Upland Persimmon

(Previously labeled Persimmon Lambic). Persimmon was the first sour beer we brewed to use a fruit from a native North American species of flora, the persimmon, which is also a popular Midwestern delicacy. Persimmon is a fruited sour ale where the distinct characteristics of American persimmons are melded with a mildly tart base of sour ale. Fresh aromas of persimmon, pear and peaches accompany the light straw color. Lactic tanginess, field flavors, and dry fruits create a refreshing and experiential taste. The finish is very dry, with lingering persimmon flavor.

(Old description) The persimmons were provided by Aaron Persinger, a local singer/songwriter who is currently the drummer for Rev. Peyton’s Big Damn Band. (The Rev himself is a certified Persimmon lover I’ve been told, can’t wait to get him a bottle). Being a classic Indiana fruit, we couldn’t resist, maybe one day we’ll find enough local mulberries and bring another (as far as we know) first-ever fruit lambic-style to the lineup.

3.6 From a bottle at the Wicked Weed Funk Asheville Fest 2015. Pours a hazy pale gold with an off white head. Fruity nose. Intensely sour finish.
3.6 From old tasting notes. 750 ml bottle. This one pours a lightly hazy peach color and crowned by a small head of white foam that slowly settles to a thin film. The aroma shows notes of persimmon and light stone fruit along with some barnyard funk and sourness. The flavor follows with more of the stone fruit and persimmon to go with some lactic sourness and a touch of bitterness on the back end. Medium bodied with balanced carbonation that leads to a fruit forward finish. Pretty good stuff. I would like to try a more recent batch as this one of the first batches released.
1.8 Pours a flat hazy orange golden color with no head. Nose is acetic with glimpses of tropical guava and citrus. Palate is pure vinegar with absolutely no redeeming qualities. throat burning, bile and vile.
1.5 750ml bottle pours cloudy dull neon orange with zero carbonation. Nose is sharp acidity, a hint of funk, vinegar. Taste is 100% acid. Burns the mouth and throat. Vinegar. Maybe a hint of orange candy and tropical citrus on the finish but I’m not about to drink more than a couple oz’s of this to find out. Literally painful to drink. Horrendous.
3.3 Bottle. Pours murky orange, small head. No retention, lace. Aroma of funk, citrus, lemon, acetic. Taste is sharply sour, tart, lemon, vinegar. Palate is dry, tart finish.
3.7 sampler that poured a lightly cloudy yellow with white head..all I can say is pucker up buttercup. very nice nose of fruit, brett yeasty light malts. the flavor makes you salivate. great persimmon fruit flavor tangy acidic sour funky mess of goodness. balanced throughout. no wonder people are after these lambics.
4.1 This was fantastic. Puckeringly sour. Intense with a touch of like a kiwi fruit sweetness to balance it if ever so slighty. Fabulously sour. Thanks cards04 for the sample.
3.6 Bottle, thanks cards04. Pale cloudy yellow, like lemon juice. Aroma is sour lemon with a touch of banana and pineapple. Flavour is very sour and fairly salty, lots of lemon and again hints of banana and pineapple. Sweeter as it warms. Too salty but quite flavourful.
3.5 Pours a light hazy yellow. Aromas are citrus, white wine vinegar, floral. intensely sour.. Vinegar, white wine, pickle juice. It’s good.. Maybe too sour for me.
2.2 Bottle. Pours like cloudy lemonade, almost no head. Aroma is nail polish, burnt rubber, sweet tarts, peach, lemon, bile. Not good. Taste is sour lemon, rotten melon, butter, white vinegar, oak. Pretty lousy stuff, sad to say.
3.6 Bottle thanks to Drewface. Nose is spicy, fruity, peppery. Pale yellow color with minimal head. Taste is strong sour. Not most sour upland, but still sour.

3.9 Bottle. Lots of persimmon aroma, very fruity - fruit juice, light acidic notes. Big tartness and acidity, lots of apple like juice flavor, persimmon, finishes dry from all the tartness and acidity. Not quite as sour as other uplands so a little more balanced.
3.4 Bottle. Homer tasting. Pours hazy yellow, small fizzy white head, dissipates quickly, minimal lacing. Aroma is nail polish, funky, apple. Flavor is full on sour, lightly funky, adults and a bit of nail polish. Light body, light carbonation.
4.3 Bottle. Hay-colored and cloudy, with one finger of pure white foam. Nose is intensely funky and floral, with hay, lemon pith, dried flower petals, lavender, persimmon. The flavor melds citrusy persimmon with floral honey, almond, wheat and hay. Striking acidity, good balance. Very nice.
4.0 Refrigerated 75 cl brown bottle from queenholly, bottled on Febuary 26, 2014, corked and capped poured into a glass. Aroma is acidic, medium body, medium carbonation, and little lacing. Taste is rich tart persimmon, sourness, lemon, and some oak. Lots of flavor, quite intense sour, fantastic, thanks queenholly.
3.7 Bottle sample. Poured hazy yellow color with an average frothy white head that lasted with very good lacing. Good tart & sour aroma. Medium to abundant body with tingly texture and soft carbonation. Moderate sour fruit flavor with a solid fruit and small alcohol bite finish of moderate to long duration.
4.0 Bottle during upland share. Light yellow pour with white head, tons of fruit sediment, not even a bottom of the bottle pour. Nice tart fruit, persimmons I presume. Light fruit, mild tart flavors.
3.7 Shared bomber. Pours a cloudy pale gold with a small white head. Aroma of fruit and funk. Taste is tart persimmon (?), funk, and wood. Nice tartness. Enjoyable.
2.8 Bottle, courtesy of a kind soul... shared in a location remote of my dining room. The beer pours a very hazy sort of peach color with a a small head that fizzes out fairly quickly. The aroma is acetone, vinegar, lemon, and oak. The flavor is aggressively sour with loads of tart fruit character, and unfortunately loads of balsamic vinegar character to it as well. As it sits in the glass some lemon rind character becomes a little more evident, but it’s hard to get around all that vinegar. This really doesn’t taste like a lambic. It’s not all bad, but man... not my thing at all.
3.7 750mL bottle, pours a cloudy blonde with no head. Aroma is hugely fruity, with loads of bright persimmon – wow, this is hugely fruity. Flavour is hugely fruity as well, with loads of persimmon, a touch of funk, and more fruit. Others in this tasting are getting acidity on this, but I’m not really getting it. I love persimmon and I love the way it’s used in this lambic. Not a lambic, but this is very nice.
3.9 At Justin’s house warming party. Aroma is light nail polish, citrus pulp tart. Taste is peachy, acidic, citrus lemon. Finish is tangy and tart.
3.6 Bottle: Hazy yellow with a small white head. I get a little burnt plastic aroma under the persimmon...but not enough to be off- putting. Vinegar/persimmon/lemon taste. Very tart.
1.7 This poured a hazy orange with a white head. Aroma was of rotting vegetables, lemons and nothing else. Flavor was huge acetic.spur, with a nice background of vomit and rotten tomatoes
3.1 Bottle shared thanks to charule. What is up with these guys being so darn sour all the time. Aroma is like citric acid and persimmons. Super sour taste hides all flavors. Taste like a sour warhead. Too much, Upland, too much.
4.1 750ml bottle in a tulip. Pours hazy golden with a white head. Aroma of sourness / funkiness, pale malts, light persimmon (maybe? I don’t know this fruit), light oak, and hints of spices. Flavor the same with a nice sourness and fruitiness. Average texture. A very good beer.

4.0 Bottle; Pour is murky light golden, like grapefruit juice, with a modest white head that quickly hazes this glass - It’s not the prettiest brew for sure. Full Disclosure : I’ve never had a persimmon - but there’s a dominant aroma note that must be persimmon : I’m a fan already. Light Candied sugar, citrus zest, persimmon flesh (presumably). This is a standout for me already for the series. The flavor profile is initial heavy sweettart, moving to persimmon sweetness, zesty lemon, with a lingering sour finish on the tongue. Bravo
4.0 Generously shared by one of the fine Portland RB folks at a tasting - Pours murky yellow / orange with a white head. The aroma has fleshy persimmons, tartness and a bit of richness. It has a medium / rich body with fairly soft and smooth carbonation. The flavor starts off with rich juiciness, fresh persimmons that are almost fleshy and nice (not overwhelming) sourness. The finish is tart and nice. Struck me more as a sour ale than a lambic, but it was very enjoyable.
4.0 Bottle - Big persimmon fruit and some funk. Pale hazy yellow with a frothy head. Juicy then watch out for the tartness. Great fruit, crazy tartness.
