Victory St. Victorious Doppelbock

Victory St. Victorious Doppelbock

From the tradition started by the monks of St. Francis of Paula in 1634 comes this warming beer of rich heritage. A dark, rich lager of sublime complexity and character, St. Victorious is created from multiple German malts. Laborious decoction mashing yields the choicest elements of the malt. Long, cold aging mellows the strong temperament of this subtle beer. Celebrate the end of winter with a warming draft of St. Victorious Doppelbock!

3.9 On tap at brewpub. Amber pour with white head. Smoke, caramel, citrus, pine. Medium sweet and bitter. Medium bodied. Light crispness. A little sticky. I liked this quite a bit more than I expected to.
3.2 Draft at Good Beer NYC. Pours brown with a khaki head. Doesn’t leave much lacing. Lots of caramel on the nose and tongue. Hides it’s alcohol fairly well. Solid.
3.8 Tap at Maltitude. Clear brown with thin white head. Aroma of roasted coffee and malt. Taste of roast, coffee and malt. Medium bodied. Very good.
4.3 Bottle. Very satisfying. Hoppy aroma, average carbonation. Well balanced mouthfeel; good but not overwhelming hop flavors. Slightly bitter finish. Very drinkable; belies its high ABV.
4.0 caramel sweetness and a bit of syrup this brew is good in roasty malt flavor and aroma. a bit of flower and ivy with citrus hop for measure. some red fruitiness not overdone and still very traditional in style. good stuff.
4.0 bottle--aroma is roasted malt, faint floral hop taste--,carmel toffee notes, roasted dark malts. Some sweetness, dark fruit as well. I really like this style, this brew is right on target.
3.3 On tap at Joe Canals West Deptford. Appearance: The body is crystal clear with a beautiful copper hue. The head is tan with a decent size, but rather poor retention. Aroma: Burnt caramel comes to mind first with a hint of fruit that I can not pinpoint. Taste: Taste of burnt malts is throughout with caramel, and fruity notes that get stronger by the finish of either red apple or raspberry. The finish is quick and dry. Palate: Medium bodied with light to moderate carbonation. Overall: This is decent, but the burnt flavors overpower the rest.
3.6 From tap at City Tap House. Pours cloudy orange to amber with a fully gone head. Aroma is toasted malty and light caramelish. Mild bitter, toasted malty and slight caramelish. Lingering roasted malty finish.
3.6 Draft at lucky lab. Pours clear reddish copper with minimal head. The aroma has some smoke, caramel, light floral notes. The taste has a big smokiness and some hickory, smokiness. Nice!
3.5 On tap at the Thirsty Monk. Dark copper color, with a small, beige head. Caramel, syrup, earthy hops, and some pine. Faint notes of smoked meats. Very sweet at first, with a rather forward hop bite toward the finish. The result is a nicely balanced, sweet, bitter, and spicy flavor. Medium to heavy body, with a lively mouthfeel. Overall, this is a very good American Doppelbock. Nicely hopped, without overwhelming the malts.
4.3 Medium brown in the glass. Aroma of chocolate malt and toasted grain. Very smooth on the palate with rich chocolate malt flavor. Slight smokiness. Wonderful.
3.7 Dark brown body, chestnut highlights, thin pale tan head, minimal lacing. Dark malts, raisins, caramel, toffee, nuts and smoke. Medium to full bodied, gentle carbonation, light earth in the finish.
3.4 had this on tap. Dark color, nice light smoke taste. An easy drinking, good beer that i would recommend to everyone to try at least once.
3.2 Draught at Blind Tiger. Pours dark clear amber. The taste of alcohol is strong here and definitely strong malts, smoke and toasted caramel. A decent beer.
3.9 Had this as a draft and it was considerably carbonated. It had a really lovely nutty, barnayardy quality with banana esters.
3.7 Draft at the source. Clear dark amber color, medium tan head. Aroma of light toast and caramel. Taste is sweet toffee. Decent.
3.6 Draft at the Khyber. Poured a very dark ruby - nice color (make sure you hold it up to a bright light!) Small white head disapeared quickly. Sweet dark fruits balanced with some darker elements. Burned oak wine barrels. Coffee liquor. Tinge of sour and smoke. Not fantastic, but interesting and unusual.
3.5 Tap at Oblivion. Nose has some syrupy qualities with some light raisin and maple like notes. Molasses and some other dark fruits. Nice. Pour is brown with a thin white head. Taste is similar to nose with some dark fruits and a bit of bready notes and some light molasses/syrup flavors. Good stuff.
3.5 Pours a clear ruby/amber color with a medium tan head. Aroma is malty with light fruitiness, rasin, and a bit of nuttiness. Flavor has some wheaty and fruity notes...lightly roasty malts and a mild earthy hoppiness...faint nuttiness. Mouthfeel is medium/full with a fruity/malty finish that warms a bit.
3.7 This one poured a dark amber with hazy ruby highlights. Barely any head at all is poured. Aroma is big on toasted malt, dark fruits, and a little bit of a spicy kick. Most though when you put your nose up to the glass you get blasted by fruits. Taste is pretty big. Very sweet. I picked up some brown sugar mixed in. But once again the fruit takes the cake. Small amounts of alcohol peak through once in a while. Mouthfeel is medium bodied, small amount of carbonation, and a slightly dry finish. Overall this is a very good Doppelbock. Not the kind of beer I would drink again (Doppelbocks don’t do much for me) but this is a nice big and complex version of the style.
3.8 Update: Bocks have grown on me since 2011. No longer bottled but had this on tap at Downingtown. Excellent beer. Lots of fruity flavors with mild peaty/smokiness (still don’t like that flavor much). but this one is a very good doppel. Best by Dec 2011. Poured from a 12oz bottle into a wine glass. Pours a purpleish brown. Not much head and zero lacing. Mild fruity aroma. Mouthfeel is pretty flat and dull. Little carbonation to liven things up. Taste is pretty flat too. Dark fruit, banana, clove, some alcohol and little else. I’m not a big fan of bocks and this didn’t to much for me either.
3.8 aroma, roasted malt, faint hop aroma flora, carmel toffee notes, deep dark reddish hue, taste, the roasted dark malts add a toffee and carmel note, sweet dark bread notes and some dark fruit as well, overall, A good Doppelbock, rich deepness from the roasted malts, adds depth to this brew!
3.9 Victory at it best again, one of there best beers. It?s a light brown with carmel color in the light. It has very little head but the aroma is great and only gets better as it warms. Caramel, coffee, and a little hoppy. I always have this one around. It?s a little high in cost per case, but well worth it.
3.5 Mostly brown with copper undertone, thin off white head. A sweet nuttiness in the nose, roasted malt background. Medium in body with a somewhat creamy texture. Slightly more hoppy/bitter then expected with an almost coffee like finish.
3.5 Bottle; Pour is dark brown / ruby with a bubbly beige head that retains quite poorly in this dimpled mug. The nose is chestnuts, caramel. and baked breads. The flavor profile , i had to honestly ’warm up’ to. It’s nutty, with sweetness in abundance (caramel, brown sugar); but it was a little bitter and buttery out of the gate. As I alluded to , that improved, and actually dissipated into a nice doppelbock that works fairly well.
3.9 Tap. Clearer ruby orange-brown with a slightly tan head. Nutty and toasty, lightly sweet with a touch of roast in the aroma. Light smoke in the flavor that comes in alongside the darker fruit and toffee notes with some cherrywood. Medium body with very bubbly carbonation. Pretty nice.
3.6 Bottle. Mahogany with close to no beige head. Aromas of caramel, roasted nut, smoke, bread. Flavors of caramel, roasted nut, smoke, bread. Slightly sweet finish. Medium full body with soft mouthfeel and low carbonation.
3.6 Rosted malt and honey aroma. A strong presence of sweet brown sugar, roasted malts and hop in the taste. A good warm and dry finish. I liked it.
3.3 on tap at Tylers Apex, sometime in Feb 2011. good aroma, sweet, chocolate, yeasty bready. Clean brownish orange color, good head, but not much lace. Sweet flavor. Medium body, smooth creamy mouthfeel, sweet finish that fades. Tasty beer, really enjoying dopples.....
3.8 12 oz. pours translucent reddish brown with just a ring of white head. Smell of roasted caramel malt, toffee and some dark fruits are most notable. Very smooth roasted caramel, some molasses, and cearal. Mouthfeel is meduim and the finish is roasty bitterness but not very long and dry but smooth.
