Née de la rencontre fortuite d’une stout forte et d’une fermentation d’abricots du Valais qui jamais n’atteignit l’alambic du distillateur auquel elle était destinée, notre Oud Bruin (flamand pour "vieille brune") est une interprétation assez peu orthodoxe de ses cousines belges.
Elle en garde cependant le délicat équilibre aigre-doux, entre une solide ossature maltée assise sur des malts, aux notes caramélisées, chocolatées, rôties et fruitées, dans laquelle vient se fondre le vin d’abricot avec son acidité lactique, ses notes de cuir et d’étable liées aux levures sauvages, et une discrète note d’abricot.
La finale est légèrement amère et le tout se déroule tout en harmonie sur le palais.
Une bière unique, d’une grande buvabilité mais joliment complexe, entre douceur, fruité et acidité. Elle se mariera avec l’agneau, le canard, les moules, les crustacés ou des fromages à pâte molle ou mi-dure.
Série limitée de 1.200 bouteilles de 75cl, 7.2% d’alcool/volume, 35 unités internationales d’amertume (IBU).

Born from the marriage of a strong Stout and fermented apricots from Valais, which were due for the distillation, our Oud Bruin (Flemish for "Old Brown") is an unorthodox interpretation of its Belgian cousins.
But as well it retains the delicate balance of sweet and sour, between a solid malty backbone based on malt, with notes of caramel, chocolate, toasted and fruity, in which the apricot wine blends with its lactic acidity, notes of leather and barn due to the wild yeasts, and a discreet note of apricot.
The finish is slightly bitter and everything goes in harmony on the palate.
A unique beer, with great drinkability but nicely complex, smooth, fruity and acidic. It can match lamb, duck, mussels, shellfish, soft or semi-hard cheese.
Only 1,200 bottles produced (75cl , 7.2% ABV, 35 IBU).

4.3 This is what I like my Oud Bruins to taste like. Syrupy, some Worchestershire sauce, and a lingering thick sweetness tempered by some funk. Bought at Beertopia in 2016.
4.4 My first brush with Trois Dames and one of the better Oud Bruins I’ve gotten to enjoy. Brown pour with a short-lasting head. Aromas of must (as in decay, not wine - that’ll come later), funk, earth, hay, dank wood, vinegar, and cherry. Flavors are complex and can be tricky to pinpoint at times. There’s a big vinegar note, but not like you might often experience in a sour beer. It IS acidic, but it’s got a vinous character that’s rich and nearly meaty. Almost like red wine vinegar or balsamic vinegar. Tart cherry taste, too - plenty of rotted and soured qualities to the fruitiness. It’s all finished by a dry feel. This Dame’s got class.
4.1 Pours a clear reddish brown color. Aromas of stonefruit, yeast, vinegar, and a touch of wood. Flavor is sour, yeasty, wood, with a tart sour finish.
3.4 Pours opaque chocolate brown with a fairly thick, though not long-lasting, tan head. Aroma features a strong note of sour fruit, pear, cherry, berry, and a little apple. Flavor is seriously sour - if you like your beers sour, you will enjoy this Grande Dame! Pear, apple, cherry and berry tones contribute to a taste that will make your whole face do the Sour Brown Shuffle. Mouthfeel presents firm, smooth body if not a lot of fizz. This one could have you speaking French even if you don’t know much!
4.0 330 ml bottle into tulip glass, no bottle dating. Pours fairly crystal clear dark reddish brown color with a small dense off white head with good retention, that reduces to a spotty lace cap that lingers. Light spotty lacing clings around the glass. Aromas of big tart raspberry, cranberry, cherry, red grape, apricot, green apple, hay, straw, brown sugar, toasted oak, light chocolate, red wine vinegar, light pepper/funk, and yeast/oak earthiness. Damn nice aromas with great balance and complexity of fruity/funky/acidic yeast, oak barrel, and moderate malt notes; with great strength. Taste of big tart raspberry, cranberry, cherry, red grape, apricot, green apple, hay, straw, brown sugar, toasted oak, light chocolate, red wine vinegar, vanilla, light pepper/funk, and yeast/oak earthiness. Light-medium fruity/acidic tartness and yeast/oak spice on the finish; with lingering notes of raspberry, cranberry, cherry, red grape, apricot, green apple, hay, straw, brown sugar, toasted oak, red wine vinegar, vanilla, and yeast/oak earthiness on the finish for a good bit. Damn nice complexity, robustness, and balance of fruity/funky/acidic yeast, oak barrel, and moderate malt flavors; with a great malt/tart/spiciness balance and zero cloying flavors after the finish. Light-moderate dryness form acidity as well. Light-medium carbonation and body; with a very smooth, fairly acidic, and light creamy/bready balanced mouthfeel that is nice. Alcohol is very well hidden with minimal warming present after the finish. Overall this is a damn nice Flanders brown ale style. All around great complexity, robustness, and balance of fruity/funky/acidic yeast, oak barrel, and moderate malt flavors; and very smooth and easy to drink with the balanced acidity. A very enjoyable offering.
3.2 Achetée au Beer Cellar a Waterbury en May 2015 et vieillie en cellier depuis. L’olfactif nous propose une belle complexité de fruits sur une base vinaigrée et tannique, aux tons de vieux cuir. L’abricot y est bien sur présent avec de légères notes de raisins secs, de prunes et de cerises de terre. Une immense mousse beige et rocailleuse se colle pendant de longues minutes sur le liquide marron et très opaque. L’entrée en bouche est très acidulée. On y perçoit un peu de boisé. La finale est également vineuse et légèrement alcoolisée. Présence légère de chocolat. La bouche me déçoit un peu. Les fruits de l’olfactif sont absents. Ne restent que le chocolat et l’acidité. Bof!

4.2 Very nice complex Flemish Brown. Rich, layered aroma of perfumes vinegars fruits malts. Flavor’s like nose plus good tang.
4.3 On draught at Edmunds Oast in Charleston, SC. Arrived to the table a deep reddish brown with a moderate tan head that lasted through the first quarter of the glass and laced the glass well. Very pleasant aroma of red wine vinegar, cherries, and plums. The flavor is red wine vinegar, cherries, plums and apricots with a lovely vinous character. Bright on the palate. The sourness is definitely present but not overreaching. Excellent.
3.5 Draft at Tria Taproom, listed as "Grand Dame Oud Bruin". Pours deep, opaque brown with a 1-finger bone-colored head. Tart cherry aroma mixed with woody and lactic sour notes. Medium body with a dry finish. Flavor of tart cherry with a lactic sourness. Woody note too.
3.9 On tap at Engine House No 9, pours a deep dark brown with a large beige head. Aroma brings out dark tart cherries, some balsamic vinegar, and leather. Flavour is along the same lines, with notes of leather, tart dark fruits, some acetic / vinegary notes, and a little tart cherry. Cohesive, complex and well-refined. Excellent.
4.1 Draft - Soured dark malts, cherry and wood. Jet black with a rich light brown head. Chocolate, cherry and nice tartness. Really nice.
3.8 bottle @ Party Source / Bellevue KY --- Cloudy brown color, heavy beige head that slowly drops to a cover, a few lace dots. Aroma of sour grain and sour fruit. Taste is both tart and sour grain that adds a little berry and prune on the swallow, maintaining the sour through a full-bodied, lingering finish. An excellent example of an Oud Bruin.
3.9 Tap at CBF. Some saison aroma, but lots of bruin. Nice sour taste, and quite dry. Beautiful!
3.6 How: Bottle, as Trois Dames Grande Dame. Where: Systembolaget. Appearance: Amber colour with a small off-white head. Aroma: Raisin, grapes, fruit, vinous, a bit sour. Body: Medium body and carbonation. Flavour: Berries, raisin, grapes, vinous, some vinegar, caramel, tart.
3.8 Poured from a 750ml bottle. There is a big apricot character, dried apricot. The acidity is balanced against the maltiness. A very interesting interpretation of the style.
3.8 11.2 oz bottle pours hazy brown with a thin tan head. Aroma of raisins, brown sugar, vinegar and malts. Taste is dried fruit, tart and sweet.
3.5 Bottle. Pours a deep rust-hued brown body with a small off-white head. Nose is raisins, mild balsamic, dark fruits and hints of wood, apple vinegar and rose water. Taste is sour lactic tones, leather, balsamic, raisins and hints of lemon juice, grains and apricot. Medium body and high, near-fizzy carbonation. Original and rather nice, though somehow not quite my cup of tea.
4.3 Smells like sour figs. Chestnut brown with a light brown red head. Surprisingly woody with an underlying tart. Dry woody rolls to a charcoal roast carried on a tart platter.

Aroma has brown sugar, berry, red wine, hint of vinegar; red brown color; flavor is acidic and funky with undertones of red berries, currant, cocoa powder, cherry, oak, red wine vinegar, and caramelized malt; Medium bodu, very carbonated (too much); interesting, good, seems fairly typical of the style.
3.6 Deep brown pour the nose is very acetic and tart. A bit of light cherry and some nice fruit. Bright and a little bit woody. Really rich and tasty.
3.6 11.2 oz bottle from The Party Source. Pours a dark cola brown color with a large fluffy khaki colored head. The aroma and flavor have tart sour fruit, apricot, berries, some acidity, some funk, background roast, cherry, wood, some faint spicy character, interesting beer.

3.4 Not worth the price tag. Which wasn’t displayed BTW. Pours a dark iced tea colour. Sharp metallic vinegar aromas, red wine, cherries. Sour and oaky. A touch of sweetness. The finish is a little thin and watery.
3.3 Bottle of Grande Dame at olbutikken. Pours a hazyish brown with a small off-white head. Medium sourness with aromas of cask wood and tiny spicy hints. Medium bodied. Soft carbonation. Dry and slightly sour finish.
3.9 (draft @ Avenue Pub - New Orleans, LA) Dark brown pour with a thin tan head. Fruity aroma with a definite funk undertone. Big funky and tart flavor at the start with a light and subtle fruit sweetness under that. Dry, tart and funky finish. Quite nice.
3.8 Flaska från SB. Brunmurrig vätska som drar lätt åt rött. Lätt doft av grönmögelost och när temperaturen stiger allt mer aprikos. Tydlig aprikossmak, skal, fruktkött och kärna, söt och syrlig, mjuk, lite kärv träig och med en lätt grönmögelost ton i bakgrunden. Riktigt trevlig.
