The exploration of yeast strains and the different results we can achieve are beautifully exemplified in Evolver, a pale ale with a difference. 100% fermented with Brettanomyces. For the first 3 months the beer tastes the same as a fresh pale ale, then the differing flavour compounds start to shine through and after 6 months the Brett really takes hold.



The brettanomyces yeast is particularly good at keeping hop flavours fresh for far longer than traditional brewing yeasts. The Evolver takes on a more complex character over time as the yeast and the hops combine to produce a new and exciting beer that will continue to evolve as the yeast slowly matures the beer.




This is a beer that can be drunk fresh, as a normal pale ale or left to evolve and mature into a unique and unusual beer.

3.4 Hoppy, citrusy aroma, some overripe banana and pepper. Taste is slighlty tart, with some lemon zest, some honey notes and spices with lots of pepper. Body is medium, oily with dry, bitter finish
3.4 Bottle 33cl. Golden, cloudy with a medium white head. A hoppy aroma with spices and leaves end. Bittersweet with a soft hop and spices end.

3.5 Tap, Be Unorthodox bar. Slightly hazy golden color with medium white head. Aroma of hops, floral, fruity tones, funk. Taste starts malty, fruity followed by hoppy bitterness, Brett, yeast. Good.
2.8 Vycap. Mutna zlata farba, biela pena. Vona citrusova, kvasnicova, kyselkava. Chut sladova, kvasnice, kyselkavost, trosku saponat. Horka dochut.
2.3 Vycap unorthodox. Vona taka citrusovo necitrusova. Farba zlatista ako tak. Chut podivna citrusova.
3.7 #2352 Tapped. Hazy, yellow, medium white head. Aroma of citruses, funky and leather tones, wild lemon. Taste is wild, quite bitter, neutral, very funky, bretty, citruses, lemon, touch if alcohol. Medium body Oh, very wild IPA. Tasty.
3.7 Draught at Craft House, Prague. Lightly cloudy, pale gold colored. AROMA- funky, fruity, citrusy, hay, floral tones. FLAVOR- neutral to dry, lightly bitter, hay, funky, fruity, malt. Fuller bodied. Very interesting, very tasty.

3.2 330ml bottle at home during a mini tasting session with myself on 1st June 2018. Slight haze to the golden body, decent white crown on top. Light, but bitter citrus nose, taste also leaning towards citrus fruits, but sweeter than the aroma intimated.
4.0 Pleasant aroma matches with taste. Fruty and funky. I really enyojed drinking it.
3.6 Shared 11.2 oz. bottle poured to my goblet showing a hazed, gold color, a modest layer of white froth, and foamy spots of lacing. The nose was floral, light citrus, spice, and only slight, yeasty funk. Medium bodied, with appropriate carbonation, the taste was similar notes, slightly tart, with some earthy bitterness, and dryness to the finish. Decent, but the brett influence seemed to have faded with age.
3.8 Bouteille - De couleur jaune paille trouble avec une magnifique mousse blanche crémeuse qui tient très longtemps - Au nez les fruits exotiques se marie à la pêche et au odeur de grange et de cuire,floral, c'est frais on peut sentir le blé en fin de nez - En bouche les brett sont bien présentent mais pas dominante c'est très agréable, le houblonnage est simple et pas trop amère un mix floral/fruits exotiques - Corp léger, amertume moyenne, carbonation pétillante, sèche, final brett pêche floral moyen - Je trouve cette bière excellente, les brett et le houblons se marient à merveille

3.4 Tallahassee, Fl - Market Square Liquors - hazy medium orange, slight snow white head, sediment floating about. Sour aroma, lot of brett, some cantaloupe. Sour flavor, some apricots, touch of citrus, yeasty finish. Mouthfeel is a tad metallic. Not my cup of tea,
3.4 7 - 3 - 7 - 4 - 13 Cloudy orange body with a white head. Fruity and quite strong aroma of tart tropical fruits like pineapple, citrus, and caramel in the back. Quite strong flavour of grapefruit zest, lemon, pineapple, grape, and unripe green apple, with peach, caramel, and hints of brett in the back. Light to moderate sweet taste, light acidity and a long-lasting quite heavy bitter finish. Rather light-bodied, dry texture, moderate carbonation. I bought this beer a couple of months ago, but I can't find a date on the bottle. Anyway, it smells and tasted quite much like a regular IPA, with just some added acidity. I have another bottle in my beer cellar that I will try in a year or two, it will be interesting to see what wonders the brett can do in that time. [33 cl bottle, from Vinmonopolet Ullevål, Oslo]
3.4 Saturday, April 28, 2018. On tap, 25cL. 5.8%. @bar Le_Zinc, Poitiers. "Les Soirées Zythologiques du Zinc : Bières Houblonnées (Fresh Fresh)". A yellow opaque beer with a medium foamy head ; medium retention ; lacing ok. Fruits (citrus, lemon), light herb, funky odd notes (peanut ?! in the "back" taste), resinous note. Light sweet, light acid, medium dry refreshing bitter. Light to medium body, thin texture, average to soft gaseous, dry bitter citrus finish. Overall, good ! Not too much bretty character (+1).
3.7 W aromacie troszkę kiszonej kapusty, ale głównie woda z ogórków małosolnych, taka jeszcze nie do końca kiszona, trochę nieświeżego zlewu. Pije się fajnie; tutaj już trochę bardziej w stronę ogórków, lekki chmiel... w sumie czuć, że IPA. Spoko.
3.4 On tap at Clock-Block. Cloudy golden colour with small lacing white head. Aroma of yeast, citruses, pine, sour. Taste is unusual for IPA, slightly sour, hoppy, yeast, citruses, funky notes, short sour finish. I am not sure about this one.
3.6 On tap at Clock Block. I have almost saison like feeling of this one. With bitter sour hoppy finish. Pours yellowish with small white head. As beer gets warmer aroma let's you know this is wild and may be sour beer. Taste is lightly sour, fresh hops, yeasty character. I'm confused of this one but I guess I like it.
3.9 Tapped at Clock Block in Bratislava Slovakia. Almost clear golden color. Thick soapy head. Sour citrus aroma, fresh cut green apples, white wine. Taste mirrors the aroma plus a good solid hops character. Finish is sour wild green apples and floral hops. Refreshing. Very good!
3.2 Bottle at a tasting at Zarazbirachi in Ruse. Bottle age unknown. Pours slightly cloudy with a frothy head that quickly settled to the surface, lacing but no visible bead. A dirty yellowish colour. Complex aromas including vague citrus, perfume, herbs, sour grapes and stale white wine. In the mouth, somewhat soapy in texture, quite carbonated, minimal sweetness, sourness throughout the palate, leading to a clean crisp finish. Overall, crisp and refreshing but sourness is an issue.
3.9 0.33l bottle from qoqa.ch. pours a cloudy Pale golden with a medium head and a nice lacing. aroma of weed, perfume, flowers, chalk. flavour is a bit like a kellerbier, light, herbal, bready, and chalky, but very aromatic.
3.1 Good IPA. Good mix of fruitiness and hops. Fairly juicy with bitter notes. Lacks a bit of depth. Would happily drink again.

3.1 0.33 l bottle, shared with Višnja 666 and Pilot Goran, thanks! Pale golden, small off-white head. Spicy and citrus aromas. Strong citrusy profile. Funky and yeasty background. Very light sourness. Light body, soft to moderate carbonation, very light finish. Hops lost?
3.3 Piana dość gęsto zdobi szkło. Aromat dość niecodzienny - winogrona, zielone jabłka, miśki żelki, zielony chmiel. Żadnej końskiej derki, bretty wyszły tutaj w sposób jednoznacznie owocowy. Chociaż po dłuższym niuchaniu muszę powiedzieć, że z tyłu czai się jednak lekka kiszonka. W smaku w sumie zbalansowane, nie za wytrawne, jest owocowo i tylko lekko ściągający, brettowy finisz wskazuje z jakim rodzajem piwa mamy do czynienia. Okej się pije, ale nawet na naszym rodzimym podwórku można znaleźć przykłady fajniejszego wykorzystania brettów w mocno chmielonych ale.
3.2 At a tasting, thanks, small bubbly fizzy head, murky lightish orange color with lots of yellow hues, aroma of minerals a bit over ripe citrus and a hint of peach, same traits in flavor with a light soapy bitterness. Nice but nothing to write home about, expected more.
3.9 Bottle at home from the brewery. Unclear how old this one is – the bottle makes a big fuss of saying how it evolves over time. Best before 0/19 (about 2 years away?) which seems too long given they reckon it only takes 3 months for brett to develop a significant influence. Should be young then? Bit of a faff and head-scratch before drinking… they should make it clearer. Pours standard pale yellow with very minimal head. Aroma of pale malt and hops, pine and melon. Taste is slightly resinous, some sorachi but not much brett. Also some herbal/farmyard/vegetal “wu-gang chops the tree” flavours going on here – which must be the brett. Some good grapefruit bitterness going on, softened by gentle lemon. Palate is solid, good mouthfeel, medium lasting medium bitter /herbal finish Overall it’s certainly unusual – possibly an older version would be even more interesting, but as it is an atypical pale that’s pretty satisfying.
