Wild Beer Wild Goose Chase

Wild Beer Wild Goose Chase

Bottle, keg & cask; Regular

Farmhouse Pale + Gooseberry + Zingy

We thought we would be able to make this beer exactly how we wanted...

The "all-day" wild beer, tart and fruity, but well-hopped and drinkable. We have been chasing this beer since we started the brewery and love this combination.

Juicy, tart gooseberries and our own culture of wild yeast from local orchards give this a gentle acidity. Whilst a generous "dry-hop" of complementary hops enhance the fruitiness and give a light but moreish bitterness.

3.3 Bottle at home bought in a mutlipack from Waitrose supermarket. Pours slighty hazy. Small amount of gooseberry and is slightly sour
3.6 Bottle from pivny Raj. Aroma: tarty, citrus, slightly herbal. Medium white head (falling really fast), hazy yellow color, light body, thicker, high carbonation. Taste: tarty, citrus, acidic, long lasting bitterness in the end. Good refreshing wild ale.
6,8/10 180809
2.9 Keg, Brewdog Edinburgh. Pale, acidic nose, bubbly head. Taste is sour without too much herbal or vegetal notes. It's just lacking flavour and depth for me. Ended up blending it with a NEIPA to tone down the vinegariness. Meh.
4.0 Tap at Unorthodox Bar. Very well balanced fruity resiny holpiness and spicy farmhouse character. Rather thin body and high carbonation. Fresh herbal minty feeling. Very tasty, easy drinking, refreshing. Very good.
3.6 Sampled from tap at 'Be Unorthodox'. Almost clear, pale yellow with a white head. Sweetish, quite fruity, rather funky aroma of gooseberry, elderflower, lemon, hay and some barnyard. Moderately sweet, minimally sourish, quite fruity, gently funky and a bit floral taste of gooseberry, lemon cake, elderflower, some hay and a touch of barnyard, followed by a short, slightly tart, moderately dry, quite funky and gently grassy finish. Almost medium-bodied, smooth and slightly effervescent mouthfeel, soft carbonation. Very interesting stuff! Well-balanced, easily drinkable and still fairly complex for such a beer. Well done!
3.0 On tap at Be Unorthodox bar. Pours yellow color, white head. Aroma of yeast, gooseberry. Taste is quite plain, lightly sourish, malty, fruity. Boring.
2.8 Draught, 4.5% at the Wharf. Quite funky aroma, some old rag, but smells nice enough. Cloudy pale yellow colour. Stable chalk white head. The flavour is quite unclean and fairly lemony. Thin mouthfeel and watery finish. Lingering note of infected kitchen rag. Strangely thin. I usually like funk but this one does not appeal that much to me.
3.4 Bottle, 0.33l. Aroma is yeasty, funky, earthy, grassy and leathery. Pours hazy straw color with medium soapy white head and sparkling appearance. Taste starts light sweet grainy and slightly tart citrusy, follows biscuity and yeasty, mouthfeel is dry, while finish is light bitter. Light body, thin texture and lively carbonation in palate. Refreshing, but a bit too sessionsble...
3.1 Leathery funk aroma with loads of citrus, some wet wood ang gooseberries. Taste is very weak with some white wine notes and citrus tartiness. Body is very watery with some funk aftertaste.
3.2 On tap. Pours slightly hazy yellow golden color, topped with a thinner white head. Nice citrusy aroma with some spicy notes. Spicy start with herbal feeling all over it, a bitt to excessive for my liking. Not bad, but hasn't got that fresh feeling.
3.1 On tap at Lajbah, pours a hazy blonde with a small white head. Aroma brings out citrus zest, saison yeast and crisp biscuity malt. Flavour reveals tart citrus, saison yeast and dry biscuity malt. Lightly tart, lacking much depth. Dry finish, easy drinking overall. Decent.
3.0 KØLF 120118. Golden-yellow color with a white head. Aroma is funk, gooseberries, sourness. Flavor is funk, gooseberries, yeast, funk, lemon. Weird beer.
3.0 33 cl, bottle fermented. Hazy, pale yellow, thin white cap, low carbonation. Aroma is funky, horse blanket, citrusy and sour. Mouthfeel is acidy and fizzy, but quite thin. Taste is the same as the aroma, but is way less intense, which is a real shame. Mouthfeel / palate is the best part of this (not so great) Saison.
3.4 Pale golden colour, dissipating white head. Aroma of wood, white wine, some gooseberry, some tropical fruit. Light sour flavour, white wine, gooseberry, white wine. Bit astringent finish, wood. Nice. (from 33cL bottle @ Valeriotto's place. Thanks for sharing!)
3.4 from Qbeer - translucid pale golden beer with a poor head retention; aroma of raisins, gooseberries, cheesy; medium-bodied, gently sour, moderate malt backbone, quite dry fruity finish with more gooseberries and lemon; light salty and a bit heavy finish
3.5 Bottle. A hazy, more or less unclear actually, pale orange colored beer with a finger thick white head. Funky, quite berry-ish aroma with some pale malts in the back. The flavor is pretty much the same, but with a distinct peppery spice touch and a pleasant bitterness. It's rather effervescent on the palate, medium bodied and dry, with a funky, leathery citrus and gooseberry finish. A beer that is more interesting in the beginning than in the end, but still pleasant and quenching. 180210
3.1 Pajiza, turbia. Espuma blanca, de retencion media. Aroma funky (a cuero, establo), flores (jazmín) y frutas. Sabor funky (cuero, establo), a flores y a frutas confitadas. Gran cerveza brett sin apenas acidez y mucho funky. Fácil de beber.
3.6 0.33l bottle from qoqa. pours a hazy pale sunny yellow with a medium head. aroma of funk, flowers, a hint of honey and jam. flavour of white wine, lemon, gooseberry. rather mild and not too tart, slightly salty mouthfeel.
3.2 Bottle, 330 ml, from Že v Redu Primož. Shared with JFK10000 and Max. Clear pale golden, small white head. Citrus, moderate sourness, yeasty, some yeast. Quite light and a bit watery. Soft texture.
3.0 Bottle. Pale yellow body with a small white head. Aroma is light funky, some dough and feels a bit like puke, but not in an unpleasant way! Flavor has these weird ripe fruitiness, acidic berries, hint of lemon and funkyness with minerals. Thin bodied and aftertaste in the same direction. Decent but not exactly my cup of Goose/Saison whatever.
3.3 Tap at the Royston Hotel, Melbourne. The aroma is light watery malt, yeast, stone fruits. The flavour is light sour watery melon light dry mineral. Light to medium bodied with average to soft carbonation.
3.5 Mildly salty slightly tart with some brett profile. Orange peel with gooseberries hidden in the mix. Very refreashing brew for a mild beer that goes down well. Im a fan.
3.3 Bottle at home 3.1.2018.
3.8 Kalender nr 17 2017. En god Pale som smaker godt til en kyllingrett. Ølet har en god smak som frister til å åpne en flaske til.
3.5 Tap @ Dove and Olive, Surry Hills. Light straw. Reasonably well integrated hints of peppery saison and sour wild yeast, but not quite enough punch of either. Highly drinkable, reasonably refreshing
3.5 0.33 l bottle, brought by Goran and Višnja 666 and Goran Pilot. Hazy pale golden with a greenish tint, minimal head. Funky, yeasty, citrus, zest, dust. Perfumed lemony. Watery. Nice finish.
