Wild Beer Ninkasi

Wild Beer Ninkasi

Bubbles + Apples + Wild Yeast

photo (16)

Named after the ancient Mesopotamian goddess of beer, this is an equally divine Belgian-style saison with a copious amount of New Zealand hops, freshly harvested Somerset apple juice and wild yeast added to the mix. However, we like to take things just that bit further (it’s the Wild way!) — once bottled the beer undergoes a secondary fermentation with champagne yeast, giving it a brisk spritziness on the tongue. Serve chilled in a champagne flute to allow the bouquet of playfully aromatic notes to be fully appreciated. Take a sip to enjoy a further cascade of striking and sensuous flavours alongside the carefree champagne-like spritziness. The long, dry finish is both refreshing and complex.

3.9 Bottle. Hazy pale color with quickly disappearing white head. Strong apple, yeasty aroma. Quite sour taste with aples, yeast, vinous notes. Nicew.
4.0 It's wonderfully different in that the first taste and smells will not take you to any other beer yet the hoppy aftertaste will remind you exactly what this is and that is a well made tasty refreshing saison that has a typical wild beer twist
3.3 Výčap unorthodox. Vôňa kyslasto ovocná. Farba zlatista. Chuť jemne kyslasta.
3.1 Draught at Darby's Gastown, Vancouver Hazy blond colour with creamy head. Light smell of sweat, very light honey. Good body strength; light residual sweetness, something reminds me of honey, burning alcohol. Drinkable Belgian Strong, nothing exciting.
3.0 pours a light golden colour, thin white foamy head; aroma slightly chemical not much else; Taste sweet floury thin not much finish very disappointing for its abv
3.3 Quite a champagney feel to this beer with delicate flavours and a lovely spritz. Not typically my type of beer but enjoyed it nonetheless.

3.7 Ciekawa propozycja, szampańska mocno w smaku, ale z belgijskimi naleciałościami. Trochę mało się dzieje na finiszu. Niezłe.
3.4 Aroma: ripe friuts, apple, sth like belgian yeast. Taste: sweet. Head is nice.
2.8 Bottle sample. Hazy yellow. Kinda weird aroma, apples, green, a bit farty, yeast, some funk, champagne, alcohol, dry, bitterish, light to medium-bodied. Not really my thing.
3.6 Vo Feribe.silna sladkasto alkoholova vona. Medova farba. Pena slaba. Chut vyrazna silna. Na zaver akoby vinova.
3.7 Pale cloudy yellow, persistent slightly off white head ( when served from the bottle in a champagne flute). Aroma is apples and spice, it’s spritz, with the combined sourness and sweetness of apples and a long dry finish.
2.7 At FHF. Cloudy and frothy. A bit autolyzed. Fairly hoppy but stale cheesy hops. Disappointing.
2.7 Draft - Funky grains cloudy gold with a decent white head. Dirty grains and yeast. Not sure they hit the mark and there are other Champagnois beers I prefer.
3.5 Effervescent. Farmhouse nose w apple and a little spicy/pepper. Some Brett character and alcohol warmth. Finish is very dry...which is great. Lovely for our celebration on the deck...in the sun
3.9 Bottle sample at Farmhouse Fest 2018, pours a cloudy bright yellow with a small white head. Aroma brings out light funk, earthy notes and a pine needle spiciness. Flavour is along the same lines, with a beautiful barnyard funk character, and some tart stone fruits. Complex and wonderfully designed. Excellent.
3.9 On tap at BeUnorthodox. Hazy orange colour with thick white head, aroma is less intensive, yeast, hops, barnyard. But taste. The taste. Hopes, Belgian yeast, barnyard, fruits, a lot is going on, but consistent and balanced, this Somerset guys knows what's good. As usually very nice drink..
4.1 Tap at Unorthodox. Really assertive grape fruity character both in aroma and taste, intensely exotically flowery. High bitterness, but also sweetness, with a touch of flowery tarty sourness. Quite complex, sipper, enjoyable. Excellent.
3.6 Pure white fluffy head stayed all the way on highly carbonated light golden body. Vinous aroma of sour apple & yeast. Medium to thin bodied, very soft on the palate with an effervescent clean dry finish - a bit like champagne! Sweet & sour tastes of apple, yeast & spice with a long tangy finish.
3.8 Bottle sample at a tasting at Yoav's place. Clear yellow with bubbly white head. The aroma has some funk, yeasts, apple, fruity and floral. The flavor is mild sour with notes of apple, yeasts, some funk, alcohol, floral, malt, some lemon, white wine and spices, kind of a saison. Medium to full-bodied.
3.7 At a tasting, medium slightly gushing bubbly head, a touch hazy and a bit intense yellow color, aroma of wood, spice, grain and roots, flavor of lemon, candy and a light bready maltiness behind, lighjtish but noticable bitternss, light sourness, very nicely mellow. Really nice and highly enjoyable, suprising.
3.8 Bottle at a tasting. Cloudy yellow with a big white head. Aroma is fruity esters, spicy, floral and citric. Sweet, tart, lemon, citrus, lactic, green apples, white wine flavors. Light-medium bodied, dry and fizzy. Very good.
3.5 Iduna Cru, Sampled September 2016 A steady pour four-finger thick, pale tan colored head. The beer is a hazy, pale honey-golden color. Up front the aroma smells lightly spicy with a cider like fruit character. A deeper draw of the nose yields lots of clove, some peppery green pepper notes, and some dusty, sunbaked grain notes. Nicely effervescent, with melds well with the light-medium viscosity that makes up the body; the beer has enough heft to it that it clings just a bit to the palate. The finish has a mix of honey'ish flavors, lingering cider notes, and a pale grain flavor to it. Sweet apple flavors meld well with a chewy, pale nutty, bright pale malt flavor. The finish is a touch spicy, with a mix of alcohol, pepper, perhaps some ginger like notes, and a lingering phenolic spiciness that leans towards clove. The beer has a light tartness to it, though nothing beyond apple derived and yeast; as far as I can tell there are no souring bugs used in this. The beer has a mineral like flavor to the finish that reminds me just a bit of Champagne. Pretty tasty, I was expecting something on the sour side, but I can't say that I noticed the lack of a bit until I spent 10 minutes with this beer.
3.5 Backlog from Budapest Beer Week Saturday tasting session. Tap. Hazy yellow colour, small white head. Nose is lightly hoppy, faint sourness, some funk. Taste is low meidum bitterness, faint phenols. Bone dry mouthfeel, some hoppy notes. Refreshing and very dry.
3.7 Sampled from tap at BPBW 2018. Slightly hazy, straw yellow with a large, white head. Sweetish, fruity-grassy and slightly yeasty-spicy aroma of lemon peel, hay and some pineapple. Slightly sweet, moderately bitter, rather fruity-grassy and slightly yeasty-spicy taste of pineapple, lemon peel, some clove and a touch of hay, followed by a short, moderately bitter, slightly yeasty-spicy and a bit grassy finish. Medium body, smooth and slightly effervescent mouthfeel, soft carbonation. Good!
3.3 750ml bottle. In a duvel glass. This is listed as a saison on untapped-though I guess throwing this stuff in the soulless Belgian strong umbrella style is ok. When reading the blurb the mention of wild yeast was exciting- but not my preference of brett on closer dissection. Basically farmhouse scrumpy apple juice flavours with like a saison/strong golde base is the crux. I prominently got tart cooking apple with a lactic potency, some banana esters, spice and booze.. Nothing too complex or especially memorable, but reasonably pleasant to savour or get buzzed fast.
3.3 Draught at Wild Beer at Wapping Wharf, Bristol. Hazy yellow gold with white head. Quite a fruity beer this turned out to be, wheaty banana notes, yeasty then a tropical fruit, green pineapple type flavour. Tartish hints. It's fine.
2.4 Draught @ Christian Firtal, Odense. Pours Golden with a White head. Nose is sweet Of bubblegum, dust and alcohol.
3.7 Bottle thanks to Olly. Pours clear golden with a small white head. Aromas of esters, lightly malty, nutty, spicy. Taste has esters, citrus, orange, herbal, light malty.
