Barrel ageing, blending and using different yeasts, this embraces our love of the unpredictability of wild yeast with the subtlety and complexity of maturation in oak barrels. A study in patience, it takes at least 90 days for the wild yeast to work its magic.



Modus Operandi is the perfect accompaniment to red meat and game dishes, such as duck or venison, a beer that could easily replace a red wine on the dinner table.



A transformation of an old English ale into a beer that is Wildly different. A unique, dark, flavourful beer with a smooth, rich, full body and complex fruit flavours of berries, sweet cherries and tannins.

3.9 Ciemnoczerwone z niewielką pianą. W aromacie głównie nuty dzikie, czerwone wino, dębowość. Bardzo intensywne. W smaku dzikość, wiśnie, klepki dębowe, kwaśne, lekko wędzone. Bardzo przyjemne, intensywne i zbalansowane. Nasyceneie wyraźne.
3.6 Bottle from Bottles in Providence, RI. Dark-chocolate-brown with a tan-to-light-brown head, medium-fine, thin, fizzy, fast to fade to a swirly film, crackly. Not as dark as a typical porter, but close. Aroma is sour cherry, big lactic and a medium-light acetic zing, some caramel, raisin bread, touch of brown sugar, bit of apricot, a hint of metallic and lake-ish notes. Body is medium-medium-light weight, syrupy, bit watery-starchy, medium-fine felt-like carbonation, medium-light burn. Good body/carbonation for the style. Flavor is overall a touch on the light side for a Flanders red, spiced raisin bread, sour cherry, bit of brown sugar, acetic bite, bit of bread crust. Nice light Flanders, not overly caramel-ly. Not excessively sour (still, I prefer less, but this is good for the style).
4.0 Ciemnorubinowe, lekko zmętnione, piana ładna, różowawa. W zapachu dzikość, wiśnie, czerwone wino, bardzo fajnie wgrane szlachetne nuty kakaowo-czekoladowe. W smaku wyraźnie kwaśne, lekko słodkie, zwieńczone delikatną goryczką. Wysokie nasycenie.
3.6 0,33l bottle. Pours dark red with reddish lacing. Cherries, dark fruits. Pretty intense sourness, and quite some sweetness too.
3.7 Deep brown-garnet pour. Tan head. The aroma is tart and sweet. Oak and a bit of acetic character. Some intense vineousness. Acetic quality, some dark fruit, cherry and a bit of oakiness. Pretty solid.
3.9 33cl bottle from Beerwulf webshop. F: big, pale tanned, average retention. C: black, opaque. A: bit red wine, woody, caramel, bit vinegar, chocolate, nice sour fruity, plums. T: medium malty base, sour fruity, bit vinous, caramel, woody, red berries, plums, bit puckering, chocolate touch, light tannins, lower carbonation, nice complex taste but not so heavy all together, very good, really enjoyable.
3.4 This is a backlog rating from 2014 from a bottle, from notes. When I had this beer it was average to below average for the style and not something I wanted to have again or I just didn't get back to my notes because of my technology at the time. Words to describe this beer are tart fruits, sweet malts, oak, some vinegar.

3.4 Pivo u flaši. Popijeno u Gourmet Shopu & Tasting Roomu "Pötãman" u Premanturi. Slatkasto karamelna i octena aroma i malo bačve.. Tijelo je nešto više gazirano.. Okus je malo više mošteno slakast i manje kisel nego Rodenbach.. Uglavnom , pogodili su stil , samo pivo nije prošlo kroz Belgiju...
3.6 Murky reddish brown, off white head. Tart fruit aroma. Flavour is sour fruit, toasty toffee, something spiced perhaps? And you get the woodiness in the finish. Nice.
5.0 Bottle 0,33L. Dark red/amber color with medium big, frothy, light brown head. Aroma of cherries, red grapes, wood, red wine. Taste is light sour/light acetic with notes of red wine and bourbon at the same time. Finish is slightly tart and (let's say) light bitter with nutty notes. Medium body, creamy texture, soft carbonation. Wau! Best sour I've had 'till today!

3.8 Clear deep brown,minimal off-white head. Aroma of berries, oak and wood. Tangy sour taste with berries and oak. Overall very red wine like, balanced taste between sour& berries
3.5 Bottle 33 cl, poured a dark reddish brown with a small white head and an aroma of sour red wine, light hops, red grapes and vinegar. The taste is tart with a medium body, light carbonation and a long lasting sour finish
4.3 Pours a murky, deep, dark mahogany coloration with a small, fizzy head. Smells of bready, caramel malt and strong notes of tart black cherry, oaky tannins and a more subtle bourbon barrel presence. Taste is incredibly complex, yet well-balanced, with the burgundy barrel notes dominating, complemented very nicely by a subtle bourbon barrel presence and malty undertones with notes of tart black cherry, red/dark fruit: red/blackcurrant, plum, fig, toffee, leather, vanilla and oaky tannins. Finishes with a light tartness and some dark/red fruits and oaky tannins lingering in the aftertaste. Smooth mouthfeel with a medium body and light carbonation. I'm absolutely loving the balance of burgundy and bourbon barrels here, with the burgundy barrels clearly dominating with a very tannic, vinous presense that is enhanced tremenduously by subtle notes of bourbon and vanilla as well as the malty undertones. Outstanding balance of sweet, bitter, tart and fruity notes as well. Expertly blended, this is probably the best Flanders Red I've had. I've only had two beers by Wild Beer Co. so far, but they have both been outstanding.

3.8 330 ml bottle. Pours brown with a bit of red and light head, but quite a bit of solid sediment. Aromas of balsamic vinegar, vinous wood, grapes and wet malts. Flavors follow same with admiral tart berries and cherry skins. A nice Oud Bruin.

4.1 Tap at Mastro Birraio, Trieste. Lovely sour aroma, woody, moldy, cherry like, old cellar. Hazy dark brown color with red hue and small sized off-white head. Taste of wood, cherry, medium to heavy sour with some sweetness behind. Medium to full body, soft carbonation. Great stuff.
4.2 On tap @ Ghetto Something. Aroma of caramel, wood, red fruit, yeast and red wine. Pours clear ruby brown color with thin creamy tan-like head and soft visible carbonation. Taste starts with sweet toasted malt and strong barrel note, following is refreshing sour with notes of berries, cherries, red wine and brett. Medium to full body, thick texture and average carbonation in palate. Excellent brew with perfect balance between sweet barrel and sour fruity notes...
3.8 Half at Euston Tap. Dark brown, opaque, small tight head, solid lacing all around. Aroma is tart, funky, brett, sweet. Taste leads with the taryness, sweet, with some of the traditional leathery, tobacco notes. Complex.
3.4 Quite a complex sour red or brown. I do quite like the style, but this a little complex and too tart for me. There’s real depth in there, but it borders on winey for me.
4.1 A dark reddish copper brown ale with a thin lacing mocha head. In aroma, beautiful sweet fruity malt with loads of ground cherries, lactic acid, Epsom salts, Brett, very nice and complex. In mouth, a nice sweet fruity malt with loads of ground cherries, lactic acid, Epsom salts, brett, very nice and complex. On tap at Patan, Guadalajara.
4.0 Bottle shared with Višnja 666 and Pilot Goran at a Mega Tasting, September 9th 2017. Dark brown with red tint, minimal head. Strong aroma of red fruit, prunes, barrel ageing easy to pick up in a form of Sherry or Porto aromas, spicy, funky, gluey. Moderate to strong sourness, very dry. Creamy texture, medium to full body, low carbonation, strong finish, with a light alcohol presence. One of the better wild ales.
1.3 DIeses Sour Ale wurde über 90 Tage in einem Burgunder Rotweinfass und einem Kentuky-Whiskeyfass gelagert. Auf dem Etikett wird das BIer wie folgt beschrieben (frei übersetzt): Das Eingangs-Aroma nach Toffee und Karamell mit Ansätzen von roten Früchten, wird abgelöst von vollmundigen sauren und süßen Kirschnoten. Abgeschlossen wird mit dunkler Schokolade und einem balsamischen Teer-Charakter, welcher den Mund wässrig für mehr machen soll. Meine Meinung: Ein penetranter Geschmack nach gammligen Rotwein überdeckt alles.
4.5 Kwasiki lekko octowe, ale rónież mocno owocowe, rodzynkowe jakieś. W smaku idealna fuzja beczki i brettów. Winny charakter; wytrawne, lecz z delikatną słodyczą. Trochę tam z tego Old Ejla zostało jakieś lekkie melasowe powidoki. Super. Chyba najlepszy Wild Beer, jakiego dotąd piłem.
3.5 Took every bone in my body to not order this in the voice of Gordon Cole from Twin Peaks. Anyway, the beer is great. Sharp, wild sour stuff with an immense aftertaste of sweet(ish) fruit flavours. Something I would love to pick up a whole bottle of. 100ml glass at Beaverex’18.
3.5 Pours brown with ruby reflexes. Aroma is of raspberries, red wine with a touch of funk and wood. Taste is slightly sour, like raspberries, but also nicely balanced by a touch of malt, barrel and a slight touch of vanilla.
