This traditional saison is brewed using North Carolina grown barley, wheat and rye from Riverbend Malthouse and is open fermented. The beer is then finished with Brettanomyces and bottled. Drink it fresh, or let it age and bring out the funk.

4.0 Bottle. Pours hazy golden with a white head. Aroma of Brett, yeast, citrus, slight grass, manure, foral, citrus. Taste is rather sweet, with loads of Belgian yeast, spice, brett, foral, slight touch of marzipan.Mellow and balanced. Good yeast.

4.1 Bottle @ Scheffels Otha fish in the sea Tasting. Pours Hazy yellow with a white head. Peppery dry grassy flavor while aroma is more fruity and grassy. Good to amazing brett. Floral and dry.
3.4 500ml bottle. Minimally milky, yellow-ish golden colour with average to huge, frothy, fairly lasting, minimally lacing, white head. Funky, bretty, floral-herbal aroma, notes of fresh hay, dill, tarragon. Taste is dry, minimally funky, slightly restricted bretty, fruity, minimally soapy herbal, hints of unripe mirabelle, diluted dill, a floral touch; slightly tart finish. Slightly anaemic, restricted.
3.3 375ml bottle. Medium white head atop murky apple cider body. Aroma is moderately sweet, funk, grapefruit, some peach, mango. Taste is medium sweet, grapefruit, peach, some funk, light sour. Light-medium body, light effervescence.
3.6 Bottle. A lightly hazy golden colored beer with a small, dense, off-white head. Rather funky aroma, with orange, lemon, leather and a peppery hint. Some pale malt notes. It’s full-bodied, quite effervescent and dry, with lots of funky flavors. Lemon, leather, some barnyard and even more fruityness in the flavor. Some pale malts. Lasting finish. A nice and refreshing beer indeed, tasteful too, although not the most complex beer I’ve had. 161105

3.7 Bottle 500ml @ Geokkjer Pours slightly hazy golden with a white head. Aroma has notes of malt, brett, yeast, funk and hint of citrus. Taste is light to medium sweet and light bitter with a long funky, brett, yeasty and citrus finish. Body is medium, texture is thin to oily, carbonation is soft.

4.8 Dégustée à température de 5,9°C à 10,3°C. Étiquette adorable. Corps doré clair, opaque avec plein de levures, couronné par la mousse la plus extraordinaire que j’aie encore jamais vue : très effervescente sans être capricieuse ou farceuse, blanche, comme du nid d’abeille ou du cristal soufflé en alvéoles. Côté arômes, c’est très frais : agrumes légers, fruits, bretts très évidentes, ananas, fruits jaunes, malts légers, fleurs - complexe. En bouche, un petit côté rustique mais beaucoup d’élégance; une amertume fine et assez présente; le côté malté se développe progressivement. C’est très, très bon. Très agréable en mangeant un plat simple de bons légumes cuisinés. À la fois complexe et très facile à apprécier.

3.6 Bottle. Cotteridge. Drinking this 15 months after bottling. Light gold. Soft haze. Dense, rocky, lasting, bright white head. Nose has clean, lemony brett. Some white pepper. Hint of white grape and peach. Taste is soft, bready, yeasty sweet. Some dryness. Foamy mouthfeel. Bready, sweet finish, with a bretty tang on the close. Smells and looks good, but tails off a little thereafter.

3.8 Bottle from the brewery. Aged 2 years. Pours almost clear bright gold with a thick, bubbly off white head. Taste like dry herbs, dry citrus hops, grapefruit, peaches, dry white wine, and champagne yeast. Light body and low/medium carbonation. Smell like herbs, dry citrus hops, dry white wine, and champagne.
3.8 2 yr old bottle from brewery. Pours mostly clear gold with a thick pillow of off-white head. Aroma is floral notes, citrus esters, faint spice and funk, straw, and wheat. Flavor is earthy funk, dry rustic malt profile, light grassy and citrus bitterness, and faint spice. Medium body.
3.5 Hazed gold rocky permanent head. Pineapple candy, tutti-frutti brett, salt, lemon oil / lemon zest aroma impression. Medium bodied, off-dry to dry, lightly bitter with some sugar cookie maltiness. It’s vibrant, zesty, floral and honey-ish to begin, but turns more basic, farm-y, chalky as it opens, and becomes more lactic.
3.6 Bottle. Head is initially large, frothy, white, mostly lasting. Body is hazy medium yellow. Aroma is lightly malty (toasted grain), lightly hoppy (flowers), lightly yeasty (cobwebs), with light notes of pineapple, pepper, concrete. Flavor is lightly to moderately sweet, moderately to heavily acidic, lightly bitter. Finish is lightly sweet, moderately to heavily acidic, moderately bitter. Medium body, watery texture, lively carbonation, lightly to moderately alcoholic. First pour aroma starts out pretty nice with the pineapple-ish note but devolves into something less enticing and duller after not much time at all. Nice flavor balance and mouthfeel though, and the head is large and long-lasting. Quite solid but lacking 4+ brilliance.
4.1 50cl bottle via Beer Gonzo. It pours a hazed pale golden color with a large white head. Aroma is tart funky tangy with loads of Breet, yeast, citrus peel, melon, apricots. Taste is also rich in pissy hops, Breet yeast, horse blanket, musty dusty notes and apricots. Medium bodied with silky texture and good carbonation. Overall, very nice
3.6 Bottled. Pours hazy deep golden with a small off-white head. Aroma of funk, citrus, yeasty notes and some funk. Slightly sweet flavor that ends up being dry and tart. Light to medium bodied, watery texture and soft carbonation. A very nice Sour. 🌟🌟🌟🌟
3.8 500m shared at a tasting. Thick, unfiltered yellow tan. Creamy, thick, white head. Great mouthfeel, way above par for a US Saison. Some bubblegum. Not overly brett forward. Really solid beer.

3.7 500 ml bottle at Ulfborg. Light hazy yellow golden color with white head. Malty and yeasty aroma, grain, caramel, funky, bretty, floral and grassy, citrusy fruity, spicy. Light sweet and light bitter taste. Light to medium almost oily body with soft carbonation.
