4.2Sept. 11, 2014. Bottle from La Trappe restaurant in SF. Served at 60C. Ruby red colour, finely bubbled white head. Strong aroma of sweet cherry. Lovely smooth cherry flavour with characteristic Unibroue yeast flavour. Quite lovely on a cool autumn evening in front of a fireplace.
3.7"this was a weird one. drank it both cold and hot (better cold). there’s cherry in the aroma and flavo, even dominant, but theres a lot of sweet malt, sugars, and tons of dark fruit and spices in there as well. Definitely toeing the line between a cordial and a beer. Not what i was expecting, but quite unique and enjoyable. Possibly the oldest beer I’ve ever had. Sampled 5-7-09, bottled in 2002! you can tell this beer is different by the range in scores
3.7Bottle at home from backlog notes 07. Pours a slightly hazy dark reddish color with a small, disappearing pinkish head. Not much carbonation. The aroma and flavor have sweet cherry fruitiness, additional berries, mild spices, hints of caramel, slight tart, oak, yeast. This is a solid fruit beer that I have yetto try warm.

4.3It has a hazy, reddish brown colored body with almost no head at all. There were just a few small, light tan bubbles around the sides of the glass. The aroma is light with a modest tea like herbal hops and chopped up fresh cherries in the nose. The flavor has a mix of sweet, sour and tangy fruits and spices that reminds me off mincemeat pie filling with a warming brandy flavor note. Hop flavor is mild and herbal. All these flavors mix and mingle nicely on the tongue within a smooth and slightly sticky full body. This beer has a very deep interesting flavor and a wonderful full body that made for a nice slow sipping after dinner treat.
4.1Bottle. Tart black cherry and molasses malt aroma. Dark orange-brown with small head. Sweet black cherry, cinnamon, and caramel malt flavor. Mildly bitter herbal finish. Supposed to be drunk hot but it’s 90 deg F (32 C) out so screw it.

3.6Bottle - Vintage 2006 - Rich deep cherry with some dark sugar. Cloudy copper with a thin head. Thick and spicy, almost Worchester sauce, with light cherry notes. Interesting and rich.
3.9Cloudy orange pour with reddish tinge and no head. Aroma of yeast, cherry and malts. Taste of malts, sweet cherry, slight caramel, faint yeast and tart citrus. Full bodied, no carbonation, very smooth. Sweet and tart at the same time and wonderfully balanced. Had chilled first and then tried hot, preferred chilled but pretty awesome both ways.
3.1Appearance: dark amber almost brown beer, cloudy, pours with no head
Aroma: intense cherry, tart, very sweet, spice, maybe cinnamon, licorice, pumpkin, the more you smell this beer the more you find, very complex
Taste: sweet, cherry, tart, syrup, maybe some sourness
Palate: soft carbonation, thick mouthfeel, cherry aftertaste
Overall: probably not something I’d want to drink again but very interesting, it’s a little too syrup like for me, definitely the most sophisticated fruit beer I’ve had to this point
3.22013.01.25-Unibroue Quelque Chose - bottle marked Best Before 31-12-2025.
Appearance: Pours like a dark copper that has been tainted by red. Little to no head, but my bottle is over 1yr old.
Aroma - dark, black cherry.
Taste: as you expect, dark ale and cherry/black cherry.
Palate/Mouthfeel: pretty light mouthfeel. Little carbonation. Like a flat black cherry soda.
Overall: Does what it says on the bottle. This is a nice cherry ale. Probably better than Three Philosophers. In the ballpark of Kasteel Rouge but much better. Worth an occasional purchase.

3.5Bottle. This is one of the best fruit beers I have ever had. It has a real wallop of sour cherry flavor.
3.4Bottle. Pours a reddish color with a small off-white head. Has a fruity malty spicy cherry aroma. Sweetish malty spicy fruity cherry flavor. Has a fruity sweetish malty spicy cherry finish.
4.6(Dégusté la moitié de la bouteille froide et l’autre moitié chauffée aux alentours de 70 degrés) - Bière d’un brun rougeâtre qui rappelle le whisky. La mousse est absente, si ce n’est de quelques bouillonnement négligeables. La Quelque chose est limpide, mais sombre. Au nez, la version chaude offre un parfum sucré de gâteau aux cerises. Lorsque froide, une odeur posée de raisins et de cerises avec une timide dose d’alcool. L’arôme rafraîchit et fait penser, par moments, à une bonne sangria. En bouche, la version chaude présente du raisin et de la cerise en nous laissant avec un agréablement picotement en gorge. La version froide propose une amertume idéale, elle est moins sirupeuse, mais semble plus sucrée. Au bilan, l’expérience est irréprochable – une grande bière!

A: Ruby red color. but zero head.... my bottle is flat as a pancake.
T: more winelike than beer. Lots of spice and a bit of fruit. Almost like a christmas ale or so.
P: No carbonation to hide any of the flavors. huge spice note. bubblegum. spice finish. it’s ok.
Overall there are some interesting things here, but the lack of carbonation (whether it be intentional or an accident) really takes a lot away from this one. It lacks a crispness that would make the spice really shine.
3.7750ml bottle (room temperature) - pre-pour thinking: this is going to explode all over my desk like most Unibroue beers. Wow! nothing happened. Smells like Dubble Bubble gum. Pours like a liquid red grape with huge bubble that disappear. Nose is cherry, currant, and all around "berry" - Platonically speaking: a lower form of berriness. Through metonymy, I’m think NyQuil cherry flavor and I hope I don’t puke soon. Shh, the secret ingredient in a Flaming Moe is cough syrup. My gums are stinging. The cherry aftertaste is quite pure. Ya quelque chose de sinistre la dedans: c’est comme si les cerises cachaient du sang. C’est presque le crime parfait car il y a un soupçon. Tart and sweet. interesting and "heady" as the credit card hippies called the more expensive "stuff" at Red Rocks back in the Summer of 2001. PS: I had it warm as well and it made the booziness more apparent and also reminded me of December in 2001 when I was in Strasbourg (FR) for the Christmas market. I had an awesome waffle with powdered sugar and a cup of warm red wine. man it was cold that night. Frank Booth would kill 2X if he had this beer warm.

3.7September 2010. Bottle. Cherry and spice aromas. Redbrown color with an offwhite head. Flavors are more cherry, syrup, sugars and spice. Good beer, but one is enough.
3.8This gets high marks for acknowledging the beer for what it is: complex and unique. Could I have more than one a year? No. The cherry and other tart fruits is what hits your nose. Maybe some wood as well. The color is a deep ruby or cranberry. No head or carbonation on this one. The taste was in between wine and cider. Cherry that verged on cough syrup were it not for the sweetness and other flavors. Some spice and more wood with a little alcohol. Well done but best saved for special occasions.
3.8Cherry juice anyone? Deep, full cherry flavor in a dark red beer with almost no carbonation (cork will not pop easily). What impressed me most about this beer is that it has a quper rich flavor and a godo bit of alcohol but it’s not sticky or syrupy at all. In fact, it’s quite drinkable.
Good stuff.

Goût fruité (sirop de cerises, notes de cerises sûres) lors de l’entrée en bouche auquel se rajoute un petit goût épicé (cannelle, notes de clou de girofle) puis en finale l’on retrouve des traces boisées et de vanille. Post-goût moyen, très légèrement sûr de fruits (cerises sûres) avec des petites notes épicées. DÉGUSTATION CHAUFFÉE : Nez fruité (cerises sûres, notes de cerises sucrées) et assez épicé (surtout de cannelle, léger de clou de girofle, traces de muscade) englobé dans des vapeurs d’alcool. Moyennement ronde en bouche avec un pétillement moyen-doux ainsi qu’une texture moyennement sirupeuse. Goût fruité (cerises sûres, léger de cerises sucrées) avec un goût épicé piquant (cannelle, léger de clou de girofle, notes de muscade) lors de l’entrée en bouche suivi rapidement d’une légère chaleur d’alcool avec des notes de sirop de cerises puis en finale l’on retrouve de faibles notes boisées. Post-goût moyen-long, composé d’un goût fruité aux notes sûres (cerises) et d’épices. (2005). Rating basé selon ma dégustation chauffée, comme indiqué.

S - Sweet caramel and dark caramel malts, sour cherries, other dark fruits, vinegar, some Belgian yeast.
T - Sweet caramel and dark caramel malts, sour cherries, and other dark fruits, acidity, some Belgian yeast character.
M - Medium bodied with low carbonation. Smooth and a bit thick with a sweet and lightly sour finish.
D - Nice fruit beer. Could use a bit more carbonation, however the flavors are really nicely balanced.

4.7Dégustation à 65 degrés d’une bouteille datant de plus de 10 ans (août 2002) ; saveur puissante et légèrement sûrette de cerises, cette bouteille avait vieilli à la perfection, assagie et savoureuse. Sucrée mais merveilleusement balancée.
4.2Bottle 750ml. [2009 Batch]
Almost not "pop" at opening. Pours brown with red notes. No head. Aroma is of cherries, fruits, spices. Taste is of cherries, sweetness, sligth tartness comes in the end. Palate: Medium body. Overall: [Temperature notes: I drank this beer several times, at different temperatures. I’d say it’s at it’s best hot. Pretty enjoyable over-cold in the summer as well. Not as much interesting at room temperature.] Very good. My kind of fruit beer.
3.3Pours a reddish brown. To the unknown eye, could be mistaken for a raspberry iced tea. Virtually no head at all. Murky. Aroma is full of tart cherry and cinnamon. Taste is more of the same plus touches of medicinal cough syrup and evergreen spruce. Different to say the least, don’t drink this if you’re in the mood for "a beer". This is more reminiscent of a spiced dessert wine. Overall though, enjoyable if in the mood for something different.

Uts: klar, kobberfarget med rødskjær, ikke noe kullsyre eller skum.
Duft: kirsebær, syrlig og alkohol, noe mandler.
Smak: tynn munnfølelse, mye kirsebær, lite annet. Kort ettersmak med noe snerpende kirsebærstein.

Aroma: Not a huge suprise here :) Lots of cherries, spices, vanilla and a rather vinious feel to it.
Appearance: Cloudy deep red, low carbonated and hardly any head
Taste: aroma and taste play very well together. The perfect balance of sweet and sour. Leaves on impressed and wanting more.
Palate: The taste does vanish quit quickly from the palate, this is no drawback by any means seeing that it at not point becomes to much/overpowering.
Overall: A perfect hybrid between a lambic and brown ale. A new stable among my favorites.

Pours clear amber with a small off-white head. Aroma has notes of malt, cherries, raisin and spices. Taste is medium sweet and light sweet. Body is medium, texture is oily, carbonation is flat to soft.
