flavor is similar with some light brett and light tartness accompanying the juicy tangerine character. Medium mouthfeel and medium carbonation.

4.1Bottle at Torst. Chillhazy golden color. Really nice dusty and funky aroms of attic corners and barnyards. Taste is funky, dusty, peppery overripe tropical fruit. Very tasty.
