Beer and Bread have been showing off the magic of yeast for thousands of years, we decided to combine the two. The old and the new, contemporary ideas and historical techniques and ingredients, a very special beer that combines all these things and more.

6 months before we even had a brewery we started talking to Tom Herbert about the Hobbs House Bakery’s 58 year old Sourdough yeast, and whether we could use it to ferment a beer. Tom was excited, we were excited!

After a year of trials (each trial took a really long time to develop) we decided to loosely base the beer on a Berliner Weisse style - a historical Sour beer style from Northern Germany, but with a Wild Beer slant to it. We have used the 58 year old sourdough culture and a little brettanomyces and put the beer straight into oak barrels for its primary fermentation.

It has been slowly fermenting, maturing and souring for 4 months in the barrels and will continue to evolve and develop in the bottle. There is a lovely gentle rounded fruity sourness to this beer. It isn’t harsh, and its low alcohol makes it the perfect brunch beer to enjoy with smoked salmon and scrambled eggs on some Hobbs House Bakery Sourdough. Serve chilled.

3.8 Hazy pineapple juice colour. Practically no head. Aroma intensity 4/5. Pineapple, thyme and yeast aroma, notes of citrus, spices and hazelnut. Heavy sour. Light body

3.6 On tap at Valhalla Zagreb. Unclear yellow coloured, minimal white head, sour yeast and wood in the nose. Quite sour taste with notes of yeast, wood and some citrus. Tart fruity finish. Refreshing.
3.5 Bit hazy yellow color with a thin quickly disappearing white head, fizzy. Sour, grape, citrus aroma with acidic, funky, lemon-grape flavor. Sour, bread, bit tart finish with a light body.
4.0 Bottle 0,33L. Slightly foggy, almost clear pale golden color with small, fizzy, white head. Aroma of sour vine, bread, yeasts, a bit funky. Taste is sour all the way with some lemony moments and slightly tart finish. Light to medium body, dry texture, fizzy carbonation.
3.5 On tap at Unorthodox Pours hazy yellow. Sour notes on a nose. Taste is sour. Milky. Somewhat juicy. Good.
3.9 Draught at Against the Grain, Dublin. Very acidic aroma, lemony. Hazy pale yellow colour. Small white head. The flavour is very acidic and nicely funky. Has a flowery and milky note as well. Flavourful and cleansing.

4.2 Bottle, 0.33l. Aroma of bread, yeast, must, white wine, spices and brett. Pours hazy straw color with medium sized quickly dissipating white head and sparkling appearance. Taste starts light sweet and sour citrusy and vinous, following is bready with sweetish oak note and crisp mouthfeel. Light body, creamy texture and lively carbonation in palate. Better than bread...
4.0 Lovely refreshing and well balanced sour. A nice amount of body for the ABV, fine spritzy bubbles help elevate the taste. Medium, green apple like sourness. The wild funk is kept balanced and under control and doesn't dominate.

4.3 Pours a slightly cloudy pale straw coloration with a quickly dissipating head. Smell is absolutely lovely, with tart green apple and blue cheese funk dominating and lighter notes of citrus and hay. Taste follows the nose, with a great balance of tart green apple/pear, medium blue cheese funk and strong citric acidity. There's also a touch of hay and a mild vinous quality to this, with light tannins and oak coming through as well. Finishes super dry, with a medium/strong sourness and some green apple/pear notes and light funk lingering in the aftertaste. Effervescent mouthfeel with a light/medium body and medium carbonation. This is quite complex for what is essentially a Berliner Weiße, with a fantastic balance of sourness, funk, vinous and woody elements, none of which are too strong, that all work together very nicely to create a distinct and harmonious flavor profile. One of the best Berliner Weiße I've had, fantastic stuff.
3.6 Bottle, 330 ml, courtesy of Max. Shared with him and JFK10000. Cloudy golden, small head. Lemon, lime, bit zesty, medium sourness. Low carbonation. Medium bodied.
3.8 At a tasting, small fizzy head, cloudy pale yellow color, fruity citrusy aroma with metalic and greenish hints, piercing lemony sourness, enveloping fruitiness, nicely balanced. Highly enjoyable, really good.
4.0 Bottle sample at a tasting at Yoav's place. Thanks zvsn. Hazy pale yellow with white head. The aroma has notes of brett, flowers, some acetone and citrus (lemon, lime). The flavor is sour with notes of flowers, brett, some wood, wheat and citrus (lemon, lime). Very carbonated, medium-bodied.
4.0 Bottle shared at a tasting. Hazy yellow with a big white head. Aroma is citric, lactic, notes of lime and wood. Sour, citric (lemons, lime, grapefruit) , lactic, wood, funky acidity, gentle and superbly balanced. Light-bodied, dry, refreshing. Great.
3.9 Bottle from BeerHawk. Pours a hazy pale, yellow straw with some white lacing. Lots of pinhead bubbles shooting through the liquid. Sour, tangy citrus fruit finished with wet dough. Superbly light fresh sharp fruit flavour. Refreshing light body with crisp, bubbly sparkle. Fantastically refreshing. This beer blends citrus fruit freshness and sour gooseberry bitterness into a supremely drinkable package. What a fantastic beer for quenching a thirst.

3.6 [Draught at Les Fleurs du Malt - Le Bar, Lyon, April 11, 2018] Pours a hazy pale gold with an average size diminishing frothy white head. Aroma (7+) of tart citrus, lactose and notes of wood and vinegar. Flavour (7+): Easy drinkin' tart beer, with tart lemon, lactose, a touch of herbs and a hint of salt. Average bodied. Really good.
4.2 On tap at Lajbah, Ljubljana. Pours slightly hazy yellow colour, topped with a maller and nonlasting white head. Lots of vinous notes, sour with slight vinegar in the aroma. Very puckery, some fruity sourness - intense soury character, though not too intense at the same time. Very light body. Puckery stuff but fine.
3.3 Very light yellow beer with smallish head on top. Aroma has really sour tones, maybe rhubarb? Lemon and cities definitely. Taste has some sweet malty tones, citrus and grapefruit hops, ending in zest sourness. Very light body and high carbonation.
2.6 Tap @ C4, Odense. Pours Hazy pale yellow with a White head. Barnyard, stomich acid and a small note of popcorn. Tart and dry.
4.2 Light yellow, hazy appearance. Tart, lemony, sharp but smooth with it. Great anytime but especially on a summers day. Very well made beer.
3.8 Fad. Lysegul diset øl med et lille skumhoved. Duften er sur gærer. Smagen sidder lige i skabet der er som den skal være som en sur. Masser af friskhed. God øl
