A blend of Somerset Wild and Ninkasi.


The art of blending has huge appreciation in the wine and whisky world but isn’t often talked about in terms of beer. Perhaps it’s considered a little too wild? Not for us.


Zintuki is Ninkasi’s younger, wilder sister (and goddess of food and dinner). A perfect name for this blend of Ninkasi (our Celebratory beer made with a small amount of local apple juice) and Somerset Wild (a sour beer fermented using yeast and bacteria from local orchards).


A combination of the complexity and champagne spritziness of Ninkasi with the dry lemon acidic sharpness of Somerset Wild, gives a blend richly aromatic on the nose, refreshing on the tongue and deeply satisfying on the pallet.

3.1 V unortodox. Vona silna vyrazna mierne sladka kyselkava. Kalna bledsia farba. Chut vyrazna horko drevito bylinna a vinova. Velmi intenzivna.
4.0 Tap. Malty and yeasty aroma and taste, wine notes, light to medium sour, light sweet notes, light bitter. Medium body, malty and yeasty sour and bitter finish. Easy to drink, good.
4.1 Bottle at Unorthodox. Moderately sour, moderate funk, barnyard, very nice. Moderate complexity but very high drinkability. Tasty, very good.
3.0 330 ml bottle, from Vinmonopolet, Nettbutikken. ABV is 7.3%. Moderately hazy golden colour, moderate white head. Aroma of brettanomyces, sour cider, lactic acid and sour fruits. Fizzy mouthfeel. Sour and lemony flavour, lots of lactic acid. Too sour for me.
3.5 Bottle. Yellow color with small white head. Aroma of, yeast, funk, lemon. Sour taste with lemon, backyard, funk. Good.
3.8 Bottle at drie dorstige herten. Aroma of tart tropical fruit, pineapple, passion fruit, grapefruit and some lacto. Taste has zesty grapefruit, passion fruit, orange, pineapple and tart. Nice beer.

3.9 Bottle. Pale colour, cloudy, rocky head that disappears after a while. Aroma is dry apple cider, apple peel. Medium sour. Lively carbonation, light body. Without looking at the bottle, I would say it's a cider. Very good!
4.0 Bottle from Borough Wines Battersea. Total ripper here - perfect meld of apple and funk, juiciness with a dry end. Kind of like the best cider you'd ever wish for in a beer. As above so below. Oh yeah and no booziness here. Best WBC brew like ever.
4.0 Bottle from Cellarbrations Bowen Hills on 9 August 2018. Great sour beer this one with a truckload of tartness. Makes the face screw up from the first tart taste.
3.5 27/7/2018. Bottle shared at Mig & Ølsnedkeren, Aarhus. Pours hazy pale gold with a small off-white head. Aroma of sour fruits, yeast, apples, bubble gum, hops. Light sweetness, medium to heavy sour. Moderate body, slight oily texture, soft carbonation.
3.7 Bottle @ Mig & Øksnedkeren, Aarhus. Pours hazy straw with airy white head. Vinous and dusty aroma of yeast, with mild hints of malt. Dry, vinous flavour with estery notes and bitter, hoppy touches. Estery and vinous aftertaste. A nice one.

3.7 Bottle @ Mig & Ølsnedkeren. Nice head with good duration. Color is golden. Aroma and taste are nice and sour fruits, hops, citrus, flowers and has a bice sour finish.
3.2 Color amarillento, translúcido, con capa de espuma blanca de dos dedos de grosor y retención decente. Carbonatación suave. Textura acuosa. Aroma con recuerdos de sidra. Ligeramente ácido. Notas de limón y sulfuro. En boca mucho limón, quizá demasiado. Acidez bien medida. Notas de manzana verde, pero básicamente limón, el sabor del limón sin tanta acidez. Final ácido. Postgusto que no sé describir, ácido pero extraño. Interesante, aunque demasiado fácil de beber y carentes de muchos matices.

3.9 9. 6. 2018, Klimno. Bottled. Aroma of wild yeast. Pale and a bit hazy colour with rocky white head. Medium sour with hidden undertones of light sweetness and bitterness. Lightbodied, low to med carb, light sour finish.
3.7 0,3 litre Bottle from Vinmonopolet Hamar. Clear yellow with white head. Malts, hops, Apple and sour aroma and taste.
3.7 Drinked in bottle bb 10.7.20. On the nose some alcoholic lemony notes, some sour apple juice and candied lemon. In mouth is medium light bodied, refreshing, is a strange sourness, mixed with a sweet apple final. Very good beer for a evening aperitif in these hot days
3.7 33cl bottle Golden color, white head with good retention. Aroma has notes of yeast, lime peel, notes of bretts. Flavor with a decent sourness, barnyard, citrusy, yeasty and hints of white grapes. Acidic final, fruity with dry mouthfeel.

3.9 A small taste from wiosna (tap) @ Amsterdam. Pours cloudy golden with a medium head. Aroma is tart malts with notes of fruits and vinegar. Flavor is sweet and tart malts with some fruity notes. Very nice.
